Easy Seven Layer Vegetable Salad image

This cold veggie salad is terrific for holiday dinners or family gatherings! It has been in my family for several years now and is always requested at family reunions and barbeques.

1 head lettuce, torn into small pieces
1 (10 ounce) package frozen green peas, thawed
½ cup chopped green bell pepper
12 slices bacon
1 ½ cups small cauliflower florets
½ cup chopped celery
2 cups mayonnaise
3 tablespoons white sugar
4 ounces shredded Cheddar cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside. In a 9x13 inch pan layer the lettuce followed by the peas, green pepper, bacon, cauliflower and celery.
  • In a small bowl combine the mayonnaise and the sugar. Spread mixture over salad. Sprinkle cheese over top. Cover and chill for at least 8 to 12 hours before serving.

A quick and easy pasta salad, made with mixed vegetables.

1 package (9 oz) refrigerated cheese-filled tortellini
1 package (9 oz) refrigerated spinach-filled tortellini
1 bag (24 oz) Value Size frozen broccoli, carrots, cauliflower & cheese sauce
1/4 cup chopped red onion
1/4 cup chopped fresh parsley
1 medium red bell pepper, chopped
1 serrano chile, seeded, chopped
1 jar (12 oz) marinated artichoke hearts, drained, chopped, 1/4 cup marinade reserved
1 tablespoon lemon juice

Steps:

  • In 4-quart saucepan, cook tortellini as directed on packages; drain. Rinse with cold water to cool.
  • Cook frozen vegetables as directed on bag; cool.
  • In large bowl, mix onion, parsley, bell pepper, chile and artichokes. Add tortellini and vegetables; stir until well blended. Add lemon juice and reserved 1/4 cup artichoke marinade; toss to mix. Serve immediately, or cover and refrigerate until serving time.

1 head broccoli, torn and cut into bite size pieces
1 head cauliflower, torn and cut into bite size pieces
1 jar green olives, drained and sliced
1 bunch green onion, cut into bite size pieces
2 large tomatoes, cut into bite size pieces
1 cup of shredded cheddar cheese
1 bottle ranch dressing

Steps:

  • Cut all vegetables into bite size pieces.
  • Add all ingredient's into a large bowl, except the dressing.
  • Pour the dressing over all of the contents, and mix well.
  • Chill for about 2 hours.
