2 tomatoes, diced
1 cup shelled, cooked edamame
1 cup frozen sweet corn kernels, thawed
4 green onions, sliced
2 tablespoons fresh lime juice
2 tablespoons olive oil
1 tablespoon chopped fresh cilantro
2 cloves garlic, minced, or to taste
1 pinch coarse sea salt to taste

Steps:

  • Mix tomatoes, edamame, corn, green onions, lime juice, olive oil, cilantro, and garlic together in a bowl. Season with sea salt.
  • Cover bowl with plastic wrap and refrigerate until flavors blend, at least 1 hour.

5 ears corn, shucked
½ yellow onion, peeled
1 red bell pepper, stemmed and seeded
1 jalapeno pepper
3 tablespoons olive oil, divided
salt and ground black pepper to taste
1 cup frozen shelled edamame (green soybeans)
1 tablespoon white wine vinegar
2 tablespoons chopped fresh basil, or to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place corn, onion, red bell pepper, and jalapeno pepper on a baking sheet. Drizzle vegetables with 2 tablespoons olive oil; season with salt and pepper. Rub to evenly coat.
  • Transfer vegetables to grill and cook, turning several times, until vegetables are tender and dark marks appear, 10 to 15 minutes. Set aside to cool.
  • Bring a pot of water to a boil; cook edamame in the boiling water until tender, 10 to 15 minutes. Drain and cool.
  • Whisk 1 tablespoon olive oil and vinegar together in a bowl.
  • Dice red bell pepper, jalapeno pepper, and onion. Cut corn off the cob. Combine vegetables in a serving dish; add edamame. Toss vegetables and edamame with oil-vinegar mixture. Season with salt, pepper, and basil.

A super simple summer salad with the sweet crunch of corn, juicy tomatoes, and the protein-punch of edamame.

2 ears fresh sweet corn (husks and silk removed (or about 1 1/2 cups frozen corn kernels, thawed)
1 (10-ounce) bag frozen shelled edamame
1 pint 10 ounces (or about 1 1/4 cup) cherry tomatoes, halved
1/2 small red onion (diced)
5-6 medium basil leaves (chiffonaded)
2 tablespoons extra virgin olive oil
1 tablespoon white balsamic vinegar
1/2 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste

Steps:

  • Set a large pot of water over high heat. Bring to a boil. Carefully add the corn cobs. Boil for three minutes. Remove with tongs and set aside to cool a bit. Add the edamame. Cook for three minutes. Drain and let cool for a bit.
  • Cut the corn kernels off the cob (I set it on end and use a large, sharp chef's knife. Be careful!) Add them to the bowl along with the cooled edamame. Add the cherry tomatoes, onion, and basil.
  • Drizzle in the olive oil and vinegar. Add 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Toss well. Taste and add additional salt and pepper if desired. Serve immediately or refrigerate until ready to serve. Keeps well for 2-3 days in the refrigerator.

It holds up well overnight, too.

Freshly cut kernels from 6 to 8 ears fresh corn
6 cloves garlic, not peeled
1 tablespoon vegetable oil, such as grapeseed, corn or olive
2 teaspoons mild chile powder, such as ancho, pasilla or Hatch
1 teaspoon ground cumin
Kosher salt
1 pound shelled soybeans (edamame, available frozen) or lima beans
2 red bell peppers, seeded and diced, or 4 plum tomatoes, seeded and diced
1 medium-size jicama or 2 cucumbers, peeled and diced (about 1 cup)
6 scallions, white and pale green parts, thinly sliced
1/4 cup crumbled Cotija or mild goat or feta cheese
1/4 cup roughly chopped cilantro leaves, for garnish
1 tablespoon honey
Freshly squeezed juice and zest of 6 limes (about 1/2 cup)
1/2 cup vegetable oil, such as grapeseed or corn, more to taste
1/4 cup roughly chopped cilantro, preferably both white roots and green leaves
2 teaspoons kosher salt, more to taste
2 teaspoons freshly ground black pepper

Steps:

  • Heat oven to 450 degrees. In a bowl, toss corn kernels and garlic cloves with the tablespoon of oil, chile powder, cumin and 2 teaspoons of salt. Spread in a sheet pan and roast 10 to 12 minutes, until fragrant and golden. Set aside to cool.
  • In a pot of salted boiling water, cook the beans just until crisp-tender. Drain and set aside to cool.
  • Make the dressing: Squeeze the roasted garlic flesh out of the papery skins into a blender. Add the honey, lime juice and zest, 1/2 cup oil, the cilantro roots and leaves, and salt and pepper. Blend until smooth. Taste and add more oil if the dressing is too tart.
  • In a serving bowl, combine the corn, beans, bell peppers, jicama or cucumbers, scallions and cheese. Pour most of the dressing over this and toss well. Taste and add more dressing, and salt and pepper to taste. Sprinkle 1/4 cup cilantro leaves on top and serve.

1 1/2 cups balsamic vinaigrette, or as needed
2 cloves garlic, minced

This is a recipe from our local newspaper. I have never made this recipe, but I wanted to try it soon and thought this is the *perfect* place to save it for use in the future! It sounds really good! Cook time reflects the chill time in this recipe.

2 tablespoons balsamic vinegar
2 tablespoons cider vinegar
1 tablespoon brown sugar
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
1 minced garlic clove

1/2 cup red bell pepper, diced
1/2 cup cilantro

Steps:

  • In a small saucepan, combine vinegars, sugar, cumin, onion powder and garlic. Heat until sugar is dissolved. Remove from heat.

½ red bell pepper, diced

Steps:

Using a serrated knife cut kernels from cob and place in a large bowl. Cook edamame according to package directions. Drain and let cool. Add to corn. In a small bowl, whisk together mayonnaise, lime juice, honey, garlic, salt and pepper. Gradually whisk in oil. Pour dressing over corn/edamame. Toss to coat. Stir in red bell pepper, red onion, and basil.

For the salad:
1 cup quinoa, cooked
2 ears sweet corn
1 small red onion, finely diced
1 red bell pepper, cut in small dice
1/2 cup thinly sliced celery, from the tender inner stalks
4 or 5 radishes, sliced
1/2 cup fresh or thawed frozen edamame
2 ounces feta, cut in small dice (about 1/2 cup, optional)
1 jalapeño or serrano chile, minced
1/2 cup chopped cilantro
For the dressing:
2 tablespoons fresh lime juice
1 garlic clove (more to taste), finely minced or pureed
1/4 cup extra virgin olive oil
Salt to taste

Steps:

  • 1. Cut the corn kernels away from the cobs. Discard the cobs (or use for stock), and place the kernels in a steamer above 1 inch of boiling water. Cover and steam for four minutes. Remove from the heat, rinse with cold water and drain. 2. Soak the onion in cold water to cover for five minutes. Drain, rinse and drain on paper towels. 3. Combine all the salad ingredients in a large bowl. Whisk together the dressing ingredients and toss with the salad. Serve. Yield: Serves four to six. 2 c frozen corn, thawed
1 c shelled edamame
15 oz can garbanzo beans, drained and rinsed (or white beans)
1 roma tomato, seeded and chopped
1 clove garlic, grated
1 c sweet onion, chopped
1/4 c cilantro, chopped
1 lime, juice of
1/4 c vinaigrette dressing (italian, or greek dressing are ok)
salt and pepper, to taste

Steps:

  • 1. Mix together all ingredients, taste for salt and pepper.
  • 2. Chill for at least one hour before serving.

I have been trying to add more soy to my diet and came up with this recipe. It is a combination of several different recipes I found on the web. Cooking time includes resting time.

3 green onions, chopped
1 -2 tablespoon lemon juice (to taste) or 1 -2 tablespoon lime juice (to taste)
1/2 cup low-fat mayonnaise or 1/2 cup fat-free mayonnaise
1 ripe avocado, chopped
salt and pepper

Steps:

  • Mix all ingredients except avocado together.
  • Refrigerate salad for at least 2 hours to allow flavors to blend.
  • Salad can be made up to 2 days ahead of time, but I would not add tomatoes until closer to serving so the salad does not become too watery.
  • Add chopped avocado just prior to serving.
  • Garnish with additional cilantro and lime wedges.

2-3 ears corn
2 c edamame, cooked and cooled
3 roma tomatoes, seeded and diced (or use cherry tomatoes that have been halved if you prefer)
1 avocado
1-2 Tbsp fresh parsley, chopped (or cilantro if you prefer)
DRESSING
2 Tbsp lime juice
1 Tbsp canola or vegetable oil
1/2-1 tsp salt
1/8-1/4 tsp pepper
1 Tbsp sugar - more or less to your taste (or none at all)

Steps:

  • 1. Microwave corn, 2 ears at a time, for about 3 1/2 minutes. Remove husks and silk and cool. Cut kernels from the cob and place in a large bowl.
  • 2. Cook edamame according to package directions. Rinse with cold water until cool. Drain. Add to the corn.
  • 3. DRESSING: While corn and edamame are cooking, mix together lime juice, oil, salt, pepper and sugar (optional) in a jar with a tight fitting lid. Shake to mix and set aside.
  • 4. Add tomato, avocado and parsley to corn and edamame.
  • 5. Shake up dressing again and add to the salad. Gently mix. Serve immediately.
  • 6. NOTE: If you want to make this ahead of time, prep the corn, edamame, tomato and parsley. Make up the dressing, but do not add it to the salad. Just before serving, dice the avocado and add it and the dressing to the salad.

I had fresh edamame and corn from our local farmers' market. I found a recipe in a magazine that I simplified a bit. 2 ears of corn
1 lb edamame in the pod
1/2 c red pepper, chopped finely
1/2 c videlia onion, finely chopped
1/4 c cider vinegar
1 Tbsp olive oil
1 tsp stevia or equivalent
1/2 Tbsp dry mustard
1/2 tsp dried dill weed
1/4 tsp garlic infused salt (i use saltopia)
freshly ground black pepper, to taste
1 green onion, chopped

Steps:

  • 1. Boil corn, cool and cut off kernels. Or use 1 1/2 cups frozen corn.
  • 2. Boil edamame in highly salted water for 5 minutes. Drain, cool and remove beans from shell.
  • 3. Put cut corn, edamame, onion, red pepper, oil, vinegar and seasonings into bowl, mix together and chill for 1/2 hour or more. Adjust seasonings to taste.
  • 4. To serve, sprinkle with sliced green onion and either serve as is, or serve over a bed of lettuce greens.

12 oz. frozen shelled edamame (about 2 cups), thawed, cooked and cooled
2 ears fresh corn kernels, cooked and cut off ears (about 1/2 cup)
1 cup chopped fresh tomato
2 Tbsp. chopped fresh chives
1 clove garlic, minced
2 Tbsp. red wine vinegar
1 Tbsp. olive oil
3/4 tsp. sea salt
1/4 tsp. freshly ground pepper
1/4 cup chopped fresh basil leaves

Steps:

  • Combine edamame, corn, tomatoes, chives, garlic, vinegar, olive oil, salt and pepper in a large bowl, mixing well. Chill at least 30 minutes. Top with basil before serving. Toss gently.
