1 package (16 ounces) frozen shelled edamame, thawed
1/2 cup tahini
1/2 cup water
1/3 to 1/2 cup lemon juice
2 garlic cloves, minced
1 teaspoon sea salt
1/4 cup olive oil
1/4 cup minced fresh mint
2 jalapeno peppers, seeded and chopped
Assorted fresh vegetables
Rice crackers

Steps:

  • Microwave edamame, covered, on high until tender, 2-3 minutes. Transfer to a food processor; add the next 8 ingredients. Process until smooth, 1-2 minutes. Serve with assorted fresh vegetables and rice crackers.

1/4 cup tahini
1/4 cup water
1/2 teaspoon freshly grated lemon zest
1 lemon (about 3 tablespoons), juiced
1 clove garlic, smashed
3/4 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
3 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh flat-leaf parsley
Suggested serving: Sliced cucumbers, celery, and olives

Steps:

  • Boil the beans in salted water for 4 to 5 minutes, or microwave, covered, for 2 to 3 minutes.
  • In a food processor, puree the edamame, tahini, water, lemon zest and juice, garlic, salt, cumin, and coriander until smooth. With the motor running, slowly drizzle in 2 tablespoons of the olive oil and mix until absorbed.
  • Transfer to a small bowl, stir in the parsley and drizzle with remaining oil. Serve with the suggested vegetables, or refrigerate, covered, up to 1 day.

1 bulb garlic
2 tablespoons olive oil, divided, or more as needed
2 cups shelled edamame
½ cup roughly chopped cilantro
⅓ cup tahini
¼ cup lemon juice
1 teaspoon salt
1 teaspoon smoked paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Trim about 1/4 inch off the top of the garlic bulb, to expose the cloves; drizzle with 1 tablespoon olive oil and wrap in aluminum foil.
  • Bake in the preheated oven until soft, about 1 hour. Let cool until easily handled, about 10 minutes.
  • Squeeze roasted garlic cloves into a food processor. Add 1 tablespoon olive oil, edamame, cilantro, tahini, lemon juice, and salt. Process until smooth, adding more oil if needed, about 3 minutes. Transfer to a serving dish and sprinkle with smoked paprika.

6 (6 inch) pita bread, split in half horizontally
1 1/2 cups frozen blanched shelled edamame
4 teaspoons olive oil, divided
1/2 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon coriander
2 garlic cloves, peeled
1/2 cup fresh flat-leaf parsley
3 tablespoons tahini
3 tablespoons water
3 tablespoons fresh lemon juice
1/2 teaspoon paprika

Steps:

  • Preheat oven to 350°F.
  • Arrange pita halves in a single layer on oven rack.
  • Bake at 350°F for 15 minutes or until crisp, and cool completely on a wire rack.
  • Break each pita in half into about 6 chips each.
  • Prepare edamame according to package directions, omitting salt.
  • Place 3 tsp oil, salt, cumin, coriander, and garlic in a food processor, and pulse 2 or 3 times or until coarsely chopped.
  • Add the edamame, parsley, tahini, water, and juice; process 1 minute or until smooth.

  • Drizzle with remaining 1 tsp oil, and sprinkle with paprika.

  • Steam edamame in a basket insert set over a pan of simmering water until tender, 8 to 10 minutes. Let cool completely.

Whipped this up tonight since we have been a bit vegetable deficient lately. I LOVE hummus, as does my fiancé, so I thought this would be perfect. It turned out really well. This is based on my Lebanese friend's recipe for hummus--she is religious about hummus and tabbouleh, so I know I have the basic recipe down pat!! :-) Be sure to adjust anything you want; it is possible to make hummus more low in fat by reducing the amount of tahini or olive oil you add, and if you hate edamame, then omit it. Just make it up with water, stock, or the liquid from the can of garbanzo beans. IT occurs to me that this would be perfect for St Patrick's Day....it's completely green, with all the spinach and edamame.

1 tablespoon soy sauce

  • Prepare frozen edamame according to packaged instructions (typically boiling for 4-5 minutes should suffice.
  • Drain cooked edamame and place back in pot with cold water. Allow edamame 10 minutes to cool.
  • Place edamame in food processor. Add all ingredients. Puree in food processor. Add water slowly through the drip top, until desired thickness is reached.

A whole head of garlic sounds like a lot for hummus but roasting it makes it very mellow, so the hummus is not garlicky at all. Like in hummus with chickpeas, I always add a little homemade harissa, which gives it great flavor without making it spicy. It's not worth turning on the oven for just one head of garlic so I always roast 3 or 4 heads at a time and use them within a week or so. This hummus keeps for 3 to 4 days, refrigerated.

  • Prepare edamame according to package directions,omitting salt. drain.
  • Combine edamame, parsley, tahini, 3 tbsp water, lemon juice, garlic and salt to taste into a food processor; blend1 to 2 minutes or until smooth.
  • Spoon into serving bowl.

2 10-ounce packages frozen shelled edamame (soybeans)
Kosher salt
2 10-ounce packages frozen peas
1/2 cup fresh lemon juice
2 teaspoons minced garlic
1/2 teaspoon ground corriander
1/4 teaspoon ground cumin
3/4 cup extra-virgin olive oil plus more for drizzling
1/4 cup chopped fresh cilantro plus more for garnish
1/4 cup chopped fresh mint plus more for garnish
Freshly ground black pepper
Endive spears

Steps:

  • Cook edamame in a large pot of boiling salted water until tender, 3-5 minutes. Using a slotted spoon, transfer to a large bowl of ice water. Return water in pot to a boil and add peas; cook until heated through, about 1 minute. Transfer peas to bowl with edamame; let cool. Drain well. Working in batches, pulse edamame and peas in a food prcoessor until a coarse purée forms, about 30 seconds. Transfer to a medium bowl. Stir in juice and next 3 ingredients. Gradually stir in 3/4 cup oil; mix well. Stir in 1/4 cup cilantro and 1/4 cup mint. Season with salt and pepper. DO AHEAD: Can be made 2 days ahead. Cover and chill. Transfer to a serving bowl; drizzle with oil and garnish with more herbs. Serve with endive spears.
