2 cups all-purpose flour
1 ½ cups white chocolate chips
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
1 cup milk
⅓ cup vegetable oil
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tray with paper liners.
  • Mix flour, white chocolate chips, sugar, baking powder, and salt together in a large bowl.
  • Mix milk, oil, egg, and vanilla extract together in a medium-sized bowl. Add to flour mixture and mix well.
  • Fill 2/3 of each prepared muffin cup with batter.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes.
  • Remove from the oven and let cool for 2 minutes. Serve warm.

½ cup white sugar
⅓ cup cocoa powder
1 cup milk
¼ cup butter, melted
2 eggs
1 ½ cups white chocolate chips

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
¾ cup milk
⅓ cup vegetable oil
1 egg
¾ cup mini semi-sweet chocolate chips
3 tablespoons white sugar
2 tablespoons brown sugar

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
  • Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

2 1/2 cups all-purpose flour
1 cup brown sugar, packed
1/3 cup baking cocoa
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
1 1/3 cups buttermilk
1/3 cup butter, melted
1 1/2 teaspoons vanilla extract
1 1/2 cups vanilla or 1 1/2 cups white chocolate chips

Steps:

  • In a large bowl, combine the flour, brown sugar, cocoa, baking soda and salt. In another bowl, combine the eggs, buttermilk, butter and vanilla. Stir into dry ingredients just until moistened. Fold in vanilla chips.
  • Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 14-18 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Yield: 1-1/2 dozen.
