- Heat oven to 180C/160 fan/gas 4 and grease an ovenproof dish. Heat the oil in a large frying pan over a medium heat, add the onions, sizzle for 5 mins, then remove half and put in a large bowl with the mince, egg, breadcrumbs, sage, feta and chopped bay. Season well and mix. Shape into a long sausage shape and transfer to the greased dish. Put the remaining bay leaves on top, drizzle with a little more oil and put in the oven for 40-45 mins until cooked through.
- Meanwhile, keep the remaining onions on a low heat in the pan. Cook for 2 mins, then increase the heat and pour in the passata with 70ml water. Bubble for 30 mins on a low heat, stirring often, or until the meatloaf is ready to come out of the oven. Season to taste.
- Cook the spaghetti following pack instructions. When everything is ready, toss the spaghetti in the tomato sauce, slice the meatloaf and let everyone help themselves.

- Heat olive oil in a shallow soup pot.
- Sauteé garlic until golden, then add onions and peppers.
- Sauteé until onions are starting to become translucent, then add beef, and season with salt and pepper.

- In a non-stick skillet over medium heat, add the oil. When the oil is warm, add the onions and cook until soft. About 4-5 minutes. Stir occasionally. Add a dash of salt and bell pepper and cook for about 2-3 minutes. Reduce heat to low-medium and add black pepper and another dash of salt, stir, cover and let it cook.
- Meanwhile put the TVP in a bowl and add enough boiling water to cover. Let it sit for 2-3 minutes. It should be soft. Strain and put a heavy saucepan over the TVP and drain as much water as you can, chop finely, then add the TVP along with spices and stir. You also can use Textured soy protein, but you don't need to chop them. Add the tomato paste and stir again. Let it cook for a minute or two. Taste, then add the coconut milk and lemon juice (if using), stir and remove from heat.
- For the spaghetti, add the water in a saucepan over high heat. Add 1/2 tsp salt and 2-3 drops of oil and let it come to a boil. Add the spaghetti and cook on high heat for 7-8 minutes.
- Serve some of the spaghetti with 1 to 2 spoons of the sauce and garnish with a spring of mint or basil.

VIRGINIA'S EASY & MILD SPAGHETTI SAUCE
Sick of Serving Sour Spaghetti Sauce? If so here is a sauce that is mild yet tasty. If I hadn't eaten this sauce before requesting the recipe, I doubt I would have tried it since the ingredients seem unlikely. This is an accomodating sauce; add your favorite sauteed veggies or use Italian sausage and they will work well since the base is so nice. Add more or less tomato juice to obtain desired consistency. If putting this into a crockpot, add more juice for cooking down. I serve this with angelhair pasta and shredded mozarella cheese as my friend, Virginia, did when we first ate this. This recipe makes "comfort food" out of spaghetti sauce!

- 1. Dice onion, green pepper, mushrooms, and celery into similar sized pieces. Place on a plate.
- 2. In a large pot, pour 2 tablespoons of olive oil over medium heat. Add italian seasonings, salt, pepper and garlic stirring for two to three minutes.
- 3. Add diced green pepper and celery and cook for two minutes. Then add onion and mushrooms and cook until tender. You may want to turn the temperature down a bit while you're working on the next step.
- 4. While the vegetables are cooking, brown the hamburger in a skillet. When done add to the large pot.
- 5. This next step can be done two ways. My preference is to remove the italian sausage from the casings and brown in the same skillet that I cooked the hamburger in. You can also brown the italian sausage in the casings and cut into bite size pieces when done. Either way you choose, once the sausage is cooked place it in the large pot with the hamburger, vegetables and seasonings and stir to incorporate all the flavors.
- 6. Add Prego spaghetti sauce. Use any flavor. I like to mix them up using traditional, meat and chunky vegetable. You can't go wrong! Simmer on low heat for 30 minutes.
- 7. Here's a couple of tips. 1. If you use fresh herbs be sure to use less since the flavor is much more robust. 2. If your spaghetti sauce is a little tart, add two teaspons of sugar. It will cut the acid in the tomato sauce. 3. When I use fresh herbs, this is what I typically put in the sauce: rosemary, basil, oregano, dill and thyme. For the rosemary and dill, run the branch between your fingers to remove the rosemary and add to pot. Basil should be diced along with the oregano and dill. 4. You can freeze the spaghetti sauce in plastic containers or freezer bags. Be sure to lay the bags flat in the freezer. They will defrost very quickly this way and take up less room. 5. This sauce can be use for spaghetti, lasagna, beefaroni, stromboli....all kinds of dishes!
SPAGHETTI SAUCE - GOURMET AND EASY

- 1. Heat 2 Tbsp Olive Oil in a large saucepan/skillet
- 2. Add garlic and cook until fragrant - about 30 seconds
- 3. Add Green Peppers and Onions and saute for about 5 mins
- 4. Add mushrooms and saute until onions are fully translucent and begin to brown
- 5. Remove vegetables and set aside
