1 cup salsa
½ cup chopped onion
½ cup mayonnaise
2 tablespoons chili powder
1 teaspoon ground cumin
2 cups crushed tortilla chips, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
  • Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. Layer about half of each of the Cheddar and Monterey Jack cheeses over the tortilla chip layer. Repeat layers with remaining ingredients, ending with Monterey Jack cheese. Cover dish with aluminum foil.
  • Bake in preheated oven until the cheese is melted in the middle, about 30 minutes.

1 cup chopped onion
olive oil, for browning meat
2 lbs ground beef
1 (1 ounce) package taco seasoning
3 eggs
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon flour
1 cup shredded cheddar cheese (more if desired)

Steps:

  • Heat olive oil in medium skillet.
  • Saute onion in olive oil until soft.
  • Brown ground meat with onion.
  • When meat is almost cooked through, add taco seasoning.
  • When meat is cooked completely, drain off grease and set aside to cool.
  • In a large casserole dish, beat eggs.
  • Open diced tomatoes and drain the juice off into a small mixing bowl.
  • Add the flour to the juice of the tomatoes and mix well until the lumps are gone.
  • Add flour/juice mixture to eggs and stir well.
  • Add shredded cheese to egg mixture.
  • Add ground beef and tomatoes to egg mixture and stir well.
  • Bake in a preheated 350-degree oven for 1 hour, or until set and cooked all the way through.
  • You can top with a layer of shredded cheese halfway through cooking time if desired.
  • Serve topped with salsa and sour cream, if desired.

I love mexican food, and this is a fast dish that I found on the back of a box of taco shells. It can be used as a dip at party's as well. My grandkids really loved this one it's a keper.

1 lb ground beef
1 medim onion chopped
1 jar(s) ( 16 oz ) picante sauce medium spice
3/4 c water
1 can(s) ( 4 oz ) green chilies
1 pkg taco seasoning mix
12-18 hard taco shells broken up
2 c ( 8 oz ) mexican cheese blend cheese or shredded cheddar cheese
2 tomates chopped
4 green onions chopped
1 ( 8 oz ) sour cream

Steps:

  • 1. Preheat the oven to 375 degreese,
  • 2. Cook the beef and onions until beef is no longer pink, drain off the fat. Srir in picante sauce and water, green chilis and seasoning mix cook over low heat for 5 minutes.
  • 3. In a 13' by 9' baking dish layer half of the broken taco shells on the bottom of the dish, Cover with half of the of the meat mixture , sprinkle with one cup of cheese. Repeat with the remaining meat mixture and taco shells and cheese.
  • 4. Bake for 25 minutes or until hot and bubbley.
  • 5. Let stand 5 minutes then top with green onions, chopped tomatoes and sour cream ,add more broken taco shells on top and serve.

This is what I would serve at a typical supper here at my house when I am pressed for time and need something fast and filling. I have used ground turkey or ground chicken with great results but there is no reason that you could not use plain old ground beef. Hope you like it!

1 lb ground chicken or 1 lb ground beef
1 small onion, minced
2 garlic cloves, minced
1 tablespoon chili powder
1 tablespoon cumin, ground
1 teaspoon oregano
10 ounces tomatoes and green chilies, undrained (Rotel)
14 ounces pinto beans, drained
1 cup corn kernel
10 ounces tortilla chips
2 cups monterey jack cheese, shredded

Steps:

  • Brown meat, onion and garlic in large skillet until no pink remains and onion is clear. Drain grease.
  • Add spices, tomatoes, beans and corn and mix well.
  • Continue to cook over medium heat until some of the liquid has evaporated. You want a little liquid but not alot- like a sloppy joe mixture.
  • In an 8x8 greased pan crush a handful of chips and place on the bottom of the pan, adding more chips until you have a good layer. **** I like to get it as dry as possible here so that it holds together like a lasagna. PLEASE use your taste and judgment here and make it as dry or as liquid as you like. :)
  • Layer meat mixture on top of chips.
  • Crush some more chips and place on top of meat. Press down on chip layer to draw some moisture into the top layer of chips.
  • Top with cheese.
  • Bake at 350F for about 20 minutes or until cheese is thoroughly melted.

QUICK & EASY TACO BURGER CASSEROLE

I came up with this recipe when I was trying to get my husband to eat more family-style casserole dishes (he's not a fan of casseroles). I served it right out of the oven, bubbling hot, with a slice of crusty french bread and a small dinner salad. He ate three helpings and told me that I should definitely put "that one" in my recipe box.

1 lb ground beef
1 medium onion, chopped
1 (1 1/4 ounce) package taco seasoning
3/4 cup water
1 (14 1/2 ounce) can sweet corn
2 (10 1/2 ounce) cans condensed tomato soup
1 cup cheddar cheese (grated)
4 cups macaroni noodles (cooked al dente)
1/4 cup green pepper (chopped)
1/4 cup black olives (chopped or sliced)

Steps:

  • Cook macaroni noodles according to package directions for al dente, drain and rinse with cold water. Set aside. In a large skillet, brown ground beef with onion, drain. Return meat mixture to skillet, stir dry taco seasoning mix into meat mixture along with water. Cook over medium heat, stirring occassionally, for 10 minutes. Add the corn, tomato soup, cheddar cheese and cooked macaroni noodles to the meat mixture and stir until well blended. Turn mixture into a greased, large oblong casserole dish. Cover, and bake at 350 degrees for 45 minutes. Remove cover and bake an additional 15 minutes or until bubbly. You may add extra grated cheese to top the casserole, if you wish, during the last 15 minutes of baking time.

1 can(s) seasoned diced tomatoes
1 can(s) whole kernel corn drained and rinsed
2 pkg taco seasoning mix
1 can(s) tomatoe soup/tomatoe sauce
2 c grated cheeder cheese
1/3 pkg totilla chips (this is a good time to use up the not so fresh ones, bottom of the bag)
2 lb browned ground beef
1/2 c onions chopped (optional )
1/3 c peppers sweet or hot (optional)

Steps:

  • 1. Brown your meat, and then add onions and peppers, taco seasoning, and required amount of water. Usually a cup per package of seasoning, and 1 package to a lb of beef.
  • 2. Let this simmer for about 10 mins to reduce and let the meat soak up flavor.
  • 3. Add your diced tomatoes, tomato soup/sauce, corn, and tortilla chips. Let this heat through.
  • 4. Dump into a sprayed oil casserole dish, and top with cheese. Bake for about 20 min. on 350, or until cheese is melted, and slightly browned.
  • 5. This can be served on top of fresh tortilla chips, with lettuce as a taco salad, or as is with maybe some chips on the side. Olives and sour creme really add to this dish as well. Mix up the toppings to make your own custom version of taco casserole. Enjoy!

1 teaspoon kosher salt
vegetable oil cooking spray
2 large eggs
1/2 cup milk
2 tablespoons all-purpose flour
1 (7 ounce) can diced mild green chilies
1 cup shredded Mexican blend cheese
1/2 teaspoon kosher salt

Steps:

  • 1. For the ground beef: In a large bowl, combine the beef, taco seasoning, and salt. Mix well.
  • 2. Grease an 7-inch round baking pan (see Note) with vegetable oil spray. Place the seasoned ground beef in the pan.
  • 3. For the topping: In a large bowl, whisk together the eggs, milk, and flour until no lumps remain. Fold in the chiles and cheese until well combined. Pour the topping over the ground beef mixture.
  • 4. Place the pan in the air-fryer basket. Set the air fryer to 350°F for 15 minutes. Use a meat thermometer to ensure the meat has reached an internal temperature of 160°F.
  • 5. Drain the fat and liquid from the pan. Let stand for 5 minutes before slicing.
  • NOTE: This recipe was written to be made in an air fryer with a capacity of 5.3 quarts or more. If your fryer is smaller than that, cut the ingredient quantities in half and cook the casserole in a 6-inch round cake pan with 4-inch sides. I have subbed lean ground turkey in the past and it is a bit more bland than the beef, so if you take that route, make sure you brown with the turkey with a clove of garlic and a couple tbsp diced onion.

0.5 (10 ounce) can enchilada sauce, mild
1 (4 1/2 ounce) can green chilies, chopped
1 (10 1/2 ounce) can fat-free cream of mushroom soup
2 cups sharp cheddar cheese
0.75 (13 ounce) bag Doritos (or any other taco flavored chip, you won't use the entire bag)
salt & pepper

Steps:

  • Brown hamburger, drain off fat and then mix with enchilada sauce, green chilis and soup.
  • Add salt/pepper to taste (I usually only add pepper).
  • Crunch up the Doritos; I usually only crunch up half of the bag to see if that's enough.
  • Layer chips, then hamburger mixture, then cheese and repeat. Make sure to put a few extra chips on the top because they get crisp and yummy.
  • Cook on 350 degrees for about 25 minutes.

1 (10 1/2 ounce) can mushroom soup

Steps:

  • Brown ground beef.
  • Add taco seasoning, mushroom soup, beef broth, and Rotel tomatoes.
