1 lb pork sausage (hot or regular)
20 ounces diced potatoes, with onion, refrigerated, Simply Potatoes
1 teaspoon butter
1 teaspoon seasoning salt
1 teaspoon black pepper
12 eggs, lightly beaten
8 ounces shredded mild cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a medium baking dish.
  • Cook and stir sausage in a medium skillet over medium heat until evenly browned and broken up.
  • Remove sausage to a separate plate.
  • Add the butter to the same skillet and replace over medium heat.
  • Add the package of diced potatoes.
  • Cook and stir until lightly browned and slightly crispy on the outside.
  • Place the potatoes in the prepared baking dish.
  • Sprinkle with half of the seasoning salt and pepper.
  • Cover with the sausage.
  • Sprinkle the cheese over all.
  • Pour the eggs over the top.
  • Finish with the rest of the seasoning salt and pepper.
  • Bake 30 minutes in the preheated oven, or until the eggs are fully cooked.
  • If the dish has been refrigerated and is cold, it can take up to an hour to bake.

EASY SAUSAGE PANCAKE CASSEROLE

I LOVE this quick, easy recipe for breakfast or dinner. All package pancake mixes are a little different, I use a Buttermilk store brand that you just add water to. I use it for 18 or more pancakes (about two cups) and then add the water it indicates on the package. This recipe comes from my sister (she served it to hungry kids when they had sleepovers). If you like less sausage and want more of the "cake", just use 8 ounces of the sausage links. I've also added 1/2 cup of syrup to the batter for a little extra sweetness and flavor. This cake will not always become golden brown, just a little around the edges.

2 cups dry buttermilk pancake mix (prepared as directed on package for approximately 18+ pancakes)
16 ounces brown n serve sausage links (thawed and cut into pieces)
1 tablespoon butter
syrup

Steps:

  • Preheat oven to 450 degrees and spray a 9x13 glass dish very generously.
  • Cut thawed links into bite sized pieces (about 4 pieces per link). You can substitute other sausages, the Brown and Serve are just easy.
  • Prepare pancake mix as directed on your favorite brand. Just make sure you make it for about 18 pancakes or a little more. This is where I add the 1/2 cup of syrup option (see my "recipe description").
  • Mix prepared pancake batter and sausage pieces.
  • Pour into prepared pan and bake at 450 degrees for about 12 minutes or until toothpick inserted in center comes out clean.
  • Spread tablespoon of butter on top of baked casserole to melt down.
  • Cut into serving pieces and serve with syrup.

3 tbsp vegetable, olive or rapeseed oil
8 sausages
500g bag frozen mixed Mediterranean veg
2 x 400g cartons tomatoes with garlic and onions
2 x 400g cans butter beans , drained
2 thick slices good, crusty bread

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat 2 tbsp oil in a flameproof casserole dish with a lid. Add the sausages and brown until golden all over, then transfer to a plate.
  • Put the frozen veg in the pan and cook for a few mins to thaw. Add the tomatoes, then half-fill one of the cans with water and pour into the dish. Add the beans, season well and bring the mixture to a simmer. Place the sausages on top of the veg, cover with a lid and cook in the oven for 40 mins.
  • Heat 1 tbsp oil in a frying pan. Tear the bread into small chunks or coarsley grate it, making chunky crumbs. Fry in the hot oil until crisp. Serve the casserole in bowls and top with the breadcrumbs.

This is a really economical meal that's quick to prepare. You can experiment with different types of sausages but I have found that the plainest, cheapest ones work the best as they absorb the flavour and don't overpower the other ingredients.

olive oil
1 onion, chopped
500 g sausages (I like the country style beef sausages)
410 g diced tomatoes, canned with juice
2 teaspoons paprika
2 tablespoons barbecue sauce
1/4 cup water
2 tablespoons flour (if needed, to thicken)

Steps:

  • Heat oil in a frypan and cook the onion. Add the onion to a saucepan or oven proof casserole dish.
  • Brown sausages in frypan. Slice the sausages and add to onion.
  • Add the can of tomatoes, paprika, barbeque sauce and water.
  • Simmer over medium heat until sausages are cooked through - about 5 - 10 minutes. If sauce does not thicken by itself, add the flour.
  • Alternatively after step 3 place into casserole dish and bake in oven until hot.
  • Serve with mashed potatoes, pasta or crusty bread.

1 (16 ounce) package breakfast sausage, Do not use Maple (mild, regular or hot)
2 (8 ounce) tubes crescent rolls
1 bunch green onion
1 (8 ounce) brick cream cheese (softend)
1/4 teaspoon lowery's season salt

Steps:

  • 1. Fry sausage until brown and completely done.
  • 2. Chop green onions.
  • 3. Mix sausage and green onions into softend cream cheese.
  • 4. Add just a pinch of Lowery's Season Salt.
  • 5. Mix well.

4 large meaty sausages
1 onion , sliced
2 carrots , finely chopped
2 celery sticks, finely chopped
400g can cherry tomato
400g can cannellini bean (don't drain)
1 beef stock cube
1 tbsp thyme , chopped, plus extra for garlic bread
1 garlic clove ½ grated, ½ whole
4 slices ciabatta

Steps:

  • Heat the oil in a wide shallow pan and fry the sausages until browned. Push to one side, then tip in the onion, carrots and celery, and cook, with the lid on, for 10 mins until softened.
  • Stir in the tomatoes, beans and their juice, stock cube and thyme. Add grated garlic, cover and simmer for 10 mins.
  • Meanwhile, toast the ciabatta, then rub with the remaining garlic, drizzle with oil, scatter with a few thyme leaves and serve with the casserole.

1/2 lb pork sausage (spicy or mild)
1 medium onion, diced
4 cups frozen hash brown potatoes, thawed and diced
1 1/2 cups monterey jack cheese (shredded) or 1 1/2 cups cheddar cheese (shredded)
3 eggs, beaten
1 cup milk
1/4 teaspoon pepper
mild salsa

Steps:

  • In a large skillet, cook sausage and onion, breaking up sausage with a spatula.
  • When sausage is cooked through, drain off excess fat.
  • In an 8x8x2" square baking dish, layer the hash brown potatoes, half of the shredded cheese, browned sausage and onion mixture, and remaining shredded cheese.

1 lb Italian sausage
1 medium white onion, peeled and diced
3 garlic cloves, minced
1 red bell pepper, cored and diced (or a jar of roasted red peppers drained and diced)
6 eggs
1/3 cup milk
20 ounces frozen hash browns, thawed
2 cups shredded cheddar cheese or 2 cups mozzarella cheese
1/4 teaspoon fresh ground black pepper

Steps:

  • Heat oven to 375. Add the sausage to a medium saute pan. Cook over medium high heat until browned, crumbling the sausage with a spoon as it cooks.
  • Remove sausage with a slotted spoon and transfer to a large mixing bowl.
  • Reserve about 1 tablespoon of sausage grease from the saute pan, discarding the rest.
  • Add the onion and pepper to the saute pan and saute for 5 minutes until cooked. Add the garlic and saute for an additional 2 minutes until fragrant. If you are using the jarred red peppers, wait to stir them until after the garlic.
  • Pour the vegetable mixture into the mixing bowl with the sausage. Add the hash browns and 1 1/2 cups cheese to the mixing bowl with the sausage and vegetables. Stir to combine.
  • In a separate bowl, whisk together the eggs, milk, and black pepper until combined. Then add them to the hashbrown mixture and stir to combine. Pour the mixture into a baking dish, and top with the remaining 1/2 cup of shredded cheese.
  • Cover with aluminum foil and bake for 30 minutes and then remove foil and bake for an additional 10 to 15 minutes and the top of the potatoes begin to slightly brown. Remove and let the casserole rest for 5 minutes. Sprinkle with green onions if desired.

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.
