12 bacon strips, chopped
12 large eggs
1/2 teaspoon salt
1/4 teaspoon pepper
10 flour tortillas (8 inches), warmed
1-1/2 cups shredded cheddar cheese
4 green onions, thinly sliced

Steps:

  • In a large cast-iron or other heavy skillet, cook bacon until crisp; drain on paper towels. Remove all but 1-2 tablespoons drippings from pan., Whisk together eggs, salt and pepper. Heat skillet over medium heat; pour in egg mixture. Cook and stir until eggs are thickened and no liquid egg remains; remove from heat., Spoon about 1/4 cup egg mixture onto center of each tortilla; sprinkle with cheese, bacon and green onions. Roll into burritos. , Freeze option: Cool eggs before making burritos. Individually wrap burritos in paper towels and foil; freeze in an airtight container. To use, remove foil; place paper towel-wrapped burrito on a microwave-safe plate. Microwave on high until heated through, turning once. Let stand 15 seconds.

1 cup frozen cubed hash brown potatoes
2 tablespoons chopped onion
6 eggs
1/4 cup sour cream
3/4 cup shredded cheddar cheese, divided
2 tablespoons taco sauce
1/2 to 1 teaspoon hot pepper sauce
4 flour tortillas (10 inches), warmed
Sour cream and chopped tomatoes, optional

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 tablespoon drippings. Saute potatoes and onions in drippings until potatoes are golden brown, stirring occasionally. , In a large bowl, whisk eggs and sour cream. Stir in 1/4 cup cheese, taco sauce and hot pepper sauce. 1 large onion, chopped
6 large flour tortillas, browned in a pan as needed
1/2 cup grated monterey jack cheese
sour cream
hot sauce (optional)

Steps:

  • Fry a chopped onion and chorizo (broken up)together until onion is tender and translucent.
  • add 6 to 8 beaten eggs after everything is nice and brown.
  • Keep'em moving until cooked.
  • Serve it on a sour cream coated pan-grilled tortilla, add a bit of grated Monterrey jack and avocado (if desired).
  • Serve with more sour cream and hot sauce.

Chorizo is a Mexican sausage. It's high in fat but it's very flavorful so you don't need much of it. If you can't find it, substitute bulk pork sausage and add 1 t. taco seasoning. It won't be as good, but you'll still have a filling breakfast. If your family is larger, you may want to double this recipe but you'll need a very large skillet. Bonus - these burritos were a huge hit at an early morning tailgate party - we kept them warm in a pan sitting over some simmering water.

1/4 lb chorizo sausage
12 eggs
1/3 cup chunky salsa
4 ounces Mexican blend cheese, shredded

Steps:

  • Cook chorizo - In wide skillet, saute chorizo sausage, stirring it and breaking it up so that the finished product is small and crumbly. Remove to paper towels to drain. Clean skillet of any blackened bits.
  • Prepare egg mixture - Whisk together eggs, salsa, salt and pepper in a large bowl. Don't add water or milk because you want firm scrambled eggs.
  • Scramble eggs - Pour the egg mixture into the hot skillet (add a bit of butter if necessary, to prevent sticking) and scramble the eggs. When the eggs are nearly done, turn down the heat and add the drained sausage and shredded cheese; remove from heat.
  • Heat tortillas - Put 5 tortillas between damp paper towels and microwave 45 seconds. Repeat for other 5 tortillas.
  • Assemble - Put egg mixture onto warm tortilla and roll up. Place each completed tortilla in a piece of waxed paper for easy freezing and removal.
  • To reheat - microwave 2 minutes at 50% power.

Since she likes things pretty mild, I came up with these tasty breakfast burritos. They are so easy. She just heats one in the microwave and takes it with her to the bus stop. (Cooking time is for reheating in the microwave)

1 lb bacon, chopped into 1 inch pieces
12 eggs
1 cup chopped green onion
2 (16 ounce) packages flour tortillas
2 cups shredded cheddar cheese
salt and pepper, to taste
salsa (optional)
sour cream (optional)

Steps:

  • In a skillet, fry bacon pieces until crisp; remove to paper towels.
  • Drain, reserving 1- 2 tablespoons drippings.
  • Beat eggs, salt and pepper and cook in reserved drippings.
  • Add green onions just before eggs are done.
  • Add bacon and remove from heat.
  • Place about 1/2 cup of mixture down the center of each tortilla.

O.K., so bagels and muffins are good sometimes, but I wanted them to have a healthy meal. This is a combination of 3 different recipes that I have tweeked so that the girls will actually eat them! (Cooking time is for reheating in the microwave)

2 lb sliced bacon
18 large eggs
1 pkg frozen o'brien potatoes
4 c finely shredded cheese
1/4 tsp garlic powder
14 burrito size flour tortillas
salt and pepper to taste

Steps:

  • 1. Cook bacon in oven or in frying pan and save drippings.
  • 2. Use 2 T of bacon grease to cook frozen potatoes. Heat oil, add potatoes and cook for 15-20 minutes until soft.
  • 3. Use 1T of bacon grease to cook scrambled eggs. Crack all eggs into a bowl and beat with a whisk or fork until blended. Heat oil, add eggs and scramble until cooked through.
  • 4. Chop bacon. Add cooked eggs to cooked potatoes. Add bacon, then cheese. Stir until all combined.
  • 5. Using a 4T large ice cream scoop, scoop 2 scoopfuls of mixture onto tortilla. Fold into a burrito.
  • 6. To store, roll into a paper towel, then roll in foil. Remove foil and microwave for 90 seconds to reheat.

salt and pepper
1 flour tortilla
1/4 cup shredded cheddar cheese
1 tablespoon taco sauce (I use La Victoria brand)

Steps:

  • Whisk the eggs together with a little salt and pepper and a tiny splash of water.
  • Either spray a nonstick pan with cooking spray, or put a dab of margarine in pan.
  • Add the eggs to pan and gently scramble until light and fluffy.
  • Heat tortilla over open flame of burner and few seconds per side until heated.
  • Spoon eggs down center of tortilla and top with cheese and a little taco sauce.

  • Add eggs and chilies to sausage.
  • Cook, stirring gently, until eggs are thickened, but still moist.
  • Do not stir constantly.
  • Microwave tortillas about 10 seconds each until soft.
  • Spoon egg mixture down centers of warm tortillas; top each with picante sauce and cheese.
  • Fold opposite sides over filling.
  • Serve immediately.

1 tablespoon olive or canola oil
1/2 pound favorite loose or ground sausage
4 large eggs
2 tablespoons favorite salsa
1 cup coarsely grated sharp Cheddar cheese (about 4 ounces)
2 garlic cloves, minced
1 teaspoon cayenne (optional)
2 large flour tortillas, warmed

Steps:

  • In a medium nonstick skillet over moderate heat, heat 1/2 tablespoon oil until hot but not smoking. Add the sausage and sauté, stirring occasionally and breaking into small crumbles, until cooked through, 4 to 5 minutes. Transfer the sausage to a paper-towel-lined plate to drain.
  • In a medium bowl, whisk together the eggs, salsa, 1/2 cup of cheese, garlic, and cayenne, if using, and season with freshly ground black pepper.
  • Return the nonstick skillet to moderate heat and warm the remaining 1/2 tablespoon oil. Add the egg mixture and sprinkle with the cooked sausage. Using a heatproof spatula, gently scramble the mixture until the eggs are cooked through, 2 to 3 minutes.
  • Divide the eggs evenly between the warmed tortillas and top each with the remaining cheese. Roll up the tortillas to form burritos, then cut them in half and serve immediately.

This was taught to me by a Mexican-American friend of mine in Texas. She always made homemade tortillas. I'm not that ambitious but the results are still good.

1/4 lb mexican chorizo sausage
1 large potato, diced
3 eggs, slightly beaten
2 large flour tortillas
1/2 cup monterey jack cheese
salt and pepper
salsa

Steps:

  • In small pan boil potatoes until soft. Time depends on the size of the dice. Drain and set aside.
  • Meanwhile, remove casings from chorizo. Cook over medium heat in a non stick skillet until browned. Drain. But do not wipe out skillet. You want a small amount of the fat to remain.
  • Add cooked sausage back into pan. Stir in potatoes. Cook and stir for about one minute.
  • Pour in beaten eggs. Stir. When eggs are almost done add cheese. Stir well. Cook until eggs are done and cheese is melted. Salt and pepper to taste.
  • Meanwhile, heat tortillas in microwave about 30 seconds until warm and soft.
  • Divide the egg mixture into two portions and fill tortillas. Add salsa to taste. Roll up burrito style.

STEAK AND EGG BURRITOS (OAMC)

This evolved from a camping recipe that my DH and I usually come up with on Sunday mornings before we break-down camp. I decided to make them easy to travel so that DH wasn't stopping at the local burrito shop and getting stuff that wasn't included in his diet. Time includes marinating time.

1/4 cup Worcestershire sauce
2 tablespoons olive oil
1/2 lime, juice of
1/4 cup cilantro, Chopped
3/4 cup fresh tomato, Chopped
1/2 cup onion, Chopped
salt & pepper
24 ounces top sirloin steaks (I use Coleman's Organic Beef)
1 1/2 cups bell peppers, any kind, Chopped
1 1/2 cups mushrooms, any kind, Sliced
1 garlic clove, Crushed
5 eggs, Beaten
6 (10 inch) flour tortillas
wax paper or aluminum foil, and zip baggies

Steps:

  • In a medium bowl, combine Worcestershire sauce, olive oil, lime juice, cilantro, tomatoes, onion, salt and pepper.
  • Place steak in a shallow non-metallic container and cover with marinade. Cover container and place in refridgerator for 1-4 hours.
  • Grill steak on outside grill or under a preheated broiler until desired doneness has been achieved. (I like mine medium-rare) Remove from heat and let sit for 5 minutes before cutting into small cubes. Set aside.
  • In a non-stick pan, cook and scramble eggs until done. Remove from pan and set aside.
  • In same pan, pour in marinade and bring to a simmer over medium heat. Add peppers, mushrooms and garlic; simmer 10 minutes or until liquid is almost gone.
  • Warm tortillas on a grill or in microwave. (I like to line them up on my counter and top all at once.) Divide eggs into 6 portions and place on tortillas. Repeat process with meat and place on top of eggs. Spoon vegetables evenly between all 6 tortillas.
  • Fold each tortilla like a burrito, wrap in Wax paper or Aluminum Foil and place in Zip Baggie.
  • I throw these right in the freezer. Then in the morning, I can pop the ones with Wax paper right in the microwave, or the ones with Aluminum foil right in the toaster oven for about 2-3 minutes each. Time may vary according to your appliance.
