GRILLED PINEAPPLE WITH RUM SAUCE

1 pineapple, peeled and sliced into 6-8 rings with the core removed
1/2 cup dark rum
1/4 cup dark brown sugar
2 teaspoons butter (optional)
1/4 teaspoon ground cinnamon
Pinch of salt
Vanilla ice cream and toasted slivered almond for serving on top of the pineapple.

Steps:

  • Preheat grill to 400° F. cleaning and oiling the grates well. Peel, cut and core the pineapple into 6-8 rings that are approximately 3/4 - 1 inch thick. Brush the pineapple rings lightly with oil or melted butter.
  • While the grill preheats, combine the brown sugar, rum, cinnamon, butter (if using it) and pinch of salt. Bring the mixture to a boil and stir everything together. Reduce the heat to medium-low and let the sauce simmer until it's reduced and thick enough to coat the back of a spoon, about 5 minutes. Pour the sauce into a jar or serving bowl and set aside while the pineapple grills.
  • Place the pineapple rings onto the grill and cover with the lid. Grill for 2-3 minutes or until they're golden brown and have grill marks, then flip them over and grill another 2-3 minutes.
  • Remove the pineapple from the grill. Serve the pineapple with a scoop of vanilla ice cream, rum sauce and toasted slivered almonds on top.

1/2 c packed brown sugar
1 Tbsp ground cinnamon (plus extra for dusting)
1 pineapple, cored and cut into about 6-8 rings (choose desired thickness)

favorite vanilla ice cream

2 tablespoons light brown sugar
1/4 cup dark rum
1 ripe pineapple, peeled and sliced into 1/4-inch thick rounds
9 ounces mascarpone
1 vanilla bean, seeds scraped
1/2 cup fresh blueberries

Steps:

  • Melt butter, sugar and rum in a small saucepan. Grill pineapple on both sides until golden brown, about 2 to 3 minutes per side. Spoon rum glaze over grilled pineapple.
  • Whisk together mascarpone and vanilla seeds. Top each slice of pineapple with a dollop of vanilla mascarpone. Garnish with a few fresh blueberries.

1 whole pineapple (peeled, cored, and sliced into 6-8 slices)
½ cup dark rum
2 tablespoons dark brown sugar, ((light works fine too))
½ teaspoon ground cinnamon
6 scoops vanilla bean ice cream
rum marinade (from above)
1 tablespoon freshly squeezed orange juice
1 tablespoon dark brown sugar
1 tablespoon unsalted butter

Steps:

  • Rum Marinade: In a large baking dish, add the pineapple slices. In a separate measuring cup, mix together the rum, sugar, and cinnamon. Pour the rum mixture directly over the pineapple wedges and let the marinate sit for 15 minutes, and then flip the pineapple and continue to marinate the other side for 15 minutes. Remove the pineapple slices and save the marinade!
  • Preheat Grill: Prepare the grill for direct heat using lump charcoal with an internal temperature of 375 degrees Fahrenheit. Do this while the pineapple is marinating.
  • Grill Pineapple: Place the pineapple slices over the direct heat for 5 to 7 minutes and then flip. You should see some nice grill marks. Continue to grill another 4 to 5 minutes or you see nice char or grill marks. Remove from grill.
  • Serve: Place a warm pineapple slice on a plate and add a scoop of ice cream, and then drizzle with the rum caramel glaze and enjoy.

1 (3 to 4 pound) pineapple
Nonstick cooking spray
2 teaspoons butter
1/4 cup brown sugar
1/4 cup rum
1 pint light vanilla ice cream

Steps:

  • Cut the top and bottom off of the pineapple, peel and cut it crosswise into 8 rings, about 1/2-inch each. Use a spoon or apple corer to carve out the center core of each ring.
  • Spray a large grill pan with cooking spray and heat over a medium flame. Grill the pineapple, in 2 or 3 batches, for 2 to 3 minutes on each side, until it is nicely brown and grill marks have appeared. (You can also grill this on an outdoor grill sprayed with cooking spray before being heated.)
  • While the last batch of pineapple cooks, heat the butter, sugar and rum in a small saucepan over a low heat, stirring, until the sugar is dissolved and the sauce has thickened slightly, about 2 minutes. Remove the sauce from the heat.
  • Place a pineapple ring on each plate, scoop 1/4 cup of ice cream into the center of the ring, and drizzle about 2 teaspoons of sauce on top.

¼ cup rum

1 tablespoon ground cinnamon

Steps:

  • Peel the pineapple and, leaving it whole, cut out the center core. Slice into 8 rings, and place them in a shallow glass dish or resealable plastic bag. 1/2 cup sweetened flaked coconut
1 (3 1/2-to 4-pounds) pineapple, peeled
1/2 cup packed dark brown sugar
1/4 cup dark rum
2 teaspoons curry powder (preferably Madras)
1 tablespoon fresh lime juice

Steps:

  • Toast coconut in a small heavy skillet over medium heat, stirring frequently, until golden-brown, about 5 minutes.
  • Cut pineapple crosswise into 8 slices (about 3/4 inch thick) and core slices. Stir together remaining ingredients in a shallow glass baking dish and add pineapple in 1 layer, turning to coat evenly. Marinate, turning occasionally, 30 minutes.

RUM-GLAZED GRILLED PINEAPPLE WITH LIME CRèME FRAîCHE

100ml dark rum
2 tbsp light brown soft sugar
¼ tsp ground nutmeg
¼ tsp ground allspice
¼ tsp ground cinnamon
200ml crème fraîche
2 limes, zested and juiced
1 pineapple, peeled and cut into 8 wedges
½ scotch bonnet chilli, deseeded and finely chopped (optional)

Steps:

  • Heat the rum in a small pan over a low heat with 50ml water and stir in the sugar until it dissolves. Turn the heat up to medium and bring to the boil. Boil for 2-3 mins until the mixture thickens slightly. Remove from the heat. Stir in the spices. Mix the crème fraîche with the lime zest and juice in a separate bowl.
  • Arrange the coals on one side of the barbecue and light (or see tip below for cooking indoors). When the flames have died down and the coals are ashen, lay the pineapple wedges over the coals. Cook for 2-3 mins until char marks appear, then turn over.
  • Brush the pineapple wedges with the rum syrup and cook for 10 mins more, moving them around the grill using tongs so they don't burn. When ready, they will be golden and soft. Remove from the barbecue, sprinkle with the chilli, if using, and serve with the lime crème fraîche.
