ZUCCHINI NOODLES WITH SIMPLE BOLOGNESE SAUCE



Zucchini Noodles with Simple Bolognese Sauce image

Number Of Ingredients 17

6 medium zucchini, spiralized
1-2 Tbsp olive oil
1 clove garlic, minced
1 Tbsp olive oil
1 onion, chopped
1 stalk celery, chopped
3 cloves garlic, minced
1 lb. ground turkey or ground beef
1 (28 oz) can crushed tomatoes
1 (6 oz) can tomato paste
½ cup dry red wine
1 tsp. dried oregano
1 tsp. dried basil
½ tsp. salt
¼ tsp. black pepper
2 bay leaves
Fresh basil, chopped as garnish

Steps:

  • Spiralize your zucchini and set aside on paper towels so that any excess water is soaked up. Feel free to sprinkle with a little salt to help with this.
  • Drizzle olive oil in a large saucepan over medium-high heat and saute onion, celery and garlic until fragrant, about 3 minutes. Add ground turkey (or beef) and cook until crumbled and brown, draining excess liquid as necessary.
  • Add remaining ingredients and bring to a boil then reduce heat and simmer for about 30 minutes.
  • For the zoodles, drizzle olive oil in a large skillet over medium-high heat and saute garlic until fragrant. Add zucchini noodles and cook for about 1 to 2 minutes until tender. *If you didn't already add salt while the water was getting soaked up feel free to sprinkle a little on them now for flavor.
  • Top zucchini noodles with the bolognese sauce, serve and enjoy!

2 tablespoons olive oil
2 (14 ounce) packages pizza dough, from the refrigeration section of the grocery store
salt and pepper
2 cups ricotta cheese
8 garlic cloves, minced
4 cups mozzarella cheese
2 medium zucchini, ends trimmed and sliced 1/4 inch thick

Steps:

  • Preheat oven to 400 degrees.
  • Drizzle olive oil on one large or two small cookie sheets, then roll out the dough. Poke with fork and season with salt and pepper. Place in the oven for 5 or 6 minutes.
  • In a medium bowl, mix the ricotta with the garlic. Cover crust in mixture and top with mozarella cheese. Return to the oven for 12 to 13 minutes.
  • Heat a large skillet over medium heat. Heat the zucchini in the skillet on both sides until crisp tender. Scatter on top of pizza and cook an additional 2 to 3 minutes.
  • Serve large squares of the pizza hot from the oven.

Oh My gosh I can not over emphaize just how GOOD this dish really is!! I had noticed I had been loosing weight but did not put the 2 together. So when I get hooked on a dish thats all I will eat for a couple weeks lol. So I quit eating it for a couple days and up up up my #'s go. So back to my zucchini pasta I go. I do eat this dish at least once a day now just to maintain my weight now. My kids had no idea they were eating zucchini. And to be honest they said, Mom this taste just like a PIZZA but it's noodles.. This is the best dish I t have yet to come up with on my very own and I'm so proud of it...I.. I would suggest going to Bed Bath & Beyond and getting a TITAN Potatoe and Julienne tool it comes togeher in a set for about $10.00 it's the best investment you'll ever make for easy use in your kitchen. The best kitchen tools I've ever used in my life :) he Seafood Magic can be purchased at Winn Dixie.

1 teaspoon olive oil
4 zucchini
4 tomatoes
2 cups mozzarella cheese
2 teaspoons olive oil
3/4 tablespoon seafood magic seasoning
1 teaspoon basil
2 teaspoons garlic powder
1 teaspoon sea salt

Steps:

  • Preheat oven to 400.
  • Peel zucchini with veggie peeler(chopping both ends off) and then julienne it to where it resembles pasta.
  • Slice and dice tomatos & let the juices drain.
  • Place the olive oil in the bottom of a casserole dish & cover dish with non stick spray as well.
  • Place zucchini and tomatos in dish and add seasonings.
  • Toss until everything blend well.
  • Top off with mozzarella cheese.
  • Bake 30-35 minutes or until the top is golden , Yummy :D.
  • I enjoy topping my serving with MAKOTO Honey Ginger Dressing from Winn Dixie or simply dipping your pasta into this dressing is delish.
