I found this recipe several years ago and use it regularly. You can substitute BBQ sauce for the ketchup. Finely diced green peppers also are a nice addition.

1 cup water
2 lbs lean ground beef
1/2 cup onion, finely diced
1 (6 1/4 ounce) package Stove Top stuffing mix
2 eggs
1/2 cup ketchup, divided

Steps:

  • Mix all ingredients except 1/4 cup ketchup.
  • Shape meat mixture into an oval loaf.
  • Place loaf in a 9x13 baking dish.
  • Top with remaining ketchup.
  • Bake at 375 degrees Fahrenheit for 1 hour.

1 ½ pounds lean ground beef
1 egg
1 onion, chopped
1 cup low-fat (1%) milk
1 cup whole wheat bread crumbs
½ cup chopped fresh parsley
1 large carrot, grated
salt and ground black pepper to taste
1 tablespoon brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Combine beef, egg, onion, milk, bread crumbs, parsley, and carrot in a large bowl. Season with salt and black pepper. Place beef mixture in loaf pan.
  • Stir together brown sugar, mustard, and ketchup in a small bowl. Pour over meatloaf.
  • Bake in preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
