3 tablespoons margarine
2 tablespoons of finely chopped onions
2 minced garlic cloves
3 tablespoons flour
2 tablespoons soy sauce
1 cup water
salt and pepper

Steps:

  • Put margarine in a pot and saute the onions and garlic over med-high heat.
  • Reduce heat back to medium after onions and garlic have become golden brown.
  • Make a roux by gradually adding the flour, while continuously stirring to avoid lumps.
  • Still stirring, add soy sauce and water to the mixture.
  • Add salt and pepper to taste.
  • Once the gravy has reached desired thickness, turn off the stove and you are done!

5 tablespoons butter (can sub Earth Balance [see Vegan Option])
1/2 cup finely diced yellow onion
1/4 cup all-purpose flour
2 cups low-sodium vegetable broth
1 tablespoon Tamari or soy sauce (optional)
Salt and fresh ground black pepper to taste

Steps:

  • In a medium saucepan over low heat, melt the butter.
  • Add the onion and a pinch of salt. Sweat the onions, stirring occasionally, until tender, 8-10 minutes. If they start to turn brown, turn down the heat - you're looking for translucent and tender, not golden.
  • Increase heat to medium. Stir in the flour and cook, stirring frequently, for three minutes.
  • Gradually stir in the vegetable broth and continue stirring, over medium heat, until thickened to a gravy consistency, about 3 - 4 minutes.
  • Stir in Tamari or soy sauce if using. Add salt and pepper to taste and serve.

This is quick and easy using refrigerated biscuit dough and storebought vegetarian sausage! Adapted from Cooking Light magazine.

1 (16 ounce) can reduced fat refrigerated biscuit dough (8 biscuits)
1 tablespoon vegetable oil
0.5 (14 ounce) package meatless sausage (Lightlife Gimme Lean is good)
1/4 cup all-purpose flour
3 cups low-fat milk (rice milk works well)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Prepare the biscuits according to package directions.
  • Heat the oil in a large nonstick skillet over medium high heat. Add the sausage; cook 3 minutes or until browned, stirring to crumble.
  • Remove from heat, cool slightly. Crumble the sausage into 1/2" pieces, and return to the skillet.
  • Lightly spoon flour into a dry measuring cup, level with a knife. Mix the flour and milk, stirring with a whisk until smooth. Add the milk mixture, salt and black pepper to pan; bring to a boil over medium high heat.
  • Cover, reduce heat and simmer for 3 minutes or until thick.
  • Split biscuits in half. Place 2 biscuit halves on each of 8 plates, top each serving with about 1/3 cup gravy.
  • Serve immediately and enjoy!

I made this up after forgetting to buy a pre-made gravy on Christmas. I'm glad I did! It's the best vegetarian gravy I've ever tried!

¾ (14 ounce) can vegetable broth
1 0.42 oz packet concentrated vegetable base (such as Swanson® Vegetable Flavor Boost®)
1 tablespoon finely chopped onion
1 teaspoon garlic salt
1 teaspoon ground black pepper
3 tablespoons all-purpose flour

Steps:

  • Combine broth, vegetable base, onion, garlic salt, and pepper in a medium pot. Cook over medium heat while stirring occasionally until it comes to a full boil.
  • Slowly stir in flour and whisk constantly until sauce is thick, 5 to 10 minutes.

1 (1 ounce) envelope Lipton Onion Soup Mix
1 (10 3/4 ounce) can 98% fat-free cream of mushroom soup
1 (12 ounce) can fat-free evaporated milk
1/2 cup wine (I use what ever is open)
1 bay leaf

Steps:

  • In saucepan whisk ingredients together and simmer low about 5 minutes.
  • Makes about 3 1/2 cups.
