Bacon, Egg and Cheese Breakfast Burgers image

Don't decide between a bacon cheeseburger and a bacon-egg-and-cheese sandwich: Combine them!

1 1/2 pounds 80/20 ground beef
Kosher salt and freshly ground black pepper
8 slices bacon
4 slices Cheddar or American cheese
4 soft hamburger buns, split
4 tablespoons unsalted butter, melted
4 large eggs
1/3 cup spicy ketchup

Steps:

  • Preheat the oven to 350 degrees F.
  • Shape the beef into 4 patties, each about 5-inches in diameter. Sprinkle the outside of the patties generously with salt and pepper and set aside.
  • Lay the bacon in a large nonstick skillet and cook over medium heat, until brown and crispy, about 4 minutes per side. Transfer to a paper-towel-lined plate to drain. Pour off and reserve all but about 1 tablespoon of the bacon drippings and increase the heat to medium-high.
  • Add the burgers to the skillet, and cook until well browned on the outside and medium-rare on the inside, about 4 minutes per side. Transfer the cooked burgers to a rimmed baking sheet and top each with a slice of cheese. Brush the insides of the buns with the melted butter and put on a second baking sheet buttered side-up. Bake until the cheese melts, about 3 minutes and the buns are lightly toasted, about 10 minutes.
  • Meanwhile, wipe out the skillet. Heat 1 tablespoon of the reserved bacon drippings over medium-high heat. Break the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 5 minutes. Season with salt and pepper.
  • Put a burger patty on each of the bottom buns and top each with 2 slices of bacon and a fried egg. Spread the top bun with some of the spicy ketchup and put on top of the burger.

This mouthwatering Egg Burger is topped with crisp smoked bacon and creamy chipotle mayo. You can use either ground beef or ground turkey. The ground meat is mixed with minced onion and jalapeno for a full robust flavor.

1/4 cup(s) mayonnaise
2 teaspoon(s) adobo sauce from can of chipotle peppers in adobo sauce
1/3 pound(s) ground turkey or beef
1/4 cup(s) onion finely chopped
1/2 tablespoon(s) minced jalapeno
1/4 teaspoon(s) sea salt
1/8 teaspoon(s) fresh ground black pepper
2 - large eggs
2 - slices crispy cooked bacon
2 - thin slices tomato
- thin slices red onion
4 - leaves butter lettuce
2 - hamburger buns or english muffins
2 - slices colby jack cheese

Steps:

  • Mix the mayo and adobe sauce and refrigerate.
  • Combine the ground beef or turkey, onion, jalapeno, salt and pepper in small bowl. Mix and shape into two hamburger patties. Press thumb into the top of each patty and make small indentation to keep the burger from swelling in the middle. Preheat the grill to medium high and cook burgers for about 5 minutes on each side. Place 1 piece of cheese on each burger in the last minute of cooking. Remove from heat and loosely cover.
  • Spray skillet with nonstick cooking spray. Add 2 eggs and cook over medium low heat until whites are firm. Remove from heat. Cover and keep in pan to stay warm.
  • Toast buns. Spread with chipotle mayo. Add one cheeseburger to each bun. Top with bacon, tomato, red onion, lettuce and the sunny side up egg.
  • NOTES You can find the chipotle peppers in adobo sauce in the Mexican/Hispanic food section of your local grocery store.
