ONION, FETA, AND ZAATAR EGG NOODLE KUGEL
This kugel uses traditional Eastern European kugel components but with a modern Israeli flair...and just happened to be stuff I had stocked the fridge and pantry with one night! Very easy to double, use half the bag of noodles for a little kugel in a 8 x 8 square pan or 9" pie pan, and the whole bag for a big kugel in a 9 x 13 pan then simply double everything else. Pot cheese also works nicely in this if you don't like the tang of feta or goat cheese; so long as it's dry and crumbly it'll work.

Steps:
- Cook the noodles according to the package directions, I wouldn't recommend more than 7-8 minutes total. Drain and set aside.
- If using a block of feta, run it through your food processor or blender a few times to get it nice and crumbled. If lacking such an appliance, mashing it up with a fork does the trick too. Drain any excess liquid.
- Mix everything in a large mixing bowl, then pour into an oiled 8 x 8 square pan.
- Bake for 45-50 minutes (55-60 minutes if doubling) or until golden browned on top.

- Two hours before grilling, remove the provolone cheese from the refrigerator and let sit at room temperature. Letting the cheese sit out in the air will allow the cheese to form a crust and make it easier to grill.
- Preheat the grill to medium-high direct heat, leaving some space for indirect cooking.
- Grill the chorizo, turning occasionally, until nicely charred and hot inside, about15 minutes. Chop roughly and set aside.
- Heat a griddle over the direct heat. Lightly brush the top of the cheese with canola oil and season with salt and pepper. Place on the griddle, seasoned-side down, and cook until the cheese is dark golden brown and crusty, about 5 minutes. Brush the top lightly with oil, season again, carefully flip over and move the griddle to the indirect heat. Continue cooking until the bottom begins to turn light brown and the cheese is melty, covering if need be. Remove to a plate and sprinkle with the oregano and red pepper flakes.
- Brush the bread on each side with some olive oil and sprinkle with salt and pepper. Grill over direct heat for about 1 minute per side-the bread should be crisp and a bit charred outside, but chewy inside.
- Heat a griddle or cast-iron skillet over medium-high heat. Add the butter and melt. Crack the eggs into the skillet, sprinkle with salt and pepper and cover with another pan. Cook until the whites are set and the yolks still runny, about 3 minutes.
- While the eggs cook, whisk together the vinegar and mustard in a large bowl and season with salt and pepper. Slowly whisk in 1/2 cup olive oil until emulsified. Taste and whisk in the honey if desired. Put the rocket, tomatoes and onions in a large bowl and season with salt and pepper. Drizzle some vinaigrette around the sides of the bowl and gently toss to coat.
- To serve: Smear some cheese on the toasted bread. Top with an egg, chopped chorizo, a drizzle of olive oil and parsley leaves. Serve each crostini with some rocket salad.

- Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet. Add onions to drippings in skillet; cook 15 min. or until tender, stirring occasionally.

- Vinaigrette: Mix together the vinegar, capers, mustard, salt and pepper.
- Whisk in the olive oil.
- Add the chopped onion and chopped egg and stir just to mix.
- The vinaigrette can be made up to two hours ahead of serving time and left at room temperature.
- Salad: Heat the oil in a medium, heavy skillet over medium-high heat.

EGG AND AGED SIRLOIN TORTILLA WITH THREE PEPPER RELISH, GRILLED ONION RELISH, AND AVOCADO RELISH

- Preheat grill or grill pan over high heat. Brush steaks on both sides with olive oil and season with salt and pepper. Grill the steaks for 3 to 4 minutes on each side for medium-rare doneness. Let steaks rest for 2 minutes and then slice thinly on the diagonal.
- Beat the eggs in a large bowl and season with salt and pepper, to taste.
- Heat a large skillet over medium heat for 1 minute. Add the butter and let it melt completely, then turn the heat to low. Pour the eggs into the skillet. Cook over low heat, stirring with a wooden spoon until soft curds form.

- In a large skillet, heat oil over medium low heat.
- Add onions and cook, stirring occasionally, until golden, about 30 minutes.
- Peel, then mash the eggs with a potato masher or fork.
- Add onions, mayonnaise, and mustard, and mix well.
- Stir in the olives, season with salt and pepper.
SPAGHETTI WITH EGG, ONION, AND BACON

- Bring a large pot of salted water to boil. Slip the spaghetti into the boiling pasta water, and stir.
- Cook the bacon in a skillet over medium heat until the fat has mostly rendered, about 4 to 5 minutes. (If your bacon is very lean, you can add a drizzle of olive oil to help start the rendering of the fat.) Push the bacon to one side of the pan, and add the onion. Let both cook separately until the onion is tender, about 5 minutes, then mix the two back together. (If you like, you can drain off the excess bacon fat here and replace it with olive oil.)
- Ladle 4 cups pasta water into the skillet with the bacon and onion, bring to a rapid boil, and quickly reduce the sauce. Meanwhile, whisk the egg yolks with 1/4 cup hot pasta water in a small bowl.
- When the sauce has reduced by about half and the spaghetti is al dente, scoop the pasta into the sauce with tongs or a spider. Add the scallions, pepper, and salt to taste. Toss the pasta until it is coated in the sauce and the scallions are wilted. Remove the pan from the fire, and quickly mix in the egg yolks, stirring until creamy. Toss the pasta with the grated cheese, and serve immediately.
ASPARAGUS, EGG, AND ONION SANDWICH

- Heat the oil in a large skillet over medium heat, and add the onion, asparagus, and 1/4 cup water. Season with 1/4 teaspoon of the salt, cover, and let simmer until the asparagus is tender, about 10 minutes, until the water has evaporated.
- Beat eggs with the remaining salt. Pour the eggs into the skillet, and cook, stirring, until just beginning to set but still wet, about 1 minute. Sprinkle with the grated provola, then cover and cook until cheese melts, about 1 minute more. Uncover, stir to mix in the cheese, and serve on the toasted bread or rolls.

- CARAMELIZED ONIONS: Heat 1 tablespoon of extra virgin olive oil in a large nonstick frying pan over medium heat. Add the onions and 1/4 teaspoon of sea salt, and stir to coat evenly. Beat 2 egg whites with 1/4 teaspoon of piment d'Espelette, 1/4 teaspoon of sea salt, and some freshly cracked black pepper. Repeat with the remaining eggs.
- BLUEBERRY & ARUGULA SALAD: In a jar, combine 1 tablespoon of extra virgin olive oil, aged balsamic, and maple syrup. Close the jar tightly and shake vigorously to emulsify. In a large bowl, toss the arugula and blueberries with the dressing.

- Whisk flour, salt, and sugar in a bowl; work 1/2 cup unsalted butter pieces into dry ingredients with your fingers until flour mixture looks like coarse meal. - 1. Melt 1 tablespoon of the butter in a 10-inch non-stick skillet over medium high heat. meanwhile, break the eggs into a small bowl. Add the milk and beat for 1 minute. Pour into prepared skillet, cover and let cook until done, checking often and flipping once. Omelet should be slightly browned on each side. Set aside.
- 2. Spread the remaining butter on two of the bread slices. Place face up on serving plate. Spread salad dressing (or mayo) on other two slices of bread and place face up on plate.
- 3. Cut omelet to fit bread slices. Place omelet pieces on top of buttered bread slice.
- 4. Top each with 2 or three slices of tomato.
- 5. Then add the onion slices. Add salt and pepper to taste.
- 6. Top with salad dressing coated bread slice (face down). Cut in half, if desired.
- 7. Makes 2 sandwiches. (Hint: I used CandyApple onions -pictured here- since they are now in season, usually in July. Also, try making the omelet with rendered bacon fat. That just takes it to the "next level"!!!)

- To make the croquettes:
- In a large bowl combine well the hard-boiled eggs, the onion, the apple, the béchamel, the cumin, the lemon juice, and salt and pepper to taste and chill the mixture for 30 minutes. Form the mixture in 1-inch balls, dip the balls in raw eggs, shaking off the excess, and roll them in the bread crumbs, transferring the croquettes as they are made to a baking sheet lined with wax paper. Chill the croquettes, covered loosely, for 1 hour. In a deep fryer or heavy deep skillet heat 2 inches of the oil to 350°F. and in it fry the croquettes in batches, turning them and transferring them to paper towels to drain with a slotted spoon as they are done, for about 2 minutes, or until they are golden. In a small bowl stir together the applesauce and the horseradish. Serve the croquettes with the sauce.
- To make the sauce:
- In a saucepan cook the onion in the butter over moderately low heat, stirring, until it is softened. Stir in the flour and cook the roux, stirring, for 3 minutes. Add the milk in a stream, whisking vigorously until the mixture is thick and smooth, add the salt and the white pepper, and simmer the sauce for 10 to 15 minutes, or until it is thickened to the desired consistency. Strain the sauce through a fine sieve into a bowl and cover the surface with a buttered round or wax paper to prevent a skin from forming. Makes about 2 1/4 cups.
STEAK AND EGG SANDWICH WITH CREAMED SPINACH AND ONION RINGS

- For the creamed spinach: Put some ice and cold water in a bowl. Bring a pot of salted water up to a boil. Add the spinach, cook it for 2 minutes, and then transfer it to the ice water to stop the cooking. Drain the spinach in a colander, and then squeeze it with your hands until all the excess liquid has been removed.
- In a medium saucepan, melt the butter over medium-low heat. Add the onion, garlic and 1/4 teaspoon salt and sweat the vegetables, stirring frequently, until they are soft but have taken on no color, about 6 minutes. Add the flour and stir to create a roux. Cook, stirring continuously to make sure it doesn't burn, for 3 minutes. Whisk in the milk and cook until the flour is completely dissolved and there are no lumps. Turn down the heat to maintain a low simmer and cook for 3 minutes. Whisk in the cream, return the mixture to a simmer, and fold in the spinach. Stir in the nutmeg, cayenne and 2 teaspoons salt. Cook for 2 more minutes and season with additional salt. Keep warm.
- For the onion rings: Heat about 3 inches of oil to 375 degrees F in a large, wide heavy-bottomed pot over medium heat. Whisk the flour, Old Bay and baking powder in a medium bowl. Slowly stir in the club soda until smooth. Working in batches, dip each onion ring in batter to evenly coat. Fry the onion rings until golden brown and crispy, about 2 minutes. Drain the rings on paper towels and immediately season with salt.
- For the steak: Put a large pan over high heat. Allow the pan to get very hot, almost smoking. Pat the steak dry with paper towels. Sprinkle the meat on both sides with the salt and pepper. Add some oil to the hot pan and carefully add the steak. To ensure a good sear, do not move steak in the pan. Cook for 4 minutes, flip, and cook for another 4 minutes for medium-rare. Let the steak rest for 3 minutes before slicing.
- For the sandwiches: Add 1/4 cup of warm creamed spinach to the bottom halves of the Kaiser rolls. Slice each portion of steak in half, or desired-size pieces, and put them on top of the creamed spinach. Add a fried egg to each sandwich and top with Kaiser roll tops. Serve with onion rings.
POTATO AND ONION EGG ROLLS
These are a holiday tradition in my house, my family and friends just love these, of coarse you can make them any time of year LOL! To save tons of time prepare your onion mixture and then freeze the onions until ready to use, or make a day ahead and refrigerate. This recipe should make around 20 egg rolls, I most always double it to make 30. Use only russet potatoes or Yukon Gold for this

- Using a large skillet (or electric frypan) heat oil and then add in onions and sugar.
- Cover skillet and cook until onions are well browned, stirring frequently (this should take about 20-25 minutes to well brown and caramelize, the onions must be browned!).
- Season the onions with salt and black pepper; cool completely (at this point you can refrigerate 24 hours or place into a container and freeze the onions until ready to use).
- Meanwhile place the cubed potatoes on a vegetable steamer rack and steam in a covered pot over boiling water until tender (about 15-20 minutes).
- Transfer the potatoes to a large bowl.
- Add in milk and mash until smooth.
- Season the potatoes with salt and pepper.
- Mix in HALF the onions (the remaining onions will be served on the side).
- Place an egg roll wrapper (trim the ends to make rounds) on a surface, then brush the edges with egg white.
- Arrange about a scant 1/3 cup of the potato/onion filling in a 3-inch log horizontally just below the center.
- Fold the bottom of dough over the filling, the roll up the wrapper to enclose the filling completely.
- Repeat with remaining filling and wrappers.
- Heat oil in a heavy large skillet over medium-low heat.
- Working in batches add in eggrolls (seam-side down) and fry until heated through and golden brown and crisp on all four sides (this should take about 10 minutes per batch).
- Repeat with remaining eggrolls.
- Drain on paper towels.
- Arrange eggrolls on plates.
- Serve with sour cream and remaining onions.
- Delicious!
