An easy Garlic Mayonnaise recipe. This recipe was created to accompany Mushroom-Ham Brochettes with Garlic Mayonnaise. Can be prepared in 45 minutes or less.

Number Of Ingredients 4

6 tablespoons mayonnaise
2 large garlic cloves, pressed
1 teaspoon fresh lemon juice
1 teaspoon plus 3 tablespoons extra-virgin olive oil

Steps:

  • Whisk mayonnaise, garlic, lemon juice and 1 teaspoon oil in small bowl to blend. Season with salt and pepper.
  • (Garlic mayonnaise can be made 6 hours ahead. Cover and chill.)

3 heads garlic (about 6 ounces total)
1 cup eating well's rich chicken broth

Steps:

  • Separate and peel the cloves of garlic from all three heads. Smash the peeled cloves to lightly crush.
  • Add smashed garlic to the stock in a medium saucepan. Cover and bring to a boil over medium heat. Reduce heat to low and simmer, covered for 25 minutes.
  • Transfer garlic and stock to a blender or food processor and process until smooth.
  • Store tightly covered. Keeps in the refrigerator for 2 days. Freezes for up to 6 months.

1 tablespoon lemon juice
½ teaspoon Dijon mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
¾ cup olive oil

Steps:

  • Combine egg, garlic, lemon juice, Dijon mustard, salt, and pepper in a bowl; whisk with a fork until well combined. Using a hand immersion blender, slowly add olive oil in a small stream and blend until creamy.

1/2 cup eating well's sweet garlic paste
1 cup olive oil
salt and pepper
lemon juice (optional)
Dijon mustard (optional)

Steps:

  • Place garlic puree in a blender. With the motor running, gradually drizzle in the oil in a very fine stream.
  • When the mixture is fully combined, add salt and pepper to taste.
  • Add lemon juice and/or Dijon mustard to taste, depending on what you plan to use the sauce for.
  • Keeps in the refrigerator for a week.
