This chili is SO easy to make. You can pretty much throw whatever you have into the pot and it'll be great. (I added some leftover salsa once.) It's very colorful, not to mention delicious.

1 tablespoon vegetable oil
1 cup chopped onions
¾ cup chopped carrots
3 cloves garlic, minced
1 cup chopped green bell pepper
1 cup chopped red bell pepper
¾ cup chopped celery
1 tablespoon chili powder
1 ½ cups chopped fresh mushrooms
1 (28 ounce) can whole peeled tomatoes with liquid, chopped
1 (19 ounce) can kidney beans with liquid
1 (11 ounce) can whole kernel corn, undrained
1 tablespoon ground cumin
1 ½ teaspoons dried oregano
1 ½ teaspoons dried basil

Steps:

  • Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
  • Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.

This is a fast recipe to put together that uses ingredients that most of us keep on hand. It's a very forgiving recipe in that you can easily add or change ingredients and it will still be a very healthy and flavorful dish! I have used the leftovers in tacos or as a topping for tamales.

1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup corn (optional)
1 (15 ounce) can black beans, rinse & drain
1 (15 ounce) can ranch style beans, undrained
1 (15 ounce) can tomato sauce
1 (1 ounce) package chili seasoning mix (mild or hot)
1/2 cup water (or more)
sour cream (optional)
grated cheese (optional)

Steps:

  • Heat olive oil in a pot and cook onion and bell pepper until soft.
  • Add all other ingredients except those for topping.
  • Mix well.
  • Simmer for 15 minutes to an hour to blend flavors, adding water if necessary.
  • This may also be cooked in a crockpot.

1 medium green pepper, chopped
1 medium onion, chopped
2 garlic cloves, minced or crushed
1 (15 1/2 ounce) can kidney beans, rinsed and drained
1 (15 1/2 ounce) can great northern beans, rinsed and drained
1 (15 1/2 ounce) can chickpeas, rinsed and drained (garbanzo beans)
1 (14 1/2 ounce) can Mexican-style stewed tomatoes
2 (8 ounce) cans tomato sauce
1 tablespoon chili powder
1 teaspoon sugar
1 teaspoon dried basil
1 cup water
1 -2 tablespoon cider vinegar (optional)

Steps:

  • Spray a large nonstick pot with cooking spray.
  • (Or use oil for sauteing.) Add green pepper, onion and garlic.
  • Saute over medium-high heat for about 5 minutes, or until soft but not brown.
  • Add remaining ingredients.
  • Cover and simmer 15 minutes, stirring occasionally.
  • Serve hot in soup bowls.

2 cups red kidney beans, cooked (a 540ml can, drained)
2 cups chickpeas, cooked (a 540ml can, drained)
1/2 cup bulgur or 1/2 cup couscous, rinsed
796 ml diced tomatoes, canned
1 cup salsa, medium
1/2 cup water
1 tablespoon chili powder
1 teaspoon dried basil
1/2 teaspoon ground pepper
1/2 teaspoon oregano
1/2 teaspoon cumin
1/4 teaspoon cayenne
1 tablespoon unsweetened cocoa powder
1 teaspoon sugar
1 cup canned corn niblet (frozen works well)

Steps:

  • Heat oil in a large pot, saute onions, peppers and garilc for 5 minutes on medium heat.
  • Add mushrooms, saute 4-5 minutes.
  • Add remaining ingredients except corn.
  • Increase heat to high to bring to a boil.
  • Decrease heat to medium and simmer, covered, for 25 minutes, stirring occasionally.
  • Stir in corn, simmer until heated through.
  • Makes about 10 cups or 6-7 servings of 1 1/2 cups.

I went through a veg phase, and this was a staple. I'm back to being an omnivore, but I still make this once a week or so. It's great topped with a little cheese (regular or soy) and a chunk of cornbread. If you're a Weight Watcher, this is 3 points for a 2 cup serving. If you're a die-hard carnivore, you can add ground meat, but I think it's much fresher and tastier without.

1 large onion, diced
2 -3 garlic cloves, minced
1 -2 green bell pepper, diced

1 (14 ounce) can whole kernel corn

Steps:

  • Drain and rinse beans and corn.
  • Heat oil in a large soup pot.
  • Add onions, garlic and bell pepper, and cook just until onions are translucent and bell peppers are bright green.
  • Add tomatoes, vegetable juice, beans, corn, chili powder and cumin. (I use a LOT of chili powder and cumin).
  • Bring to a boil, reduce heat, and simmer for about 30 minutes.
  • More vegetable juice can be added if chili gets too thick.

1 teaspoon oregano

Steps:

  • In large saucepan, heat oil over medium heat. Add onion, carrots, and jalapeno pepper, cook, stirring often, for 6 minutes. Stir in tomatoes, garlic, green peppers, parsley, chili powder, cumin, oregano and salt. Bring to a simmer. Cook, covered for 20 minutes, stirring often.

2 cups vegetable broth or 2 cups beef broth
1 (16 ounce) can crushed tomatoes

1/2 teaspoon cumin
1/4 teaspoon allspice
1 (16 ounce) can tomato sauce
2 cups whole kernel corn

Steps:

  • Combine everything (except tomato sauce and corn) in 2 1/2 quart pot and boil over high heat.
  • Reduce to low, cover, and simmer for 25- 30 minutes.
  • Stir in tomato sauce and corn.

  • Great garnished with lowfat sour cream.

You're not going to believe how awesome this chili tastes and how easy it is to make. I make batches and take it to work for lunch for the week. It's really filling and very healthy. You can substitute the chili beans with kidney beans if you wish, but be sure to drain them if you do. It's even better the next day, and if you omit the optional cheese, it's vegan-friendly!

  • Add remaining ingredients, mixing well. Bring to a boil, stirring occasionally. Cover, reduce heat to medium-low, simmer 20 minutes.
  • Quick tip: Keep frozen, chopped onion in your freezer! Makes meal prep so much easier/faster!
