This recipe is soooo good! It's a great way to combine a mixture of veggies even my 2 little picky eaters will eat! This recipe doubles easily. Sometimes I throw in another half bag of the veggies. Always a favorite at my family functions!

1 (16 ounce) bag frozen broccoli carrots cauliflower mix (thawed & drained)
1 (10 1/2 ounce) can cream of mushroom soup
1 cup shredded swiss cheese
1/3 cup sour cream
1/4 teaspoon black pepper
1 (6 ounce) can French-fried onions

Steps:

  • Combine vegetables, soup, 1/2 cup swiss cheese, sour cream, pepper & 1/2 can of french fried onions into 1 quart casserole.
  • Bake covered at 350 for 30 minutes.
  • Top with remaining cheese and onions.
  • Bake uncovered 5 minutes longer.
  • YUM!

8 ounces frozen small onions, thawed and drained
1 package (10 ounces) frozen mixed vegetables, thawed and drained
1 can (4 ounces) mushroom stems and pieces, drained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 teaspoon dried thyme
1 cup crushed potato chips

Steps:

  • In a bowl, combine chicken, onions, mixed vegetables, mushrooms, soup and thyme. Pour into a greased 8-in. square baking dish. Sprinkle with chips. Bake, uncovered, at 350° for 50-55 minutes or until bubbly.

2 cups white rice
2 cups chicken broth
2 cups hot water
12 -16 ounces cauliflower or 12 -16 ounces carrots (or other vegetable)
2 lbs boneless skinless chicken breasts, uncooked and diced
onion powder
garlic powder
salt
pepper

Steps:

  • In a large pot with a lid, pour in liquid, add the rice, and give it a little stir.
  • Layer the frozen vegetables on top of the rice, and the raw chicken pieces on top of the vegetables.
  • Sprinkle the chicken with onion powder, garlic powder, salt and pepper.
  • Cover, and bring to a boil Let boil for 3-5 minutes.
  • Stir, then reduce to med-high heat, and cook for 10-15 minutes, or until rice is tender.

2 large eggs
1 cup 2% milk
2/3 cup crushed saltine cracker crumbs ((or butter crackers))
2 cans whole kernel corn, drained ((14.5 ounces each))
3 tablespoons butter ((melted))
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon sugar
1 tablespoon minced onion ((freshly grated))

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Spray an 8x8 baking pan with cooking spray.
  • In a large bowl, whisk the eggs until they are broken up.
  • Add the milk and crushed crackers. Mix well.

  • Preheat oven to 350 (176 C) degrees Fahrenheit Wash and prep vegetables and then steam for 10 minutes Cook macaroni according to package directions and rinse cooked macaroni in a colander when done under cold running water Layer cooked macaroni in the bottom of casserole dish Combine flour and butter in a medium saucepan and cook over medium heat combining flour and butter to make a roux then add milk and grated cheese cooking to desired thickness for sauce and set aside Add vegetables and salmon to macaroni and stir sauce in the mixture coating all the ingredients well Sprinkle topping over veggies and salmon then bake for 10 to 15 minutes or until lightly browned on top.

This is my own version of vegetable casserole. I had some can food items in my pantry and I thought why not try to make a vegetable casserole with using all foods that I had on hand in pantry and refrigerator. You may use most any canned vegetable in this recipe and season to your desire.

2 baking potatoes, sliced, cubed and cooked
2 cups water
1 chicken bouillon cube
1 (15 ounce) can Veg-All, vegetables. drained
1 (15 ounce) can sliced carrots, drained
1 (10 ounce) can cream of mushroom soup
3 tablespoons mayonnaise
2 tablespoons sour cream
1/4 cup milk
1 teaspoon hidden valley ranch dressing mix (from packet)
1 cup shredded sharp cheddar cheese
1/4 teaspoon seasoning salt (I use Johnny's)
1/4 teaspoon coarse black pepper
keebler Club crackers, crushed (1/2 of 1 sleeve)
1/2 cup shredded mozzarella cheese
1/2 cup shredded sharp cheddar cheese
2 tablespoons butter, melted

Steps:

  • Preheat oven 350'. Spray a large baking dish with cooking spray.
  • Peel potatoes,slice and cube them and place in a pot add 2 c water and chicken bouillon and bring to a boil.
  • Boil 5 to 7 minutes. Drain potatoes. Place potatoes in ice water to get a quick chill. Drain potatoes again.
  • In a large bowl add carrots, veg-all, and potatoes. Set aside.
  • In another large bowl combine mushroom soup, mayonnaise, sour cream and milk. Stir to combine.
  • Add cheddar cheese, ranch dressing mix, seasoning salt and black pepper to soup mixture. Stir to combine mixture well.
  • Stir soup mixture in with the vegetables. Stir to combine well.
  • Place vegetable mixture in baking dish.
  • Sprinkle mozzeralla and sharp cheddar cheese over top.
  • Sprinkle club crackers crumbs over top of cheeses.
  • Pour melted butter over top.
  • Place in oven and bake 30 to 35 minutes or until bubbly.

I got this recipe from my sister, Jeannine. It's sooooo good, even the kids will eat it! You can make it with less fat by using light sour cream and margarine instead of butter.

1 can white shoepeg corn
1 can water chestnut
8 ounces sour cream
1 (8 ounce) can cream of celery soup
1 cup cheddar cheese, shredded
1 package crushed Ritz cracker
1/4 lb butter

  • Layer the green beans, corn, and water chestnuts in a 9 x 13 pan in the order given.
  • Mix the sour cream and cream of celery soup.
