1 lb Italian cut green beans
1 tablespoon olive oil
salt and pepper
2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon

Steps:

  • Trim ends from the green beans and cut in 1 1/2 inch lengths.
  • Steam or cook the beans in a saucepan of boiling salted water for 5 minutes or until al dente, drain.
  • Toss with oil, salt and pepper, and tarragon.

1/4 cup salt, plus
1/4 teaspoon salt
1 medium shallot, peeled and thinly sliced
2 tablespoons tarragon vinegar
1 tablespoon Dijon mustard
1 tablespoon roughly chopped fresh tarragon
1/4 teaspoon extra virgin olive oil
1 1/4 lbs fresh green beans, trimmed

Steps:

  • Add beans to boiling water, cook till desired doneness.
  • Drain beans in colander.
  • While beans cook, whisk togehter the shallot, vinegar, mustard, tarragon, 1/4 tsp salt and black pepper.
  • slowly whisk in olive oil.
  • Put beans in a serving bowl and toss with the vinaigrette.
  • serve immediately.

1 tablespoon lime juice
1 tablespoon sherry wine vinegar
1 pinch cayenne pepper
1/4 teaspoon salt
1 teaspoon finely chopped fresh tarragon
3 tablespoons extra virgin olive oil

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans and cook until just tender, 3 to 5 minutes.
  • Meanwhile, in a bowl, combine the lime juice, vinegar, cayenne pepper, salt, and tarragon.
  • Whisking constantly, slowly add the oil in a thin, steady stream until emulsified.
  • Drizzle the vinaigrette over the beans before serving. Serve warm or at room temperature.

3/4 pound yellow wax beans, trimmed
1/4 cup (1/2 stick) unsalted butter, melted
1 tablespoon chopped fresh tarragon
Freshly ground pepper

Steps:

  • Bring a large saucepan of water to a boil. Add a large pinch of salt along with the beans. Cook until tender but firm, about 5 minutes. Drain. Combine the melted butter and tarragon and pour over the beans, tossing gently to mix. Season with salt and pepper.

3 tablespoons unsalted butter
1 large shallot, finely chopped (1/2 cup)
2 pounds green beans, trimmed
1/2 cup dry white wine
2 tablespoons coarsely chopped fresh tarragon, plus sprigs for garnish

Steps:

  • Melt the butter in a large, high-sided skillet over medium heat. Add the shallot; cook, stirring constantly, until soft and translucent, 2 to 3 minutes. Add the beans, and gently toss to coat with the shallot mixture. Cook, stirring occasionally, 2 minutes.

This is an easy and delicious salad for summertime. Especially when the green beans are in their peak season. This recipe can be made using my Herbal Tarragon Vinegar #2882.

3 lbs green beans
1/2 cup low-fat mayonnaise
1/3 cup herbal tarragon vinegar (Herbal Vinegar with Tarragon)
1/4 teaspoon salt
1 teaspoon prepared mustard
1/2 teaspoon pepper
1 red onion, thinly sliced
freshly chopped tarragon, for garnish (optional)

Steps:

  • In a saucepan over high heat in 1 inch of water, heat green beans to boiling.
  • Reduce heat to low, cover and simmer 5-10 minutes or until green beans are tender crisp; drain.
  • In a bowl combine the mayonnaise, tarragon vinegar, salt, mustard and pepper; mix well.
  • I like to put the green beans and sliced onions in a large zip-lock bag (less clean up) along with the tarragon dressing mixture, fumbling for dressing to coat green beans.
  • If you don't have a large zip-lock bag you can place the green beans and sliced onions in a large dish and toss to coat with the tarragon dressing.
  • Cover and refrigerate 2 to 3 hours hours for flavors to blend before serving.
  • Garnish with freshly topped tarragon.
  • Serve and Enjoy!

2 pounds green beans, trimmed
2 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice, or to taste
2 tablespoons finely chopped fresh tarragon leaves, or to taste
Garnish: tarragon sprigs

Steps:

  • In a large kettle of boiling salted water blanch beans in 2 batches 2 to 3 minutes, or until just tender. With a slotted spoon transfer beans as blanched to a large bowl filled with ice and cold water. Drain beans well and pat dry, Beans may be prepared up to this point 1 day ahead and chilled covered.
  • Just before serving, in a large bowl toss together beans, oil, lemon juice, tarragon, and salt and pepper to taste. Serve beans garnished with tarragon sprigs.
