Number Of Ingredients 11

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1-1/2 cups warm 2% milk (110° to 115°)
3 large eggs, room temperature
1/4 cup butter, softened
1/4 cup sugar
1 tablespoon salt
7 to 7-1/2 cups all-purpose flour
1 large egg yolk, room temperature
2 tablespoons water
Sesame seeds

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, eggs, butter, sugar, salt and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough. , Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours. , Punch down dough. Turn onto a lightly floured surface; divide into 6 portions. Roll each portion into a 14-in. rope. For each loaf, braid 3 ropes together on a greased baking sheet; pinch ends to seal and tuck under. Cover with kitchen towels; let rise in a warm place until doubled, about 50 minutes. Preheat oven to 375°., Beat together egg yolk and water; brush over loaves. Sprinkle with sesame seeds. Bake until golden brown, 30-35 minutes. Remove from pans to wire racks to cool.

I bake challah every week for our Sabbath meal. It's so easy to make in a KitchenAid mixer. Challah tastes great in French Toast or Cinnamon Toast recipes. This challah recipe is my kid's favorite.

1 teaspoon sugar
1/2 cup warm water
3 teaspoons yeast
4 cups flour
4 tablespoons sugar
1 teaspoon salt
1/3 cup oil
2 eggs
1/4 cup warm water
1 egg yolk, beaten with
1 teaspoon water
sesame seeds or poppy seed

Steps:

  • Preheat oven to 400°F Dissolve 1 teaspoon sugar in 1/2 cup water in bowl of mixer. Sprinkle yeast over water and mix,let stand 10 minutes until foamy.
  • Add the next 6 ingredients to mixing bowl. Mix with dough hook for 6 minutes. Dough should be a little sticky.
  • Place in oiled bowl, cover and let rise in warm place until double in bulk.
  • Punch down dough. Let rise again until double in bulk.
  • Punch down again. Divide dough into 3 equal parts.
  • Roll dough into three long strands. Braid the strands, tucking ends under. Cover with towel and let double in bulk.
  • Brush with beaten egg yolk. Sprinkle with seeds. Bake at 400 F for approximately 30 minutes, until golden brown. The challah is done when it sounds hollow when thumped on the bottom.

BRAIDED EASTER EGG BREAD

This decorative Easter bread has whole eggs baked into it! Do not cook the whole eggs, as they will bake at the same time that the bread does. The eggs can also be dyed for extra color.

2 ½ cups all-purpose flour, divided
¼ cup white sugar
1 teaspoon salt
1 (.25 ounce) package active dry yeast
⅔ cup milk
2 tablespoons butter
2 eggs
5 whole eggs, dyed if desired
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine 1 cup flour, sugar, salt and yeast; stir well. Combine milk and butter in a small saucepan; heat until milk is warm and butter is softened but not melted.
  • Gradually add the milk and butter to the flour mixture; stirring constantly. Add two eggs and 1/2 cup flour; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal size rounds; cover and let rest for 10 minutes. Roll each round into a long roll about 36 inches long and 1 1/2 inches thick. Using the two long pieces of dough, form a loosely braided ring, leaving spaces for the five colored eggs. Seal the ends of the ring together and use your fingers to slide the eggs between the braids of dough.
  • Preheat oven to 350 degrees F (175 degrees C). Place loaf on a buttered baking sheet and cover loosely with a damp towel. Place loaf in a warm place and let rise until doubled in bulk, about 45 minutes. Brush risen loaf with melted butter.
  • Bake in the preheated oven until golden brown, about 30 minutes.

This makes all other egg breads look weak. I learned the recipe from two older ladies in Hawaii. This makes the best bread pudding and french toast imaginable. Try cutting it in chunks and dipping it in fondue---WOW!

⅔ cup warm water (110 degrees F/45 degrees C)
6 egg yolks
3 eggs, room temperature
½ cup vegetable oil
¼ cup white sugar
1 teaspoon salt
4 ½ cups all-purpose flour
1 egg
1 pinch salt

Steps:

  • In a large bowl, dissolve yeast in water. Stir in the yolks, 3 eggs, oil, sugar, and salt. Add about 3-1/2 cups of flour to make a sticky dough.
  • Turn dough out onto a lightly floured surface. Knead with remaining flour until smooth and elastic, about 7 minutes. Place in a well oiled bowl, and turn to oil the entire surface of the dough. Cover with a damp cloth. Place in a warm place until double in size, about 1-1/2 hours.
  • Punch down the dough, and divide into 3 pieces. Roll each piece into a rope about 12 inches long. Braid the three strands together, and seal the ends. Place the bread on a greased cookie sheet. Beat the remaining 1 egg with a pinch of salt; brush onto bread. Let the bread rise until doubled, about 45 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Brush the bread with eggwash again.
  • Bake for 40 minutes, or until golden. Cool on a wire rack.

BREAKFAST BAKED EGG SOUFFLES (PANERA BREAD COPYCAT

I absolutely adore the egg souffles at Panera Bread, but often I get there and the souffles are all sold out. Here is a lower calorie version that I made up and one that is a clone from the internet for those of us that need to satisfy that desire for those wonderful creations.

3 eggs
2 Tbsp milk or half n half
1 Tbsp heavy cream
1/4 c shredded swiss cheese
1 Tbsp shredded parmesan cheese
shredded parmesan cheese for topping
1/4 tsp salt
black pepper to taste (opt)
1/4 c ham or canadian bacon (more if desired)
1-8 oz tube pillsbury crescent butter flake dough
melted butter

Steps:

  • 1. Preheat oven to 375 degrees. Mix the 3 eggs, milk and heavy cream. Add the Parmesan cheese and salt and blend thoroughly. Either microwave at 30 second intervals or cook on stovetop until a sort of runny scrambled egg consistency. Remove from heat. Add ham and stir.
  • 2. Unroll the dough and pinch 2 triangles together and roll to fit into a 4 inch ramekin. (Can use flour to roll out). Do again for second ramekin.
  • 3. Brush melted butter insides of two 4 inch ramekins and line with the dough. Fill the ramekins with equal amounts of filling of egg mixture. Sprinkle tops with parmesan cheese. Fold over the overhanging dough so it is no longer hanging over the sides of the ramekins. Can brush with a beaten egg, if desired. Bake 25 to 30 minutes or until dough is brown and crusty. Cool 5 minutes and enjoy!
  • 4. I make a lower fat version using reduced fat Pillsbury Crescent rolls, 1/2 cup liquid eggs, Fat free half and half instead of milk and heavy cream, one to two Laughing Cow Swiss wedges, and 97% fat free ham. I like to use full fat Parmesan cheese. Spray the ramekins with butter flavored cooking spray instead of using melted butter. I pile it into one ramekin just for me and savor every bite (adjust baking time)! Of course I like the full fat the best, but this isn't all that bad.
  • 5. SPINACH/ARTICHOKE: 3 Tbsp frozen spinach, thawed, 3 tbsp minced artichoke hearts, 2 tsp minced onion, 1 tsp minced red pepper, 1/4 c shredded cheddar cheese, 1/4 c shredded monterey jack cheese. (Instead of ham and swiss cheese) Top with 1/4 cup shredded Asiago Cheese
  • 6. Spinach and Bacon: use 4 pieces of cooked and crumbled bacon instead or artichoke hearts in the Spinach/Artichoke recipe.

3-1/4 to 3-3/4 cups all-purpose flour
1 tablespoon sugar
1 package (1/4 ounce) active dry yeast
3/4 teaspoon salt
3/4 cup water
3 tablespoons canola oil
2 large eggs, room temperature
TOPPING:
1 large egg
1 teaspoon water
1/2 teaspoon poppy seeds

Steps:

  • In a large bowl, combine 2-1/2 cups flour, sugar, yeast and salt. In a small saucepan, heat water and oil to 120°-130°. Add to dry ingredients along with eggs. Beat on medium speed for 3 minutes. 2 (.25 ounce) packages active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
2 cups hot milk
½ cup white sugar
½ cup butter
2 teaspoons salt
½ cup water
5 eggs
11 cups all-purpose flour
1 egg
2 tablespoons sesame seeds

Steps:

  • Proof yeast and 1/2 cup warm water in a large mixing bowl.
  • Combine hot milk, sugar, butter, salt, and 1/2 cup water in a medium bowl. Cool to 110 degrees.
  • In small bowl, slightly beat 5 eggs, then add to cooled milk mixture. Add milk mixture to yeast mixture. Add 2 cups flour and beat until smooth. Slowly add remaining flour until it forms a stiff dough. Knead on a floured board for 10 minutes (5 minutes with a bread hook). Place in a large glass or plastic bowl lightly greased. Turn dough over to grease both sides. Cover and let rise in a warm, dark place until doubled in volume, approximately 60 minutes.
  • Punch down, cover, and let rise again until double, approximately 30 minutes.
  • Punch again, and form into three parts. Form each part into a 20-inch roll. Braid rolls on a large, greased cookie sheet. Cover and let rise until doubled.
  • Lightly beat remaining egg and brush loaf. Sprinkle with sesame seeds. Bake in preheated 350 degree F (175 degrees C) oven for about 55 minutes until nicely browned. May be made into two regular sized loaves. Reduce baking time slightly.

1/4 cup sugar
1 1/2 teaspoons salt
1 package regular or quick active dry yeast (2 1/4 teaspoons)
1 cup very warm water (120° to 130°)
2 tablespoons vegetable oil
1 large egg
Butter or margarine, melted, if desired

Steps:

  • In large bowl, mix 1 1/2 cups of the flour, the sugar, salt and yeast. Add warm water and oil. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Add egg; beat until smooth. Stir in enough remaining flour to make dough easy to handle.
  • Place dough on lightly floured surface. Knead about 10 minutes or until dough is smooth and springy. Grease large bowl with shortening. Place dough in bowl, turning dough to grease all sides. (At this point, dough can be refrigerated up to 24 hours.) Cover bowl loosely with plastic wrap and let rise in warm place about 1 hour or until dough has doubled in size. Dough is ready if indentation remains when touched.
  • Grease bottom and sides of 9x5-inch or 8x4-inch loaf pan with shortening or spray with cooking spray. Gently push fist into dough to deflate. Flatten dough with hands or rolling pin into 18x9-inch rectangle. Roll up tightly, beginning at 9-inch side. Pinch edge of dough into roll to seal. Pinch each end of roll to seal. Fold ends under loaf. Place loaf, seam side down, in pan. Cover loosely with plastic wrap lightly sprayed with cooking spray and let rise in warm place about 1 hour or until dough has doubled in size.
  • Move oven rack to low position so that top of pan will be in center of oven. Heat oven to 375°F. Bake 30 to 35 minutes or until loaf is deep golden brown and sounds hollow when tapped. Remove from pan to wire rack. Brush loaf with butter; cool.

1 medium onion, diced
1 red pepper, seeded and diced
8 eggs
2 teaspoons Italian seasoning

8 cups day old Italian bread cubes (3/4-inch/2cm)
2 cups shredded Italian blend cheeses
1 cup low-fat or regular ricotta cheese

Steps:

  • Grease a 9 x 13 (3 L) baking dish.
  • In large non-stick skillet, cook pancetta over medium heat until browned, about 4 minutes. Remove with a slotted spoon and drain. Add onion and red pepper to the drippings in same skillet and cook for about 3 to 5 minutes or until softened. Remove from heat.
  • Meanwhile, in large bowl, beat eggs well with seasonings. Stir in milk.
  • Spread 1/2 of the bread cubes in baking dish. Layer with 1/2 each onion mixture, pancetta and shredded cheese. Top evenly with spoonfuls of ricotta cheese. 2 cups water (may vary, use less to start)
1/3 cup oil (olive, canola or a mix of both)
1 teaspoon cider vinegar
1/3 cup brown rice flour
1/3 cup besan (chickpea or garbanzo flour)
1 1/3 cups rice flour
2/3 cup arrowroot
1 1/2 teaspoons xanthan gum
1 1/2 teaspoons guar gum
2 2/3 tablespoons sugar
1 teaspoon salt
1 1/2 teaspoons gluten free baking powder
4 teaspoons vegan egg replacer powder (or 3 eggs and reduce water by 3/4 cup)
1/3 cup soymilk powder (or dari free or almond meal)
3 teaspoons poppy seeds
3 teaspoons sesame seeds
3 teaspoons flax seeds (linseeds)
4 teaspoons sunflower seeds
2 1/4 teaspoons dried yeast granules

Steps:

  • BREADMAKER METHOD.
  • Sift and combine the all the dry ingredients except egg replacer powder.
  • In a separate bowl, whisk the egg replacer (or eggs)with about 1/2 a cup of the water, until frothy. Add remaining wet ingredients, withholding about 1/4 - 1/2 cup water, and combine.
  • Add the wet ingredients to the dry and mix together. Add extra water slowly, around 1 tablespoon at a time, until batter is the correct consistency - thicker than a cake batter, but not as thick as cookie dough. Spoon into the pan.
  • Set the breadmaker to the setting recommended by the instructions specific to your model. If there are no such instructions try either the 'Basic' setting or the 'Rapid' setting. If your breadmaker is programmable, set it to skip the second kneading, as this is not necessary for GF breads. Another option, for breadmakers with a 'Bake Only' setting, is use the 'Dough' setting and then the 'Bake Only'.
  • If your your breadmaker does a reasonable job of mixing, it is possible to add the wet ingredients to the pan and than add the combined dry ingredients (or vice-versa, depending on the model). If using this method, about 5 minutes into mixing you will need to check that all the flour has been mixed in thoroughly and, if not, scrape the sides and base and stir with a rubber spatula. At this time check the consistency and add extra water, 1 tablespoon at a time, if necessary. If the mixture is too wet, try adding a little extra flour.
  • Remove the bread from the machine as soon as it is cooked and don't leave in the machine during the 'Keep Warm' cycle. Turn out from pan after a few minutes and cool on a wire rack.
  • *If your breadmaker has a removable blade, you can also try this : Mix the batter until smooth, remove the blade from the pan, place the dough in the pan and cook normally. This way you avoid the big hole in the bottom of the bread and also avoid the second kneading.
  • HAND METHOD 1.
  • Sift and combine the dry ingredients except egg replacer powder.
  • In a separate bowl, whisk the egg replacer (or eggs) with about 1/2 a cup of the water until frothy. Add remaining wet ingredients (withholding a little water as explained above).
  • Add wet ingredients to dry and mix slowly. When combined beat on high until batter is smooth, adding more water slowly if required.

  • Dissolve 1 tablespoon of the sugar in 1/2 a cup of the luke warm water. Add the yeast and set aside to proof for 10 minutes.( The mixture should become frothy.).
  • Sift and combine the dry ingredients except egg replacer powder.

This recipe came from a friend and it is fantastic. I was in Poland in August and enjoyed the bread there so I was glad when I received this recipe. Everyone asks me for the recipe.

5 packages active dry yeast
2 cups lukewarm water, divided
1 quart whole milk
1 cup butter, cut into pieces
1 ½ cups superfine sugar
2 tablespoons salt
1 teaspoon salt
10 eggs, room temperature
5 pounds bread flour

Steps:

  • Dissolve yeast packages in 1 cup of warm water; set aside.
  • Bring milk to a boil. Remove from heat; add remaining 1 cup water, butter, and 2 tablespoons plus 1 teaspoon of salt; stir until butter melts. Pour in sugar and stir until dissolved.
  • When milk mixture has cooled to lukewarm, stir in dissolved yeast.
  • In a separate bowl, beat eggs until combined. Whisk milk mixture into eggs. Gradually add 5 pounds of flour. Transfer dough to a floured work surface, and use a serrated knife to divide dough in half. Shape each half into a ball and place the dough in two large oiled bowls. Cover with greased plastic wrap and let rise in a warm place for about 1 1/2 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Once risen, turn dough out onto a well-floured surface and divide into 6 equal portions. Shape the dough into balls. (Dough will be very sticky and soft at this point.) Keep the dough covered with greased plastic wrap while you divide one dough ball into 3 pieces. Shape the dough into three ropes, braid together, and place on a lightly greased baking sheet or parchment-lined baking sheet. Repeat with the remaining loaves. You should be able to fit two loaves per baking sheet.
  • Bake loaves in the preheated oven for 35 to 40 minutes, or until hollow-sounding when tapped on top. Let cool, and enjoy!

3 large eggs
1 scallion, finely chopped
1 tablespoon unsalted butter
2 slices white bread
Kosher salt
2 slices American cheese

Steps:

  • Combine the eggs, scallion and 1 tablespoon water in a small bowl and whisk to combine.
  • Heat the butter in a large nonstick skillet over medium-high heat until melted and starting to brown around the edges. Add the egg mixture and swirl the pan to coat the bottom. Working quickly, dip 1 slice of the bread in the eggs, then flip it and place close to one edge of the pan. Repeat with the remaining slice of bread, setting it across the pan from the first bread slice (near the opposite edge) so they are in a straight line with eggs all around. Season with a pinch salt.
  • Continue to cook the eggs until they are completely set on the bottom, 1 to 2 minutes. Slide a large metal spatula under the bread slices and flip the whole omelet in one single motion. Put the cheese on top of the omelet, covering the bread slices. Using the spatula, fold one side of the omelet (but not the bread side) over the bread and cheese followed by the other side. Then fold in half to form a sandwich and continue to cook until the bread on the bottom is golden brown, 1 to 2 minutes. Flip and cook until the other side is golden brown, 1 to 2 minutes.

1/2 cup sugar
2 packages (1/4 ounce each) active dry yeast
1 to 2 teaspoons ground cardamom
1 teaspoon salt
6 to 6-1/2 cups all-purpose flour
1-1/2 cups whole milk

4 large eggs, room temperature, divided use
3 to 6 hard-boiled large eggs, unpeeled
Assorted food coloring
Canola oil
2 tablespoons water

Steps:

  • In a large bowl, mix sugar, yeast, cardamom, salt and 2 cups flour. In a small saucepan, heat milk and butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add 3 eggs; beat on high 2 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 45 minutes., Meanwhile, dye hard-boiled eggs with food coloring following package directions. Let stand until completely dry., Punch down dough. Turn onto a lightly floured surface; divide into thirds. Roll each portion into a 24-in. rope. Place ropes on a greased baking sheet and braid. Bring ends together to form a ring. Pinch ends to seal. Lightly coat dyed eggs with oil; arrange on braid, tucking them carefully between ropes., Cover with a kitchen towel; let rise in a warm place until doubled, about 20 minutes. Challah bread is one of the most satisfying things I make. I usually knead it in my Kenwood mixer, but there's nothing like kneading by hand to help relieve stress.

8 -9 cups flour
3/4-1 cup sugar (or ¾ cup honey)
1 tablespoon salt
1 (2 ounce) package yeast
2 1/2 cups lukewarm water (, or 2 cups only if using honey)
1/2 cup oil
5 eggs

Steps:

  • Mix together 2 1/2 cups flour with the sugar (honey), salt and yeast.
  • There is no need to dissolve the yeast first.
  • Add the water and oil.
  • Mix in 4 eggs.
  • Beat in another 1 1/2 cups of flour very well.
  • Add 4-5 cups of flour, until a very soft dough is formed.
  • Knead for about 10 minutes.
  • If using the dough hook, knead for about 7 minutes.
  • Let rise for 1-2 hours until doubled in size.
  • Alternately, let rise in the refrigerator overnight and then let warm to room temperature for about 1 or 2 hours.
  • Decide how many challahs you want, how many strands you want to braid in each.
  • Make a dough ball for each strand; roll them into ropes and braid.
  • Let rise covered for 1/2-1 hour.
  • Beat the remaining egg and brush on the challah.
  • Bake in a preheated oven at 325 F (150 C) for 30 minutes.
  • Apply egg wash once more and bake for another 30 minutes at 350 F (175 C).
  • This dough is enough for 4 medium sized challahs.
  • You can really let your imagination run rampant here, making intricate braids, placing the braids in a loaf pan, even then winding them into a circle.
  • You can add about 1/4 cup of raisins to the dough, but we leave them out.

2 c whole milk
1/4 c granulated sugar
1/4 c butter

  • 1. In a large mixer bowl combine 3 cups of the flour and the yeast. In a saucepan heat milk, sugar,butter and salt until warm (115^)and butter is almost melted; stir constantly. Add to flour mixture; add eggs,one at a time. Beat at low speed of electric mixer for about 1/2 minute; scraping bowl.Beat 3 minutes at high speed. Stir in as much remaining flour as you can mix in with a spoon.

  • 3. Punch down; divide dough in half. Cover; let rest 10 minutes. Shape into 2 loaves. Place in 2 sprayed 9x5x3-inch loaf pans. Cover; let rise till nearly double about 35 minutes.
  • 4. Bake in a 375^ oven for 35 to 40 minutes or till done, covering with foil the last 15 minutes to prevent over browning. Remove from pans; cool on a wire rack. Slice thick toast and butter or garlic butter. Enjoy with your favorite breakfast, or luncheon sandwich.

1 Tbsp sugar
3/4 tsp salt
1 pkg active dry yeast or 2 1/2 tsp. jarred yeast
3 1/2 c bread flour
3/4 c milk
3 Tbsp butter
3 eggs
2 Tbsp water
1/4 c sesame seeds

Steps:

  • 1. In a large bowl, combine sugar, salt, yeast and 1 cup flour.
  • 2. In a 1 quart saucepan over low heat, heat milk and butter until milk is warm and butter is melted.
  • 3. If milk is too hot, bring temp down to around 120 degrees.
  • 4. With mixer at low speed, beat milk mixture into dry ingredients, just until blended. Beat at medium speed two minutes more.
  • 5. Reserve 1 egg yolk. Add remaining egg white and 2 eggs, and 3/4 cups flour. Beat 2 minutes. Stir in 1 1/4 cups flour to make a soft dough.
  • 6. Turn dough onto floured surface and knead until smooth and elastic about 10 minutes working in more flour while kneading. (Work through the pain!!!)
  • 7. Shape dough into a ball and place in a greased bowl, turning dough over to grease top. Cover with a damp towel and let rise in a warm place until doubled in bulk. (about an hour)
  • 8. Punch down dough, turn onto floured surface. Cover with bowl and let rise 15 minutes. Grease large cookie sheet.
  • 9. Cut 2/3 dough into 3 equal pieces. On floured surface, with wet hands, roll each piece into a 13-inch rope. Place ropes side by side and loosely braid.
  • 10. For top part of loaf, cut remaining piece of dough into 3 equal pieces and roll into a 14 inch long rope. Braid as before, but smaller than the last.
  • 11. Place smaller braid on top of first one, stretching if necessary.
  • 12. Seal ends and place on greased cookie sheet.
  • 13. Cover with damp cloth again and let rise until doubled. (about 45 minutes)
  • 14. Preheat oven to 375 degrees.
  • 15. in a small bowl, beat egg yolk and 2 Tbsp. water. Brush the loaf with egg yolk and sprinkle generously with sesame seeds.
  • 16. Bake 30 minutes or until loaf is golden.
  • 17. Cool on wire rack.
