A green salad with edamame, feta and a sesame vinaigrette dressing. I found this recipe on a package of frozen edamame and found a sesame vinaigrette on this website that went with it perfectly.

2 quarts romaine lettuce
1 cup thinly sliced cucumber
1 cup cherry tomatoes, halved
3 ounces crumbled feta cheese
3/4 cup cooked cooled and shelled edamame
1/4 cup sesame dressing
1/4 teaspoon oregano, crumbled
1/8 teaspoon black pepper
1/8 teaspoon garlic powder

Steps:

  • Combine lettuce, cucumber, tomatoes, feta and edamame in a large bowl. Combine sesame soy dressing on this website, and add oregano, pepper and garlic powder. Mix to blend ingredients and pour over salad. Toss salad to mix.

Edamame (green soybeans), corn, cherry tomatoes and black beans combine to make a colorful salad with a light lime vinaigrette dressing.

5 tablespoons red wine vinegar
3 tablespoons grapeseed oil
⅓ cup chopped fresh cilantro
2 limes, juiced
1 teaspoon white sugar
¾ teaspoon salt
2 cloves garlic, minced
1 (1 pound) package frozen shelled edamame (green soybeans)
3 cups frozen corn kernels
1 pint cherry tomatoes, quartered
4 green onions, thinly sliced
1 (15 ounce) can black beans, rinsed and drained

Steps:

  • In a large serving bowl, whisk together the red wine vinegar, grapeseed oil, cilantro, lime juice, sugar, salt and garlic. Set aside.
  • Bring a large pot of lightly salted water to a boil. Add the soybeans and boil for 3 minutes. Add corn to the boiling water and continue cooking for 1 more minute. Drain very well, and pour into the bowl with the dressing. Gently mix in the cherry tomatoes, green onions and black beans. Cover and refrigerate for at least 2 hours before serving to chill and blend the flavors.

1/4 cup seasoned rice vinegar
1 tablespoon olive oil or 1 tablespoon canola oil
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 bunch radish, cut in half and thinly sliced. (8 ounces)
1 cup loosely packed chopped cilantro leaf

Steps:

  • Toss the edamame, vinegar, oil, saly, pepper, radishes, and cilantro together in a largr bowl.
  • Serve chilled or at room temperature.

1 head iceberg lettuce, chopped
1 bunch fresh spinach, stems removed, chopped
1/2 cup chopped carrots
1/2 cup sliced radishes
2 oranges, peeled, sectioned and chopped
1/4 cup chopped pecans, toasted
1 cup fresh cilantro leaves
1/2 cup lime juice
1/2 cup orange juice
1/3 cup olive oil
1 clove garlic, finely chopped
2 tablespoons honey
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In large bowl, toss all salad ingredients, or arrange lettuce and spinach on serving platter and layer carrots, radishes, oranges and pecans on top.
  • In blender, place all vinaigrette ingredients. Cover; blend on high speed until smooth. Drizzle over salad or serve on the side.
