A delicious, moist Banana Loaf that is loved in homes all over New Zealand. This recipe is taken from the Edmonds Cook Book. Great to have with a nice cup of tea, or just on it's own. A wonderful healthy dessert for the family. Enjoy.

Number Of Ingredients 8

1 3/4 cups self raising flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
2 eggs
1/4 cup milk
75 g butter, melted
1 cup mashed banana (approximately 2 bananas)

Steps:

  • Sift flour, baking soda and salt into a bowl.
  • Mix in sugar.
  • In another bowl beat eggs.
  • Stir in milk, butter and banana.
  • Mix quickly into dry inredients, stirring until ingredients are just combined.
  • Spoon into a greased and lined 22cm loaf tin.
  • Bake at 180C (350F) for 45-55 minutes.
  • Leave in tin for 10 minutes before turning out onto a wire rack.

½ cup butter
1 cup white sugar
2 eggs
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, stir in the mashed bananas.
  • In a large bowl, sift together flour, baking powder, baking soda, salt. Blend the banana mixture into the flour mixture; stirring just to combine. Fold in the nuts.
  • Bake in preheated oven for 60 minutes, until a toothpick inserted into center of the loaf comes out clean.

This is a bread that I make at holiday time as well as during the year. Double the recipe to have enough for smaller gift loaves.

Number Of Ingredients 13

1/2 cup butter or 1/2 cup margarine, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup chopped walnuts
1/2 cup fine shredded coconut
1/2 cup chopped cherries
1/4 cup all-purpose flour
1 cup mashed banana

Steps:

  • Cream butter and sugar well.
  • beat in eggs, 1 at a time beating well after each addition.
  • Add vanilla and stir.
  • Measure first amount of flour, add baking soda and baking powder and salt into separate bowl and stir.
  • toss walnuts, coconut and cherries with second amount of flour in another bowl.
  • Add flour in 4 additions alternately with banana in 3 additions, beginning and ending with flour.
  • Add fruit mixture, mix only until blended, do not overmix.
  • turn into greased 9x5x3 inch loaf pan.
  • Bake in 350F oven for 50-60 minutes or until an inserted wooden pick comes out clean.
  • Let stand for 20 minutes.
  • Turn out onto a rack to cool.

This is our favorite banana loaf.A moist tender loaf with bits of crushed pineapple throughout. This recipe was found in a Robin Hood booklet many years ago. I have been making this loaf for many years. yield is 2 loaves.

Number Of Ingredients 11

3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup undrained crushed pineapple
3 eggs
1 1/2 cups corn or 1 1/2 cups canola oil
2 cups mashed ripe bananas
2 teaspoons vanilla
1 cup chopped nuts (macadamia or Brazil are nice) (optional)

Steps:

  • Combine first 5 ingredients.
  • Beat remaining ingredients together in a large bowl until blended.
  • Add dry ingredients stirring until thoroughly combined.
  • Spread in two greased 81/2x41/2 loaf pans dividing evenly.
  • Bake at 350°F for 60-70 minutes or until toothpick inserted in centre comes out clean.
  • Cool 15 minutes in pan then remove to rack to cool completely.

This banana bread is, without a doubt, one of the very best I have ever made. The loaves have a very nice deep color and a beautiful crumb. The secret is not the unusual liquid ingredient, the secret is slow baking. Oil makes this recipe parve, (thanks Mirj for explaining this to me & Chia and Miraklegirl for your help too).

Number Of Ingredients 12

2 cups very ripe pureed bananas (approx. 6 bananas)
2 1/2 cups dark brown sugar
1/2 cup oil (if your prefer, you may sub. melted, unsalted butter)
4 eggs
2 teaspoons vanilla extract
1 teaspoon cinnamon
2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 1/4 cups all-purpose flour
1 cup Coca-Cola
1 cup chopped pecans (optional)

Steps:

  • Preheat oven to 300 degrees.
  • Spray two 9 X 5 inch loaf pans with non-stick cooking spray.
  • Using your food processor, puree the bananas, then remove the puree to another bowl and set aside.
  • No need to clean the work bowl of your food processor, just add together and blend well the sugar, oil, eggs and vanilla.
  • Takes about 1 minute.
  • Measure and mix together, in a separate bowl, all the dry ingredients except the nuts.
  • Return banana puree to processor work bowl.
  • Add dry ingredients and blend, pouring in the coca cola as mixture is blending together.
  • Blend until smooth, about 1 minute.
  • Blend in nuts by hand.
  • Divide mixture between the two loaf pans.
  • Place loaf pans on a baking sheet in the oven.
  • Bake for 1 hour and 20 minutes OR until loaves test done in the middle with a toothpick.
  • Let cool about 10-15 minutes then turn loaves out of pans to finish cooling.
  • These loaves keep well or can be frozen.
