EASY FRESH STRAWBERRY PIE
For my mother's birthday, I made this strawberry pie recipe instead of a cake. Since it was mid-May in Oklahoma, the berries were absolutely perfect. It was a memorable occasion for the whole family. -Josh Carter, Birmingham, Alabama

- Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in gelatin until dissolved. Refrigerate until slightly cooled, 15-20 minutes., Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. Refrigerate until set. If desired, serve with whipped cream.

- Toss all ingredients together& scrape into pie shell.
- If covering the filling with pastry, moisten the edge of pie shell; cover with pastry top.
- Trim, leaving 3/4 inch overhang; fold overhang under pastry rim.
- Seal& flute edge.
- Whish the yolk of 1 egg with 1 tbsp water& brush over pastry.
- Sprinkle with sugar& cut 4 steam vents in the centre.
- OR cover filling with a lattice of pastry strips.
- OR cover filling with the crumble mixture from recipe#91390.
- Place a foil-lined baking sheet (to catch drips) on the bottom rack of a preheated 425F oven.
- Place pie on rack above& bake for 20 minutes.
- Reduce heat to 350F& bake until golden with filling bubbling, about 55 to 70 minutes, shielding the edges with foil if browning too quickly.
- Let cool completely on rack.

- Stir boiling water into dry gelatin mix in large bowl at least 2 minutes until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
- Add whipped topping; stir with wire whisk until well-blended. Stir in chopped strawberries. Refrigerate 20-30 minutes or until mixture is very thick and will mound. Spoon into crust.
- Refrigerate 6 hours or overnight until firm. Top with sliced strawberries. (Update: the last few times I've made this, I have coarsely chopped the strawberries for the topping. I think it is better that way instead of the big slices of strawberry.) Store in refrigerator.

- Preheat oven to 375 degrees F (190 degrees C).
- Mix cracker crumbs with melted butter in a bowl and press mixture into a 9-inch pie dish to make a crust.

- 1. Drain both cans of strawberries; set a colander on top of another bowl so excess juice can drain into the bowl. Reserve 1/2 cup strawberry juice.
- 2. Make sure pie crust is prepared and set inside pie plate. Evenly distribute strained strawberries into crust.
- 3. In a medium saucepan, combine 1/2 cup reserved juice, 1 1/3 cup sugar, 1/4 cup flour and vanilla. Heat to a boil, stirring constantly with a whisk; boil 2 min.
- 4. Pour sugar mixture over the strawberries.
- 5. In another bowl, combine flour and sugar; cut in butter. Use a pasty cutter or fork to mix until pea sized balls form.
- 6. Spread crumb mixture on top of the sugar mixture. Top with "Sugar in the Raw" if you would like. It gives it a nice sparkle; its good for looks.
- 7. Bake 35-40mins at 425 degrees. (I do recomend covering the crust with foil to avoid burning.) Cool completely before serving.
EASY LOW FAT STRAWBERRY PIE RECIPE
Adaptation from a weight watchers recipe I found on the internet. Without the crust I think it is 4-5 points for the entire pie. For that, just make the mixture and pour it into an empty pie pan and chill until set.
