These air-fryer spring rolls are a great appetizer to have waiting in the freezer! While in the Bahamas, friends suggested a restaurant that serves amazing chicken spring rolls. When I got home, I created my own version. -Carla Mendres, Winnipeg, Manitoba

Number Of Ingredients 11

3 cups coleslaw mix (about 7 ounces)
3 green onions, chopped
1 tablespoon soy sauce
1 teaspoon sesame oil
1 pound boneless skinless chicken breasts
1 teaspoon seasoned salt
2 packages (8 ounces each) cream cheese, softened
2 tablespoons Sriracha chili sauce
24 spring roll wrappers
Cooking spray
Optional: Sweet chili sauce and additional green onions

Steps:

  • Preheat air fryer to 360°. Toss coleslaw mix, green onions, soy sauce and sesame oil; let stand while cooking chicken. Place chicken in a single layer on greased tray in air-fryer basket. Cook until a thermometer inserted in chicken reads 165°, 18-20 minutes. Remove chicken; cool slightly. Finely chop chicken; toss with seasoned salt., Increase air-fryer temperature to 400°. In a large bowl, mix cream cheese and Sriracha chili sauce; stir in chicken and coleslaw mixture. With 1 corner of a spring roll wrapper facing you, place about 2 tablespoons filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining edges with water. Fold side corners toward center over filling; roll up tightly, pressing tip to seal. Repeat., In batches, arrange spring rolls in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until lightly browned, 5-6 minutes. Turn; spritz with cooking spray. Cook until golden brown and crisp, 5-6 minutes longer. If desired, serve with sweet chili sauce and sprinkle with green onions. , Freeze option: Freeze uncooked spring rolls 1 in. apart in freezer containers, separating layers with waxed paper. To use, cook frozen spring rolls as directed, increasing time as necessary.

Air Fryer Spring Rolls are crispy, crunchy, and just as delicious as their deep-fried cousins without the mess of deep frying. These are filled with a savory pork and veggie filling that everyone will love.

1 tablespoon oil
1 tablespoon sesame seeds
1 pound ground pork
1 teaspoon onion powder
½ teaspoon freshly ground black pepper
1 teaspoon ground ginger or 1 tablespoon minced fresh ginger
1 tablespoon rice vinegar
1 tablespoon soy sauce
2 garlic cloves, minced
2 green onions, thinly sliced
1 ½ cups of tricolor coleslaw mix
8 spring roll wrappers

Steps:

  • In a saucepan over medium-high heat, heat the oil and add the sesame seeds. Once the seeds turn golden brown, add the meat and cook, stirring, until browned. Add the onion powder, pepper, ginger, vinegar, soy sauce, garlic, and green onions. Cook until most of the juices evaporate. Add the cabbage and cook about 2 minutes more, until wilted.
  • Lay a spring roll wrapper in a diamond orientation. Place 2 to 3 spoonfuls of meat in the center, in a line parallel to your body.
  • Lightly wet the edge of the wrapper with water. Fold left and right corners into the center, over the filling.
  • Fold the bottom corner up and roll the wrapper around the filling, squeezing the air out as you roll. Lightly wet the exposed corner to seal it down.
  • Spray the air fryer basket with oil and arrange the spring rolls in the basket. Spray the spring rolls with oil.
  • Cook on 380°F for 8 minutes, flipping halfway through cooking, until the spring rolls are crisp and golden brown on all sides.
  • Let cool for 5-10 minutes before serving.

Easily customizable, spring rolls are a refreshing healthy snack or starter. Each variation below layers lean proteins, fiber-rich veggies, flavorful sauces, and fresh herbs. Serve spring rolls with lime or lemon wedges.

4 (8-ounce) round rice papers
¾ cup cooked rice vermicelli
4 ounces shredded cooked chicken
1 cup thinly sliced English cucumber
¼ cup chopped fresh mint
2 tablespoons tzatziki sauce

Steps:

  • Fill a 9-inch pie plate with warm water; dip 1 rice paper into the water. Transfer to a work surface and let stand for a few seconds to soften.
  • Snip cooked rice noodles. Arrange 3 tablespoons noodles across the lower 1/3 of the softened rice paper. Top with 1 ounce chicken, 1/4 cup cucumber, 1 tablespoon mint, and 1/2 tablespoon sauce. Fold and lightly press bottom edge of rice paper over filling, tucking it underneath as you roll away from you. Fold in sides and continue to roll up tightly. Repeat with remaining ingredients.
