KIELBASA AND EGGS
I tried this dish at a Mothers Day brunch, and was pleasantly surprised It was delicious! I have found it is best with just eggs and kielbasa, no onion, garlic, herbs or cheese (and I am a cheese, onion and garlic fanatic!)

Steps:
- Heat a 10" skillet on medium heat, add some butter and the chopped kielbasa and warm them up. Do not brown.
- Whisk the eggs with the water.
- Turn the heat up to medium high.
- Pour in the eggs.
- Cook until desired doneness, stirring constantly. Your eggs will be light and fluffy if you do this. Eggs cook very quickly, so this should not take longer than one minute.
- Salt and pepper at the table,.

KIELBASA SCRAMBLE
This is a dish that I have prepared without writing down. So that last time I made it I wrote it down to share. We like breakfast for dinner and this makes a hearty meal for the two of us.

Steps:
- Heat oil or butter in large skillet (I use my iron skillet).
- Add potatoes slices and cook over medium heat for 5 minutes.
- Add onion slices and stir. Cook for 5 minutes.
- Add garlic, red pepper flakes and Kielbasa.
- Continue to cook until potatoes are browned, stir occasionally. Cooking time will depend on how thick you sliced your potatoes.
- Beat eggs with sour cream and water.
- Add to pan over Kielbasa and potato mixture.
- Cook and stir until eggs are fluffy and cooked.
- Add salt and pepper to taste.
- Serve.

KIELBASA AND HASH BROWN EGG CASSEROLE
This hearty bake is great for the meat and potato lovers in the family.

- Heat oven to 350°F. Spray 3-quart oval or 13x9-inch baking dish with cooking spray. Slice Polska kielbasa in half lengthwise, then in 1/2-inch slices.
- In 10-inch nonstick skillet, cook Polska kielbasa over medium-high heat 3 to 5 minutes or until browned; remove from skillet. Reduce heat to medium. In same skillet, cook onion and garlic 3 to 5 minutes, stirring frequently, until slightly softened. Add spinach to skillet; cook about 1 minute or until starting to wilt.
- Layer half of the hash browns in baking dish. Add 1 1/2 cups of the cheese, the Polska kielbasa, spinach mixture and remaining hash browns. In large bowl, beat eggs and milk with whisk; beat in mustard, salt and pepper. Pour over hash browns; top with remaining 1/2 cup cheese.
- Bake 50 to 55 minutes or until golden brown and center is just set. Let stand 15 minutes; top with sliced green onions before serving. Serve with horseradish.

- Add the kielbasa and saute for 2 minutes.
- Add the eggs, and cook as you would scrambled eggs.

- 2. In a large bowl beat eggs, milk, bread crumbs,garlic powder, salt and pepper until well beaten and nice yellow color
