CRISPY EGGLESS WAFFLES
Who knew you could make waffles without egg, baking soda, baking powder, buttermilk, etc.? You only need a handful of ingredients for these crazy waffles.

Steps:
- Preheat a mini waffle iron (such as Dash™) and spray with nonstick cooking spray.
- Pour 3/4 cup plus 1 tablespoon water into a large bowl. Stir in flour, sugar, vanilla extract, and salt to make a batter.
- Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Fold into the batter, being careful not to overmix.
- Ladle a couple tablespoons of batter onto the preheated iron and cook until golden brown, 3 to 5 minutes. Repeat with remaining batter.

EGGLESS WAFFLES
Adapted for my food allergic son. These waffles are fluffy but crisp on the outside. Top with syrup or fresh fruit and whipped cream!

Yield 7-9 Waffles.

Steps:
- Combine all dry ingredients. Whisk together.
- Combine wet ingredients. Add to dry ingredients. Mix well, until no dry flour remains.
- Take care not to over mix.
- Cook to desired doneness in waffle iron. I cook on darkest setting.
- *Note*.
- 7/10/16- I recently tried to make them a little healthier. I used 1 1/2 c all purpose flour and 1 1/2 c whole wheat flour and it worked! The waffles still turned crispy as well as fluffy and not too dense! I also added about a 1/2 tsp cinnamon, just for kicks.
- You can also swap out the milk and water (3 cups combined) for any plant milk at an equal 3 cups.

Steps:
- Mix all the dry ingredients.
- Add the Buttermilk and ButterBuds.
- Stir a couple times.
- Add enough water to thin the batter to the consistency of heavy cream.
- Let batter rest for 5 minutes and it will absorb a lot of liquid and thicken.
- Thin again with water to heavy cream consistency. (This is a lot thinner than any waffle recipe seen where you fold in egg whites, etc.).
- Bake in Pam sprayed hot iron until steam stops.
- Peek! If the waffles start to pull apart bake another couple of minutes.
- Tip: Fat free waffles come out crisp, but are apt to get soggy when you add syrup. You can heat the plates in the oven and drizzle hot syrup on the plate.
- Then Place the waffle on top.
- Served good with yogurt and fruit.
