2 tablespoons all purpose flour
1 3 1/2- to 3 3/4-pound chicken, skin and fat removed, cut into 12 pieces
4 teaspoons olive oil
2 cups chopped onions
3 large garlic cloves, minced
1 14 1/2-ounce can low-salt chicken broth
1/2 cup plus 2 tablespoons chopped fresh cilantro
2 tablespoons fresh lemon juice
8 dried Calimyrna figs, stems trimmed, cut in half lengthwise

Steps:

  • Place flour in large resealable plastic bag. Season flour with salt and pepper. Add chicken to bag; seal bag. Shake bag to coat chicken lightly with flour.
  • Heat 2 teaspoons oil in large nonstick pot over medium-high heat. Working in batches, add chicken and sauté until brown on all sides, about 7 minutes per batch. Transfer chicken to plate. Add remaining 2 teaspoons oil to pot and reduce heat to medium. Add onions and garlic and sauté until golden and tender, about 10 minutes. Stir in broth, 1/2 cup cilantro and lemon juice and bring to boil. Add figs and chicken with any accumulated juices to pot. Cover and simmer until chicken is tender, about 35 minutes.
  • Using slotted spoon, transfer chicken to bowl and cover with foil to keep warm. Boil juices in pot until thickened to sauce consistency, about 5 minutes. Season to taste with salt and pepper. Pour sauce over chicken. Sprinkle remaining 2 tablespoons cilantro over and serve with lemon wedges.

This recipe is one of those "gee that looks good" as you flip through your cookbooks looking for meal ideas. When you actually do make it, the recipe, to me, is a wonderful treat. I found this recipe in a Weight Watchers cookbook. 6 points

3 lemons
1 cup dried mission figs
5 chicken breasts or 1 whole skinless chicken, cut into 8 pieces
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/4 cup packed brown sugar
2 tablespoons balsamic vinegar
1/3 cup water

Steps:

  • Preheat the oven to 400.
  • Spray a 9 X 13-inch baking dish with nonstick spray.
  • Trim the ends from 1 lemon: cut into very thin, round slices (about 12).
  • Place the lemon slices and the figs in the baking dish.
  • You may want extra lemon slices.
  • They are really good to eat after they have been cooking under the chicken.
  • Arrange the chicken breast or pieces.
  • Sprinkle with salt and pepper.
  • Squeeze enough juice from the remaining 2 lemons to equal 3 tablespoons; transfer to a small bowl.
  • Stir in the brown sugar, vinegar and water.
  • Pour the lemon mixture over the chicken; cover the baking dish loosely with foil.
  • Roast the chicken 35 minutes.
  • Remove the foil and roast, uncovered, basting the chicken twice, until cooked through, 15 minutes more.
  • With a slotted spoon transfer the chicken, figs and lemon slices with a slotted spooon to a serving platter.
  • Discard the fat from the pan drippings; spoon over the chicken.

12 chicken thighs
2 lemons, 1 sliced,1 halved
1/4 cup brown sugar
1/4 cup white vinegar
1/4 cup water
1 1/2 lbs dried figs
salt
1 teaspoon dried parsley
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Squeeze juices from halved lemon into a small bowl, then stir in brown sugar, vinegar and water; set aside.
  • Place figs and sliced lemon segments in the bottom of an 11x16 inch baking/roasting dish.
  • Arrange chicken thighs on top, then pour vinegar mixture over chicken.
  • Finally, sprinkle with salt and dried parsley to taste.
  • Bake/roast at 400 degrees F (200 degrees C) for 50 minutes, basting frequently (turn figs if they begin to brown).
  • With a slotted spoon, remove chicken, figs and lemon slices from baking dish and place on a warm platter.
  • Skim fat from cooking juices, then pour over chicken as sauce.
  • Garnish with fresh parlsey and serve.

Bites of seasoned chicken breast mixed in a pilaf with currants, almonds and sauteed vermicelli. I got this recipe from a student (thanks Petroula!)and it has pleased even the fussiest and most unadventurous eaters,namely my MIL and BIL, so I would recommend it whole-heartedly. It's also very simple to make, you only dirty one pot and it makes a large amount.

2 large chicken breasts
1 medium onion
1/2 teaspoon allspice
1/2 teaspoon paprika
1/2 teaspoon coriander
1 teaspoon cumin
fresh ground black pepper
salt
1/2 cup olive oil (can put a bit less)
2 large chicken stock cubes (4 of the square ones)
2 cups long-grain rice (bonet, par-boiled)
1/2 cup currants
1/2 cup blanched almond (roughly chopped)
2 tablespoons butter
1/2 cup vermicelli (2 or 3 nests)

Steps:

  • Cut chicken into small pieces.
  • Put olive oil, into large heavy pot over low heat.
  • Add chicken, chopped onion and the allspice, paprika, coriander, cumin and pepper.
  • Stir, cover and cook until the chicken and onion has softened.
  • Add rice, stock cubes, 41/2 cups of hot water and salt to taste.
  • Cover and simmer until the rice is almost cooked.
  • Saute vermicelli in the 2 tbs of butter until it separates and is golden brown.
  • Tip vermicelli into rice and add currants and chopped almonds.
  • Turn off hotplate, put a teatowel over the pot, cover with lid and allow to steam for 10 minutes.
  • Fluff rice with fork and serve.
  • NOTE: This recipe can be easily made vegetarian if you substitute vegetable stock cubes instead of chicken and omit the chicken breast entirely.
