From the latest WEEKEND magazine. Did you know that red capsicums are known as the "caviar of vegetables" and are even higher in Vitamin C than their green counterparts! They are also a good source of Vitamin A which helps heal wounds quickly and strengtens one's immune system. Capsicums contain a reasonable amount of folate and vitamin B6. They are excellent for those watching their weight. To enhance the body's absorption of Vitamin C contained in capsicums, one must eat 'em with iron-rich foods.

butter, as required
2 onions, sliced into rings
1 cup mushroom, sliced
1 red capsicum, sliced into rounds
1 eggplant, sliced into 1 cm thick rounds
1 cup feta cheese, crumbled
1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
2 tablespoons fresh parsley, finely chopped
extra virgin olive oil

Steps:

  • Heat a little butter.
  • Stir-fry the onions until soft and golden brown.
  • Remove from flame.
  • Then, fry mushrooms until well-browned.
  • Remove from heat.
  • Keep aside.
  • Add a little more butter.
  • Saute the red capsicum.
  • Remove from flame.
  • Keep aside.
  • Heat some oil in a frying pan.
  • Shallow-fry the eggplant until golden in colour and cooked on both sides.
  • Drain on an absorbent paper towel.
  • Wipe the frying pan completely with an absorbent paper towel.
  • Arrange the eggplant on a flat dish.
  • Arrange onion rings over it.
  • Arrange the capsicum over it.
  • Combine the sauteed mushrooms, feta cheese and thyme.
  • Sprinkle the combined mixture over the capsicum.
  • Garnish with chopped parsley.
  • Pour a little olive oil before serving.

This is a new favorite of mine. I was blown away by the wonderful flavors. I'm not a vegetarian but didn't miss meat with this. The onions turn out still crunchy, which I liked but if you don't you might try sautéing them in a little oil first.

1 large eggplant, peeled and cut int 1/2 inch slices
cooking spray
1 (15 ounce) can stewed tomatoes
4 ounces feta cheese, crumbled (about 3/4 cup)
1/2 cup fresh parsley, minced
1/4 cup fresh cilantro, minced
3 large eggs, beaten
1 large onion, finely chopped (I used red)
1/2 teaspoon salt (to taste)
1/4 teaspoon black pepper (to taste)
1/4 teaspoon ground allspice
1/4 teaspoon dry oregano
1/4 teaspoon ground sage
1 pinch cayenne

Steps:

  • Heat oven to 300°F; spray oil a casserole dish (I used a low oval one).
  • Spray oil a large frying pan and heat over high heat. Place eggplant slices in a single layer (you may have to do 2 batches). Cook for 3-5 minutes each side until browned. Place in prepared casserole dish evenly across the bottom (some may overlap).
  • Pour stewed tomatoes over eggplant in an even layer, then feta, parsley and cilantro (in that order).
  • In a small bowl, combine eggs, onion, salt, pepper, allspice, oregano, sage and cayenne. Pour evenly over items in casserole dish.
  • Cover and bake for 30 minutes. Remove cover and bake for another 10-20 minutes until firm.
  • Serve hot or cold.

2 lbs eggplants (long slender type)
olive oil (for frying)
5 tablespoons of chopped fresh basil
5 garlic cloves, minced
1 lb of ripe tomatoes, diced
1/2 lb feta cheese, crumbled
sea salt
fresh ground black pepper

Steps:

  • Wash the eggplants and remove stems. Cut lengthwise into 1/2 inch slices. Fry lightly (until soft and gently browned) in 1/4 inch of oil.
  • Preheat the oven to 355°F (180°C).
  • Layer the eggplant in the bottom of a baking dish.
  • Combine the tomatoes, basil, garlic, and salt and pepper to taste, in a bowl, and spoon the mixture over the eggplant. Top with feta cheese, and bake at 355°F (180°C) for 45 minutes.
  • Serve hot, warm, or at room temperature.

3 small eggplants, each sliced into 4 pcs.,lengthwise
1 red bell pepper, cut into 1/2 cm thick slices (capsicum)
3 medium tomatoes, cut into 1/2 cm thick slices
2 tablespoons white vinegar, mixed with
2 tablespoons grape juice
2 cloves garlic, crushed
2 teaspoons oil
60 g feta cheese
2 tablespoons chopped fresh basil (or tulsi leaves)
salt

Steps:

  • Place the eggplant slices in a large bowl.
  • Sprinkle with salt.
  • Keep aside for 30 minutes.
  • Rinse slices under running water, drain and pat dry on a paper towel that will absorb the water.
  • Line oven tray with baking paper.
  • Place a tomato slice and capsicum slice between 2 eggplant slices.
  • Prepare all the eggplant slices in the same way.
  • Arrange on the baking tray.
  • Combine olive oil, vinegar-grape juice mixture and garlic.
  • Drizzle this combined mixture over the arranged eggplants.
  • Top with crumbled feta cheese.
  • Cover.
  • Bake in a moderately hot oven for 35 minutes.

  • Toss 2 Japanese eggplants (cut into 2-inch pieces) with 1 cup grape tomatoes, 2 tablespoons olive oil and 1/2 teaspoon each kosher salt and pepper. Bake at 500˚ F, turning once, until tender, 12 to 14 minutes, then broil until charred, 3 to 4 minutes. Mix 3 ounces diced feta, 2 tablespoons each olive oil and lemon juice, 1 tablespoon chopped oregano, 1 sliced garlic clove and 1/2 teaspoon each salt and pepper. Serve over the eggplant mixture.
