CHEESY WILD RICE QUICHE
Canadian bacon, nutty wild rice, and creamy, cheesy eggs all baked up in a buttery, flakey pie crust!

Steps:
- Preheat oven to 425 degrees. Bake crust for 5 minutes. Remove from oven and set aside.
- Reduce oven to 325 degrees.
- In a small skillet, sauté Canadian bacon and onion in butter until the onion is soft. Spoon into your crust.
- Sprinkle the cheese and wild rice evenly over the onions and Canadian bacon.
- In a small bowl, whisk together the eggs, half and half, and salt. Pour over all the ingredients in the pie crust.
- Bake for 50 minutes. Let stand for 10 minutes before serving.

- 1. Beat one egg; stir in rice, half the cheese, and salt.Press firmly into an even layer on the bottom of a 9 inch pie pan.
- 2. Beat remaining eggs,stir in spinach,milk,salt, pepper,mushrooms and remaining cheese.
- 3. Spoon into pan.Bake at 375 for 30 minutes or until cooked through.

- 1. With mixer beat eggs, then add soup, cheese, rice, meat and minced onion. Add salt and pepper. Mix will with mixer. Pour into quiche dish or 9-10 in pie plate sprayed with PAM. Bake at 375' for 35-40 minutes or until a knife inserted in center comes out clean. Let stand a few minutes before serving. Can be prepared the night before and baked the next morning. TURKEY AND WILD RICE QUICHE
With lots of left-over turkey and wild rice on hand, I looked for a recipe that would use both. This was adapted from several recipes but lightened up a bit.

- 1. Preheat the oven to 425 degrees.
- 2. If using fresh spinach, quickly saute in hot pan until wilted.
- 3. Sauté onion in butter. Combine with wild rice, turkey, parsley, spinach, salt, pepper and cheese. Add eggs and evaporated milk. Mix well.
- 4. Pour the filling into the prepared pie crust. Bake for 10 minutes.
- 5. Reduce heat to 325 degrees and continue baking for 30 minutes, until knife inserted near the center comes out clean. Cover with foil if it's browning too much on top. Let stand 15 minutes before slicing. Serve with a dollop of sour cream, if desired.

- Fry Canadian Bacon and onion until onion is cooked through.
- Spread mixture evenly in pie shell.

- Preheat the oven to 375 degrees F. If your frozen spinach is not already thawed, thaw it in the microwave per the directions. Place the spinach in a colander and squeeze out as much liquid as possible. Set aside.
- Blind Bake the Crust (If your crust comes pre-formed in a disposable pan). Place the pie dish on a baking sheet and bake for 3 minutes. Remove it from the oven, prick it all over with the tines of a fork, then return to the oven and bake until light golden, about 10 minutes more. Reduce the oven temperature to 350 degrees F. See notes if you use a pie dough sheet or make your own dough.**
- Prepare the Filling: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, nutmeg, and Tabasco.
- Squeeze and blot more water out of the spinach (you want it as dry as possible), then scatter it evenly over the bottom of the blind-baked crust. Sprinkle the ham, cheese, and onion over the top of the spinach.
- Carefully pour the egg mixture over the top.
- Bake the Quiche: Bake the quiche on the baking sheet, until a knife inserted 1 inch from the edge of the crust comes out clean and the center is set, about 40 to 50 minutes. If at any point the crust begins to brown more than you would like, protect it with foil or a pie crust shield. Let the baked quiche rest for 5 to 10 minutes, then slice and serve.

- Saute onion, peppers and mushrooms in small amount of olive oil so that the mushrooms release moisture and vegetables are tender crisp. In large bowl whisk eggs, add milk, soup and whisk together, stir in cheese, rice, bacon and vegetable mixture. Pour into quiche pan sprayed with Pam. Cover with foil and refrigerate overnight. Take out and let come to room temperature or so and then remove foil bake at 375 degrees for 45 minutes or until center is done.
