A simple and easy and oh-so-good shrimp quiche.

1 (9 inch) baked pie shell
4 ounces small, cooked shrimp, peeled and deveined
⅔ cup grated Gruyere cheese
2 eggs, beaten
1 cup light sour cream
1 tablespoon finely chopped green onion
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread shrimp evenly across the bottom of the pie crust. Sprinkle cheese over the shrimp.
  • Stir sour cream, green onions, salt and pepper into the beaten eggs; then pour mixture evenly over the shrimp and cheese.
  • Bake in a preheated oven for 25 to 30 minutes. Serve warm or cold.

This recipe came from "The Can Opener Gourmet" by Laura Karr. I've made it with shrimp or crabmeat & both are delicious. There are a number of easy recipes in this book that my kids really enjoyed for dinner! You may have to cover the edges of the piecrust.

3 eggs
1/3 cup evaporated milk or 1/3 cup whole milk
2 teaspoons onion powder
1/2 teaspoon Worcestershire sauce
1/4 teaspoon bottled lemon juice
1/8 teaspoon ground nutmeg
1 (4 1/4 ounce) can baby shrimp, drained
1 cup shredded swiss cheese
1 frozen 9-inch pie shell

Steps:

  • Preheat oven to 425.
  • In a medium mixing bowl, whisk together the eggs, milk, onion powder, Worcestershire sauce, lemon juice, and nutmeg. Gently stir in the shrimp and cheese. Pour into the frozen piecrust.
  • Bake for 15 minutes at 425. Decrease oven to 325 and bake an additional 30 minutes, or until a knife inserted into the middle comes out clean. Let cool for 10-15 minutes before slicing.

36 frozen mini tart shells
1/2 lb shrimp, cooked, chopped (save 36 shrimp whole)
4 eggs, beaten
1 cup small curd cottage cheese
4 tablespoons parmesan cheese, grated
4 tablespoons chives, chopped
1 dash hot pepper sauce (Tabasco "or" peri-peri "or" your choice)
1 cup monterey jack cheese or 1 cup your favorite cheese, grated

Steps:

  • Bake the tart shells in a 375°F oven for about 5 minutes.
  • Coarsely chop the shrimp (except for 36 you have set aside for garnish).
  • Beat together the eggs and cottage cheese.
  • Stir in the chopped shrimp, Parmesan, chives, hot pepper sauce and pepper.
  • Spoon the cooked, shrimp mixture into the tarts shells.
  • Top with grated cheese and the reserve shrimp.
  • Bake for 20 minutes or until golden or until they arepuffed and golden.

So I've always made sure that there's an ample supply of asparagus in my freezer! My husband is a grain farmer, and we have four grown children and 13 grandchildren.

1 unbaked pie shell (9 inches)
1/2 pound fresh asparagus, trimmed
2 green onions, thinly sliced
1 tablespoon all-purpose flour
2 cups shredded Swiss cheese
3 large eggs, beaten
1 cup half-and-half cream
1/2 teaspoon salt
1/4 teaspoon basil
1/8 teaspoon cayenne pepper

Steps:

  • Bake crust at 425° for 6-7 minutes. Remove from oven and set aside. , Cook the asparagus spears in a small amount of water until tender. Drain and cool. Set aside three spears for garnish; cut the remaining asparagus into 1/2-in. pieces. Combine the asparagus pieces and onions; add flour and toss. Pour into crust; sprinkle with cheese. Whisk together eggs, cream, salt, basil and cayenne; pour over asparagus mixture. , Bake at 325° for 25 minutes. 3/4 pound fresh asparagus, cut into 2-inch pieces
1 unbaked pastry shell (9 inches)
1 can (6 ounces) crabmeat, drained and flaked
1 cup shredded Swiss cheese
1 tablespoon all-purpose flour
3 large eggs, lightly beaten
1-1/2 cups half-and-half cream
1/2 teaspoon salt
3 drops hot pepper sauce
2 tablespoons grated Parmesan cheese
8 fresh asparagus spears for garnish

Steps:

  • Place asparagus in a large saucepan with enough water to cover; bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. Drain well and pat dry.
