I love fried chicken, but it takes so long and is such a big mess. I came up with this one, and have been making it ever since! Everyone I have given the recipe to has loved it as well.

12 chicken thighs
3 eggs
1 cup all-purpose flour
1 cup Italian seasoned bread crumbs
salt and pepper to taste
1 teaspoon paprika
½ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
  • Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. Remove from oven and drain on paper towels. Enjoy!

A blend of dried spices gives the crispy panko coating on these oven-fried chicken thighs plenty of flavor, and marinating the chicken in buttermilk makes it moist and juicy. If you don't have an oven-safe skillet, you can roast the chicken in a baking dish in Step 5. Serve with your favorite vegetables (bake them alongside the chicken to make it easy) for a healthy comfort food dinner that requires just 20 minutes of active prep time.

2 cups nonfat buttermilk
¾ teaspoon salt, divided
4 bone-in, skinless chicken thighs (about 1 1/2 lbs. total)
¾ cup panko breadcrumbs
1 tablespoon cornstarch
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper
¼ teaspoon ground pepper
3 tablespoons canola oil, divided

Steps:

  • Combine buttermilk and 1/2 tsp. salt in a large bowl. Add chicken; toss to coat. Cover and refrigerate for at least 2 hours or up to 8 hours.
  • When ready to cook, preheat oven to 475 degrees F.
  • Combine panko, cornstarch, garlic powder, onion powder, paprika, cayenne, and ground pepper in a shallow dish. Remove the chicken from the buttermilk mixture, letting excess drip off, and dredge it in the panko mixture, pressing gently to adhere. Gently shake off excess breading; transfer the chicken to a plate and sprinkle evenly with the remaining 1/4 tsp. salt.
  • Heat 1 1/2 Tbsp. oil in a large cast-iron or oven-safe nonstick skillet over medium-high heat. Add the chicken to the pan, tilting as needed so each piece comes in contact with the oil; cook until browned on the bottom, 3 to 4 minutes. Transfer the chicken, browned-side down, to a wire rack set over a baking sheet.
  • Add the remaining 1 1/2 Tbsp. oil to the pan; cook until heated, about 1 minute.
  • Return the chicken, browned-side up, to the pan, tilting as needed so each piece comes in contact with the oil. Transfer the pan to the oven (or use a baking dish). Bake until an instant-read thermometer inserted in the thickest part registers 165 degrees F, 14 to 16 minutes.

There's nothing better than classic, crispy, oven-fried Southern-style chicken. This recipe is so easy, you'll want to make it all the time!

2 lbs chicken
1/4 cup hot sauce
1 medium egg
1 cup all purpose flour
3/4 cup plain bread crumbs
1 tbsp garlic powder
1 tbsp onion powder
2 tsp seasoning salt
1 tsp ground black pepper
1 1/2 tsp poultry seasoning
Vegetable oil to spritz the chicken (I used peanut oil)

Steps:

  • Preheat the oven to 400 F.
  • Make sure that the chicken is nice and clean, then set to the side.
  • Next, combine the hot sauce and egg in a bowl. Mix until well combined.
  • Pour the hot sauce and egg mixture all over the chicken, and make sure that the chicken is nicely coated.
  • Now combine the flour, bread crumbs, seasoning salt, black pepper, onion powder, garlic powder, and poultry seasoning. Mix until well combined.
  • Once the flour and seasonings are well combined, coat all of the pieces of chicken.
  • Now grab a cookie sheet or sheet pan and cooling rack. Place the cooling rack on top of the cookie sheet.
  • Spray the rack with with vegetable oil, then place the chicken on top of the rack.
  • Spray each piece of chicken with oil until it's well coated. Make sure to get both sides.
  • Place the chicken in the oven, and bake for 35-40 minutes, or until it's golden brown and cooked throughout!
  • Serve and enjoy!

3 -3 1/2 lbs chicken, cut into pieces
2 cups buttermilk
2 teaspoons oil
1 cup dried breadcrumbs
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon thyme, dried
1/4 teaspoon pepper

Steps:

  • Strip skin from chicken pieces.
  • Pour buttermilk over chicken in plastic or glass container. turn chicken pieces to coat evenly. Cover and refrigerate several hours or overnight.
  • Preheat oven 425F Smear 9x13 with oil. set aside.
  • Drainbuttermilk from chicken, place chicken on rack to drain. Combine bread crumbs with paprika, salt, thyme, and pepper roll chicken in bread crumbs. Arrange in single layer in prepared pan. Bake 30 minutes. Turn chicken. Bake 15 to 20 minutes longer.

8 skinless chicken thighs
8 skinless chicken drumsticks
200ml milk
200g self-raising flour
large pinch each paprika , turmeric and cayenne pepper
6-8 tbsp groundnut oil
mustard slaw and paprika wedges, to serve (see recipes below)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the chicken in a bowl and pour over the milk. Tip the flour and spices into a large plastic bag and add a large pinch of salt and a good grinding of pepper.
  • Heat half the oil in a large frying pan. Take half of the chicken out of the milk, shake off any excess and put in the bag of seasoned flour. Hold the top closed and shake well. Lift the pieces out and shake off any excess, but don't do this too hard or you'll end up with no coating. Lower the pieces into the oil and fry on each side until golden and crisp - don't overdo it as the chicken is being baked next and will brown further. Use tongs to turn the chicken and try not to tear the coating. Transfer to a rack set in a roasting tin. Repeat with the rest of the chicken.
  • Bake for 30 mins until cooked - check one drumstick and one thigh with a skewer - cook for longer if you need to.
