MEDITERRANEAN VEGETABLE POT PIE

Steps:
- Preheat oven to 425° F.
- Prep the eggplant by cutting 1/2 inch off both ends. Then slice all the skin off and cut in 1/2 inch rounds.
- Place rounds on paper towels and sprinkle 1 tsp salt evenly over top. Place another layer of paper towels on top of slices and place something heavy on top to help absorb the moisture. I used my cutting board and then put a couple bowls on top.
- Leave eggplant for 30 minutes and let the paper towels soak up as much moisture as possible.
- While eggplant is resting, dice onion, garlic and zucchini into 1/4" pieces.
- When eggplant is done resting, dice into 1/4" cubes.
- Heat olive oil in skillet on medium heat. Add eggplant, zucchini, onion and minced garlic. Cook, stirring often, until tender (about 5 minutes). Set aside.
- Combine oregano, basil, remaining salt and pepper in small bowl. Set aside.
- Chop the tomatoes into 1/2" pieces, removing the seeds and as much wet stuff as you can.
- Lay 1 crust into pie dish. Add 1/2 the vegetables and 1/2 the tomatoes. Sprinkle with 1/2 the herbs and 1/2 the parmesan and mozzarella cheeses.
- Repeat layers.
- Place second pie crust on top and crimp edges so the pie crusts are sealed around the edges. For a dark and shiny crust, brush with 1 egg yolk and then sprinkle with parmesan.
- Place in the center of the oven for 25-35 minutes.
- Once pie crust is fully cooked and pie is heated through, remove from oven and allow to rest 5 minutes before slicing. Best enjoyed with a crusty french bread to soak up the vegetable juices!
EGGPLANT AND POTATO PIE
This recipe comes from my italian family , my grandma made it , my mom too , I learn how to make it , , but still tryin' to get my hubby and kids to try...it's so good for this chilly time !!

- 1. Peel , cut and boil the eggplants with a little salt. Put them on a strainer with a weight to help loose all the water.
- 2. Peel , cut and boil the potatoes with a little salt. Use a potato ricer to mash them. Preheat oven at 350 F.
- 3. In a small pan on medium heat put the olive oil with the butter ( reserve a tablespoon of butter ) until melted. Add the garlic and parsley an toss them for about 2 minutes or until the garlic gets golden.
- 4. Mix the eggplants with the mashed/riced potatoes , add the garlic/parsley/oil/butter mixtrue , add also the egg and parmsean cheese. Reserve a tbsp.of cheese.
- 5. Butter a 13 x 9 oven baking pan , pour the potaoes/ eggplant mixture , sprinkle with the reserved cheese and butter. Put it on the oven for 30' or until cheese looks golden. Serve warm as a main dish , or as a hearty side. It's also delicious cold!
LAMB AND EGGPLANT POTPIE WITH FETA POTATO CRUST
Steps:
- Make the lamb mixture
- In a colander sprinkle the eggplant with salt and let it drain for 30 minutes. In a large skillet heat 4 tablespoons of olive oil over moderate heat, in it cook the eggplant, patted dry, in batches, stirring, for 15 minutes, or until it is tender but still holds its shape, and transfer it with a slotted spoon to a bowl. In the skillet heat the remaining 1 tablespoon oil over moderate heat and in it cook the onion, stirring, until it is softened. Add the garlic and cook the mixture, stirring, for 1 minute. Add the lamb and cook the mixture, stirring and breaking up any lumps, until the lamb is no longer pink. Pour off any excess fat from the skillet, add the cinnamon, the mint, the orégano, and the allspice, and cook the mixture, stirring, for 1 minute. Add the tomatoes with the reserved juice, the tomato paste, and salt and pepper to taste and cook the mixture, stirring, for 15 minutes, or until it is thickened. Transfer the mixture to a large bowl and stir in the Parmesan. The lamb mixture improves in flavor if made up to this point and kept, covered and chilled, overnight. Add the eggplant to the lamb mixture, combine the mixture well, and spread it in the buttered shallow 3-quart gratin dish.
- Make the topping
- In a large saucepan combine the potatoes, peeled and cut into 1-inch pieces, with enough cold water to cover them by 1 inch, bring the water to a boil, and simmer the potatoes for 10 to 15 minutes, or until they are tender. Drain the potatoes, return them to the pan, and cook them over moderate heat, shaking the pan, for 30 seconds to evaporate any excess liquid. Force the potatoes through a ricer or the medium disk of a food mill into a bowl, add the butter, the Parmesan, the Feta, and salt and pepper to taste, and stir the mixture until it is combined well and butter is melted.
- Spoon the topping over the lamb mixture, spreading it to cover the lamb mixture completely, and dot the surface with the butter, cut into bits. Bake the potpie in the middle of a preheated 400°F. oven for 35 to 40 minutes, or until it is browned lightly.
LAMB AND EGGPLANT SHEPHERD'S PIE
This Greek-inspired shepherd's pie is made with lamb, eggplant, and oregano. The mashed potato topping gets its Greek flavor from kasseri cheese, a hard, salty cheese. If you can't find kasseri cheese, use Pecorino Romano instead. Finish the dish with a sprinkling of chopped fresh oregano, if desired.

- For filling:
- Scatter eggplant on rimmed baking sheet. Sprinkle with coarse salt; let stand 1 hour, tossing occasionally. Rinse eggplant and pat very dry.
- Heat 3 tablespoons oil in heavy large pot over medium-high heat. Add eggplant and sauté until tender, about 12 minutes. Transfer to medium bowl.
- Sprinkle lamb generously with coarse salt and pepper, then dust with flour to coat. Heat 2 tablespoons oil in same pot over medium-high heat. Add half of lamb. Sauté until browned, about 8 minutes. Transfer lamb to large bowl. Repeat with 2 tablespoons oil and remaining lamb.
- Add 1 additional tablespoon oil to same pot, if needed. Add onions. Cover and cook over medium-low heat until very tender, about 10 minutes (bottom of pot will be very dark). Add wine to pot. Increase heat and boil until wine evaporates, scraping up browned bits, about 5 minutes. Add tomatoes with juice, broth, garlic, and oregano and bring to boil. Add lamb with any accumulated juices. Cover; reduce heat to low and simmer 1 hour. Uncover and continue to simmer until lamb is very tender and gravy thickens slightly, about 45 minutes. Stir in eggplant. Season with salt and pepper. Transfer to 13x9x2-inch glass baking dish. DO AHEAD: Can be made 3 days ahead. Cool slightly. Cover and chill.
- For topping:
- Preheat oven to 375°F. Cook potatoes in large pot of boiling salted water until tender, about 14 minutes.
- Meanwhile, melt butter with oil in medium saucepan over medium-high heat. Add garlic. Sauté until fragrant, about 1 minute. Add milk and bring to simmer.
- Drain potatoes. Return to pot. Stir over medium heat until excess moisture evaporates. Add milk mixture and mash potatoes until just smooth. Stir in cheese. Season with coarse salt and pepper. Drop potatoes over filling by heaping tablespoonfuls, covering completely.
- Bake pie until filling is heated through and topping is golden, about 45 minutes.

- Preheat oven to 350°F.
- Cook the potatoes (in their skins) in boiling water, until soft. Drain, and mash the first 5 ingredients. Set aside.
- In a large, heavy skillet, saute the onions and garlic in 1 1/2 Tbsp of butter, with salt and pepper, until the onions are soft (5-8 minutes). Add the celery, mushrooms, and eggplant. Cook over low heat, stirring occasionally.
- When the eggplant is cooked through (and this will happen more quickly if you cover the skillet between stirrings), add green pepper, herbs, and peas. Continue cooking about 5 minutes longer.
- Remove from heat; toss with cheese, wheat germ, and vinegar. Spread this mixture into your buttered deep-dish casserole. Spread the mashed potatoes on top, as a crust.
- OPTIONAL (and OPTIMAL): Sprinkle extra cheese plus some paprika on top.
- Bake, uncovered, 35 minutes.

SAVORY EGGPLANT PIE
This is a wonderful recipe any time of the year, but especially delicious when summer produce is at it's peak. This is a incredibly delicious meal in itself. One of my mom's tried and true recipes that she has had for years.

- To make pastry:.
- Mix sifted flour, salt on a flat surface. Make a well in the center of the flour. Put butter and water in the well and mix with fingers until center ingredients make a paste. Work butter paste into the flour and knead the dough lightly.
- Form into a ball and wrap with plastic wrap. Chill in refrigerator for 20 minutes.
- After chilling, roll dough out to 1/8 inch thick or press dough right into a deep dish pie plate with fingers.
- To make the pie:.
- Saute the eggplant slices in the vegetable oil until softened and drain on paper towel.
- To peel tomatos, drop them into boiling water for boililng water for 15 seconds and remove them immediately, dunk into cold water and the skins should slip right off. Slice when cool enough to handle.
- Sprinkle the bottom of the pie shell with 2 Tbs of parmesan cheese.
- Layer the pie in this order: 1/2 of eggplant slices , 1/2 of tomato slices, 1/2 of onion slices, 1/2 of green pepper rings, 1/4 tsp crushed garlic, 1 Tbs olive oil, salt, pepper, 1 Tbs chopped basil, and1 Tbs parmesan cheese .
- Repeat the ingredient layers for a second layer.
- Bake in a 350 degree oven for 40 to 45 minutes. or until vegetables are tender and the crust's edge is golden brown.
- Serve the pie in wedges with parmesan cheese for topping.
