Number Of Ingredients 11

1 tablespoon plus 1 teaspoon canola oil, divided
2 large cloves garlic, minced
4 scallions, greens included, rinsed, trimmed and thinly sliced
1 tablespoon minced ginger
4 cups leftover cooked brown rice
3/4 cup finely diced red pepper
3/4 cup cooked, shelled edamame
1/2 cup fresh or frozen, thawed, corn
6 ounces firm tofu, cut into 1/4-inch cubes
2 eggs, beaten
3 tablespoons low-sodium soy sauce

Steps:

  • Heat 1 tablespoon of oil in a wok or large skillet until very hot. Add the garlic, scallions and ginger and cook, stirring, until softened and aromatic, about 2 to 3 minutes. Add the rice, red pepper, edamame, corn and tofu and cook, stirring, until heated through, about 5 minutes. Make a 3-inch well in the center of the rice mixture. Add 1 teaspoon of canola oil, then add the eggs and cook until nearly fully scrambled. Stir the eggs into the rice mixture, then add soy sauce and incorporate thoroughly. Serve hot.

2 to 3 tablespoons vegetable oil
4 scallions, sliced, white and green parts separated
1 red bell pepper, diced
1 cup shelled edamame, thawed if using frozen
2 cloves garlic, chopped
2 large eggs
2 tablespoons low-sodium soy sauce, plus more if needed
2 cups cooked long-grain white rice

Steps:

  • Heat the oil in a large skillet. Add the scallion whites and bell peppers and cook until just starting to soften, a few minutes. Stir in the edamame and garlic, then cook for 30 seconds.
  • Break the eggs into the skillet and stir-fry them quickly to scramble them. Add the soy sauce. Add the rice and stir it around to cook it for a couple of minutes. Add more soy sauce if you like.
  • Serve garnished with the scallion greens.

Olive oil cooking spray
2 eggs, beaten
2 tablespoons light olive oil, divided
8 ounces shiitake mushroom caps, thinly sliced
1 red bell pepper, seeded and chopped
4 cups broccoli florets
4 ounces kale, chopped (about 2 cups)
4 garlic cloves, minced
1 2-inch piece fresh gingerroot, minced (about 2 tablespoons)
1 cup uncooked short-grain brown rice, cooked according to the package instructions
1 1/2 cups frozen, shelled edamame, defrosted
3 tablespoons reduced-sodium soy sauce
2 scallions, thinly sliced

Steps:

  • Heat a large skillet over high heat. Remove from the heat and coat with cooking spray. Return the skillet to the burner and add the eggs, turning the pan to coat it with a thin layer of eggs. Cook 30 seconds, loosening the inside edges of the eggs with a spatula. Gently flip the eggs over and cook 10 to 15 seconds. Transfer the eggs to a cutting board.
  • Heat the same skillet over medium heat. Add half the oil. Add the mushrooms, bell pepper, broccoli, and kale. Cook 4 to 5 minutes, turning often, until the vegetables soften. Add the garlic and ginger. Cook 1 minute, until it becomes fragrant.
  • Increase the heat to high. Push the vegetables to one side of the skillet and add the remaining olive oil, and the rice. Cook 1 to 2 minutes, turning the rice over with a metal spatula and scraping up bits that stick to the pan. Add the edamame and soy sauce and remove from the heat. Stir two or three times to mix in the soy sauce.
  • Thinly slice the eggs. Top the rice mixture with the eggs and scallions and serve.

The stir-fry guru Grace Young suggests brown rice for vegetarian stir-fries, and she's right: the rich, nutty flavor and chewy texture make for a very satisfying meal. The trick to successful fried rice, whether you use brown or white rice, is to cook the rice a day ahead and refrigerate. Cold rice will not clump together.

2 fresh poblano chiles
2 tablespoons plus 1 teaspoon peanut or canola oil
4 large eggs, beaten
Salt to taste
2 tablespoons minced ginger
1 tablespoon minced garlic
1/2 cup chopped scallions
4 cups cooked brown rice (2 cups uncooked)
1 cup fresh or thawed frozen edamame
1/2 cup chopped cilantro
1 to 2 tablespoons soy sauce (to taste)
1/4 teaspoon ground white pepper

Steps:

  • Roast the poblano chiles over an open flame or under a broiler, turning often until uniformly charred. Place in a bowl, cover tightly and allow to cool. Remove the charred skins, rinse briefly if necessary and pat dry. Cut in half, remove seeds and membranes, and cut into 2-inch strips. Set aside near your wok. It's best to wear plastic gloves when handling the chiles.
  • Beat two of the eggs in a bowl, and season to taste with salt. Heat a 14-inch flat-bottomed wok over high heat until a drop of water evaporates from the surface in a second or two. Add 2 teaspoons of the oil to the sides of the pan and tilt the pan to distrbute. Making sure that the bottom of the wok is covered with oil, carefully pour in the eggs. Cook for about 30 seconds or until the eggs set, tilting the pan so that the eggs spread out into a thin pancake. Once the pancake is set and beginning to color, flip it over with a metal spatula and allow to cook for five seconds. Remove to a cutting board, and roll up the pancake. Cut into thin strips, and set aside. Repeat with the other 2 eggs.
  • Add the remaining oil to the wok, and then the ginger, garlic and scallions. Stir-fry 10 seconds. Add the rice, roasted poblano strips and edamame. Stir-fry for two minutes, scooping up and breaking up the rice, then pressing it into the pan and scooping it up again. Add the egg strips, cilantro, soy sauce, salt to taste and pepper. Stir-fry another 30 seconds to combine. Remove from the heat and serve.

CAULIFLOWER "FRIED RICE" WITH SHRIMP AND EDAMAME



Cauliflower

This is a great recipe for the times you want the flavor and satisfaction of fried rice without a lot of the carbs. You can find riced cauliflower fresh or frozen at the market or make it yourself at home. If you're going vegetarian, sub out the oyster sauce with vegetarian oyster sauce or mushroom soy sauce. Also, sub out the chicken powder with sugar. If you want to add meat, just slice it thin and add it to the pan first until almost cooked through, then add the cauliflower.

1 tablespoon canola oil
1 clove garlic, minced
6 to 8 medium shrimp, peeled and deveined
1 small red bell pepper, half thinly sliced and half finely diced (for garnish)
1/4 cup shelled steamed edamame
1 large egg, beaten
4 cups riced cauliflower (do not thaw, if frozen; see Cook's Note for how to rice your own)
1 tablespoon low-sodium soy sauce
1 tablespoon oyster sauce
1 teaspoon chicken powder or sugar
Kosher salt
2 scallions, chopped
Pinch white pepper

Steps:

  • Heat a large skillet, saute pan or wok over high heat, then add the oil and garlic and cook, stirring, until fragrant, about 30 seconds.
  • Stir in the shrimp and cook, tossing constantly, until the shrimp are cooked about halfway through, 30 seconds to 1 minute. Move the shrimp to one side of the skillet; add the egg to the other side and immediately stir in the riced cauliflower. Using the back of a spatula or spoon press the cauliflower into the egg in small circles until coated and solidified with egg. Fold and repeat until the riced cauliflower is completely coated and heated through. Add the sliced bell peppers and edamame and cook, stirring occasionally, until heated through, 1 to 2 minutes. Add the soy sauce, oyster sauce, chicken powder and a pinch of salt, while stirring to coat.
  • Taste and adjust the seasoning, if necessary, constantly stirring until the "fried rice" is heated through, about 1 more minute. Garnish with the scallions, diced bell peppers and white pepper.

1 3 1/2 oz. bag boil-in-bag long grain rice
3 Tbs canola oil, divided
1 Tbs chopped peeled fresh ginger
3 garlic cloves, minced
6 oz. pork tenderloin, trimmed and cut into thin strips
1/2 cup shelled edamame
1/2 cup shredded carrot
3/4 cup diagonally cut green onions
1/2 cup (1/4 inch thick) slices red bell pepper, each cut in half
2 Tbs low sodium soy sauce
1/2 cup fat free, less sodium chicken broth
2 Tbs chopped fresh cilantro
1 1/2 Tbs seasoned rice vinegar
1 Tbs Thai chile sauce (such as Sriracha)
1/2 tsp salt
1/4 tsp black pepper
2 Tbs unsalted, dry roasted peanuts

Steps:

  • Cook rice according to package directions, set aside Heat 1/2 tsp oil in a wok or large non-stick skillet over medium-high heat. Add ginger and garlic, saute 1 minute. Add pork, saute 3 minutes, or until pork loses its pink color. Place pork mixture in a large bowl, cover and keep warm. Add 1 tsp oil to the pan. Add edamame and carrot, saute 2 minutes. Add onions and bell pepper, saute 2 minutes. Add carrot mixture to pork mixture in the bowl, keep warm. Heat remaining 2 1/2 Tbs oil in pan. Add cooked rice and soy sauce to pan, saute 3 minutes. Return pork mixture to pan. Stir in broth and next 5 ingredients (through black pepper), cook 2 minutes or until thoroughly heated. Serve immediately.
