SUNNY'S SALSA EGGS
Steps:
- Whisk the eggs with 2 tablespoons water in a large bowl until frothy. Add the butter to a large nonstick pan over medium-low heat. (If it immediately sizzles, the pan is too hot. It should be a slow melt.) Tilt the pan to swirl the butter and coat the bottom and sides of the pan.
- Add the whisked eggs to the pan and allow to rest until a light layer of cooked egg develops on the bottom, 2 to 3 minutes. Use a whisk to stir and scramble the eggs, then let rest again. Repeat this until the eggs are about three-quarters of the way done, then add the salsa. Raise the heat slightly and cook, whisking the salsa into the eggs. Cook to desired texture. Top with cheese and cilantro.

Steps:
- Preheat the oven to 400 degrees F.
- Lightly oil a medium nonstick skillet with an ovenproof handle. Spoon a heaping 1/3 cup of salsa into the pan. Lightly press down the salsa to make 4 evenly spaced shallow nests and break an egg into each. Season with salt and pepper. Bake until the egg whites are cooked and the yolks are still runny, about 15 minutes. Sprinkle the cheese over the eggs and continue baking until just melted, about 1 minute more. Top with the cilantro. Serve immediately.
- Put the tomatillos in a medium saucepan with water to cover. Bring to a boil and cook until tender, about 7 minutes. Drain and remove stems from the tomatillos.
- Puree the garlic, onion, jalapeno, and salt in a blender until smooth. Add the tomatillos and puree until smooth. Add the cilantro and pulse a few times to just combine, you should still see bits of cilantro in the sauce.

Steps:
- Place an oven rack in the center position of the oven. Preheat the oven to 350°F. Lightly grease a 9- by 13-inch baking dish (or coat with cooking spray).
- Set a large skillet, pan, pot, or Dutch oven over medium-high heat. Add the ground beef and cook until no longer pink, breaking apart and stirring as the meat cooks. In the meantime, mix the brown sugar, sage, basil, 3/4 teaspoon salt, garlic powder, onion powder, marjoram, red pepper flakes, and black pepper in a small bowl until combined; set aside. Once the meat is done cooking, drain the grease from the skillet and stir in the spice blend. Remove the skillet from the heat and allow to cool for a few minutes.
- Spread the seasoned meat in the prepared baking dish. Sprinkle the meat with the grated cheddar. In a large bowl, whisk together the eggs, milk, mustard powder, remaining 1/2 teaspoon salt, and ground pepper (to taste) until well combined. Evenly pour the egg mixture over the beef/cheese in the dish.
- Bake for 50 to 55 minutes until the eggs are puffed and golden brown and the center is set. Allow to sit for 5 minutes before slicing and serving.

Steps:
- 1. Prepare the salsa, if using homemade. Then, in a large nonstick skillet, heat the oil over medium heat and cook the meat, stirring, until brown and cooked through, about 4 minutes. Add the onions, tomato, 1/2 teaspoon of the salt, and the pepper. Cook, stirring, until the tomato juices are bubbling, about 3 to 4 minutes. Reserve in the pan off heat. 2. In another skillet, heat the butter over medium heat until it foams. Add the eggs and remaining salt. Cook, stirring slowly, to scramble. When the eggs begin to hold together, in about 2 to 3 minutes, transfer to the ground beef mixture. Stir gently to combine. Divide among 4 serving plates. Drizzle each serving with a portion of sour cream and about 1 tablespoon of green salsa. Pass extra salsa at the table. From "1,000 Mexican Recipes." Copyright 2001 by Marge Poore. EASY AND QUICK GROUND BEEF AND SALSA CHILI
This meal can be on the table in around an hour, even faster if you have freezer-ready ground beef mix, or you can simmer it for longer. If you do not have any chili seasoning mix use about 2-4 tablespoons chili powder instead, you can substitute 2 cups tomato sauce mixed with 1 cup water in place of tomato juice. This is great served with crostini or crusty buns
