1 1/2 to 2 lb pork loin roast
6 to 8 slice bacon, uncooked (more or less, depending on size of bacon slices)
salt and pepper to taste

Steps:

  • 1. Wash pork roast and pat dry. Add salt and pepper to taste. Wrap pork roast in uncooked bacon slices, securing underneath the roast. Cook in crockpot on low heat for about 5 to 6 hours or until bacon is cooked and roast is tender. Transfer to serving platter.
  • 2. Pour broth into a sauce pan and bring to a boil. Thicken using about 2 teaspoons of cornstarch mixed with enough milk to make a pourable paste. Add cornstarch mixture to broth a little at a time, whisking constantly. If mixture seems too thin, you may add a little more cornstarch. If too thick, pour in a little milk or water. Continue cooking and whisking until consistency is correct. You may also add salt and pepper to taste.
  • 3. Slice roast and serve with gravy.

1 ounce envelope dry onion soup mix
4 -5 lbs pork loin roast
1 teaspoon dried rosemary

Steps:

  • In a 9 x 13 inch baking dish, place a large piece of foil.
  • Sprinkle the dry onion soup into the middle of the foil.
  • Place the roast on top of the soup mix and sprinkle with dried rosemary.
  • Fold the foil and seal it, making sure to fold the ends.
  • Bake roast at 300 degrees for 3 1/2 to 4 hours or until done.

2 lbs carrots, peeled and halved lengthwise if large
1/2 lb shallot, peeled and halved
2 tablespoons fresh rosemary
2 tablespoons olive oil
salt
pepper
1 1/2 lbs boneless pork loin roast

Steps:

  • Preheat oven to 450.
  • On a rimmed baking sheet, toss carrots, shallots adn 1 tablespoons rosemary with on tablespoons olive oil. Season with salt and pepper. Roast veggies 10-12 minutes.
  • Meanwhile, season pork with salt and pepper. In large skillet, heat 1 tablespoons oil over medium heat. Add pork and cook turning occasionally until golden brown on all sides, about 10-12 minute Transfer to a plate, insert meat thermometer.
  • Remove baking sheet from oven; push vegetables to sides. Place pork in center; return to oven. Roast, tossing veggies occasionally until meat thermometer reads 145 (takes about 30-40 min.) Loosely tent with foil. Rest 10 min.

Got this recipe a few years ago off the internet and I can't remember who wrote it, but wish I could because it has been my go to for Roast Pork loin ever since. Easy and delicious!

3 1/2 lbs center cut pork loin
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon red wine vinegar
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon fresh cracked pepper

Steps:

  • Preheat over to 325.
  • Line baking pan with heavy duty aluminum foil.
  • Mix together, in bowl, Honey, Soy Sauce, Red Wine Vinegar, Dry Mustard, Salt, Garlic Powder and Cracked Pepper.
  • Place Pork loin on aluminum foil and brush on the sauce (don't use all, as you will be basting the pork every 1/2 hour.
  • Cover with Foil and place in oven.
  • Baste with Sauce every half hour.
  • Remove foil last hour.
  • Bake 2-1/2 hours.
