4 beef cube steaks (4 ounces each)
1 tablespoon canola oil
1 medium onion, chopped
1 celery rib with leaves, chopped
1 garlic clove, minced
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 can (8 ounces) tomato sauce
1 teaspoon beef bouillon granules
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a large nonstick skillet, brown cube steaks on both sides in oil over medium-high heat; remove and set aside. In the same skillet, saute the onion, celery and garlic for 3-4 minutes or until tender. Add the tomatoes, tomato sauce and bouillon. Return steaks to the pan. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 to 1-3/4 hours or until meat is tender. , Combine cornstarch and water until smooth; stir into tomato mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.

This was my favorite growing up. I was amazed when I was older and asked my mom for the recipe how EASY it is! A small amount of prep. time, a day in the slow cooker, and you'll be amazed! It sounds too simple to be good... TRUST me! This gets RAVE reviews when we make it! The amount of vegetables is only an estimate. Use as many or as few as you choose. When it's done, you will have a yummy gravy, and will have to carefully dig for the steak pieces.

paprika to taste
2 pounds beef cube steaks
3 green bell pepper, sliced into rings

Steps:

  • Heat the oil in a skillet over medium heat. In a bowl, mix the flour, salt and pepper, and paprika. Dredge the steaks in the flour mixture, and place in the skillet. Brown steaks on both sides, and remove from heat.
  • In a slow cooker, alternate layers of steak, green bell pepper, red bell pepper, onion, and tomatoes.

My mother has been making this Swiss steak for years. It is wonderful, and can be made either on the stove top or -- when you don't have a lot of time but want a hearty meal ready when you come home -- in the crock pot. Serve over a bed of egg noodles or rice with a hunk of thick crusty bread.

1 tablespoon vegetable oil
2 pounds cube steaks, pounded thin and cut into bite-sized pieces
1 ½ tablespoons all-purpose flour
1 medium onion, chopped
1 pound mushrooms, sliced
salt and pepper to taste
1 (1.2 ounce) package brown gravy mix
2 (14.5 ounce) cans stewed tomatoes
1 (12 ounce) package egg noodles

Steps:

  • Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.
  • About 20 minutes before steak is finished, fill a large pot with water and bring to a boil. Add pasta, and cook until al dente, about 8 to 10 minutes; drain.
  • Serve Swiss steak over noodles.

1 lb boneless round steak, pounded or 1 lb boneless round steak, swissed by machine
1 cup carrot, sliced
1 large onion, halved and thinly sliced
1 (12 ounce) jar home-style beef gravy
1 (14 1/2 ounce) can diced tomatoes
1/4 teaspoon thyme
1/2 teaspoon pepper
garlic instant mashed potatoes, 1 box prepared as instructed on the box
1/4 teaspoon thyme
1 teaspoon dried parsley

Steps:

  • Heat oven to 325 degrees Fahrenheit.
  • Cut beef into serving size pieces and arrange in 2 quart baking dish.
  • Top beef with carrots and onion.
  • In a bowl, combine gravy, tomatoes, 1/4 teaspoon thyme and pepper; mix well.
  • Pour gravy mixture over meat and vegetables.
  • Cover with foil.
  • Bake for 2 hours.
  • Make the instant garlic mashed potatoes as instructed on the package, adding 1/4 teaspoon thyme and dried parsley.
  • Uncover meat, top with dollops of potatoes (you can pipe the potatoes on top to make it prettier if you want).
  • Bake uncovered an additional 20 minutes until potatoes are just light brown.

1 can(s) 14.5 oz stewed italian style tomatoes
1 lb 1/4 inch sliced beef round sirloin tip
1 Tbsp onion flakes, dehydrated
1 tsp garlic powder
3/4 tsp salt
1/4 tsp black pepper
1 1/2 tsp smoked paprika
1-2 Tbsp olive oil

Steps:

  • 1. In a covered casserole, place half of the tomatoes from the can.
  • 2. Place the meat on top of the tomatoes. If the meat pieces are too large for individual servings, cut to size.
  • 3. Sprinkle all of the seasonings on top of the meat.
  • 4. Drizzle with some olive oil.
  • 5. Add the remaining tomatoes on top.
  • 6. Bake covered in a 325 oven for 1 1/2 hours to 2 hours.
  • 7. Serve with mashed potatoes or buttered noodles and a fresh vegetable.

1/3 cup flour
1/2 teaspoon garlic salt
1/4 teaspoon pepper
2 lbs cube steaks
3 tablespoons vegetable oil
2 (8 ounce) cans tomato sauce
1 (1 1/3 ounce) package dry onion soup mix
1 cup sour cream

Steps:

  • Combine first 3 ingredients.
  • Dredge cube steak in flour mixture.
  • Heat oil in a dutch oven over medium-high heat; add steak, in batches, and cook until no longer pink.
  • Return all steak to pot.
  • Stir in tomato sauce and soup mix; bring to a boil.
  • Cover, reduce heat, and simmer 15 minutes.
  • Remove steak to serving platter, reserving liquid in pot; keep warm.
  • Stir sour cream into tomato mixture; simmer, stirring constantly, until heated. Do Not Boil.
  • Serve over steak.
  • To Freeze: Combined the flour, garlic and pepper and dredged the cube steaks.
  • Fry the meat quickly in the oil to brown and crisp rather than cooking.
  • Set aside to cool.
  • Add the tomato sauce and soup mix to the pan and cool.
  • Freeze the meat and sauce in separate ziplok bags.
  • To Serve: After thawing add the meat and sauce to the pan.
  • Simmer for 15 minutes or until the meat is heated through.
  • Remove the meat and add the sour cream.

I love Swiss Steak, and this is an easy way to make it. I have tried several recipes that were somewhat involved, and last night I tried to just make my own as I went along. The family really enjoyed it and I hope you do, too.

6 pieces of cubed steak
1 can beef broth
1 8 oz. can tomato sauce
1 to 1.5 tbsp. worcestershire sauce
1/2 cup ketchup
3/4 to 1 tsp garlic powder, according to taste
1/2 tsp. oregano
1 tsp. sugar (optional)
salt and pepper to taste

Steps:

  • 1. Shake pieces of steak in flour. In a skillet or saute pan with a lid, put enough oil in the pan so the steaks can brown.
  • 2. Heat oil and add pieces of flour covered steak. Salt and pepper both sides; first one side and then the other when you turn the meat.
  • 3. When brown on both sides, pour sauce over the meat and let simmer until meat is tender. Turn once or twice during this time.

1/2 c flour

3 Tbsp canola oil
1/2 c dry red wine
1 can(s) cream of mushroom soup
1 1/2 c crushed tomatoes
1 c beef broth
1 c sliced mushroom
4 clove garlic minced
1 Tbsp fresh rosemary minced
1 Tbsp fresh thyme minced

Steps:

  • 1. Cut meat into cubes. Mix flour together with salt and pepper. Dredge the meat in the flour mixture. Add oil to pressure cooker and sear the meat in oil to get a browned exterior.
  • 2. Remove the meat from the pressure cooker and deglaze with the red wine scrapping up bits from bottom of pan and let reduce to half.
  • 3. combine all remaining ingredients and pour in pan. Add meat back to pan and pressure cook for 20 minutes

  • Place carrots in bottom of greased 3 1/2 to 5-quart slow cooker. Top with steak. Combine soup mix, tomato sauce, and water. Pour over other ingredients. Cover and cook on low heat 8-10 hours. To serve the steak, ladle over plain or garlic mashed potatoes. Makes 4~6 servings. Serve with a side of cucumber and onion marinated in vinegar.
