EASY AND AWESOME SPINACH SALAD
This is a very easy spinach salad to make. The dressing has some unusual ingredients but is very delicious. I never have leftovers at potlucks when I take this salad.

Steps:
- Place the bacon into a skillet over medium heat, and cook until browned and crisp, turning often, about 10 minutes. Transfer the bacon to paper towels to absorb excess grease. Crumble the bacon when cool.
- Place the spinach into a large salad bowl, and sprinkle with the bacon, hard-cooked eggs, and onion. Gently toss the salad.
- In a bowl, whisk together the sugar, ketchup, vegetable oil, vinegar, and Worcestershire sauce until the sugar has dissolved. Pour the dressing over the salad, and toss thoroughly to combine all ingredients.

DELICIOUS EASY SPINACH AND STRAWBERRY SALAD WITH FETA
This is a simple salad to put together but big on flavor! --- you can also make this using salad greens mixed with fresh spinach, I just purchase a smaller bag of prewashed spinach for this, prep time does not include washing and drying the fresh spinach, all salad ingredients may be adjusted to taste --- you will love this salad!

I came up with this recipe the same way I think a lot of cooks come up with new ideas - by sticking my head in the refrigerator and wondering what I could throw together with what I had. It turned out to be easy and very tasty so I thought I would share.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble bacon.
- Whisk red wine vinegar, seasoned rice vinegar, anchovies, and white pepper together in a bowl until dressing is evenly mixed.
- Heat olive oil in a large wok or skillet over medium-high heat; saute onion and garlic until onion is transparent, 5 to 10 minutes. Lower heat to medium. Add spinach, working in batches, to onion mixture, tossing and mixing until spinach wilts, 1 to 2 minutes.
- Transfer spinach mixture to a serving bowl; top with egg slices and bacon.
- Pour dressing into the wok; bring to just under a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Pour dressing over spinach mixture; sprinkle with green onions and Asiago cheese.

- Cook the onions untill translucent in the olive oil.
- Add garlic and cook for an additional 2 minutes.
- Add the Baslamic Vinegar.
- Bring to a boil and reduce to 1/2 origional.
- Add Spinach leaves and cook untill wilted (2-5 minutes).
- Move spinach to serving bowl.
- Roast pine nuts over medium heat.
- Add pine nuts and dried crainberries to spinach and mix.

- 1. Place drained beets in a bowl If they are whole, slice them up. Canned cubed beets work as well. You can also use fresh beets that have been cooked and cooled and sliced up.
- 2. Add the thinly sliced sweet onion to the bowl.
- 3. Add the fresh spinach to the bowl, and mix all ingredients together. If you do not like spinach, you can use romaine or any other lettuce instead.
- 4. Mix the dressing ingredients together in a separate bowl. I like to use artificial sweetener in salads because it is less grainy. Sweetener can be adjusted to your taste, but the salad should be slightly sweet.
- 5. Add the dressing to the beets, onion and spinach and mix well. Store leftovers in the refrigerator.
