- * Substitute 1/2 cup packed brown sugar for 1/2 cup of the white sugar if preferred.
- Drain pineapple very well, reserving juice for other uses.
- Cream butter and sugar together until light and fluffy.
- Add eggs and use a wire whisk to combine thoroughly.
- Add vanilla extract and drained pineapple; blend.
- Pour into unbaked 9-inch pie shell and bake in preheated 350-deg ree oven for about 45 minutes.
- Let cool for a few minutes before cutting, or serve cold.

PINEAPPLE CHEESE PIE ~ EASY
Such an easy, yet yummy pie. I make my own crust, but if pressed for time, by all means use a store bought. Enjoy!

- 1. Preheat oven to 375 degree F. In a small bowl, mix graham cracker crumbs & sugar. Stir in melted butter, and blend until all crumbs are moistened.
- 2. Place in 9 inch pie crust. I then use a metal measuring cup to press evenly into bottom pf place and up the sides. This works best for me. Use a spoon or your fingers if you prefer. Place in oven and bake for 10 minutes or until turning golden on edges. Cool on rack.
- 3. For pie: In a large mixing bowl, cream sugar, cream cheese and the 2 tablespoons of juice, until well blended.
- 4. Fold in the well drained pineapple.
- 5. Next, fold in the whipped cream until well blended.
- 6. Spoon evenly into the cooled crust. Chill for 4 - 6 hours, before serving.
EASY PINEAPPLE COCONUT PIE
I had these things in my baking cabinet and decided to give it a try and it turned out super yummy. I will be making all the time. If you like coconut cream pie then you will love this easy substitute.

- 2. Spread remaining coconut over top of pie.

- Heat oven to 425°F.
- Melt butter in medium skillet on medium-high heat. Add pineapple; cook 5 min., stirring occasionally. Stir in flour and brown sugar; cook 1 min. Remove from heat; stir in nuts.
- Unroll crust onto lightly floured surface; roll out into 12-inch circle. Transfer to baking sheet. Spoon pineapple mixture into center of crust, spreading to within 2 inches of edge. Fold over edge to partially cover pineapple mixture. Sprinkle edge with combined granulated sugar and cinnamon.
- Bake 30 min. or until edges are golden brown. Serve topped with COOL WHIP and coconut.

EASY KEY LIME PINEAPPLE PIE
I can eat this whole pie! However, I do share it with my boys... and they LOVE it. Highly recommend. Learned the recipe from my late sister.

Steps:
- 1. Blend Pineapple chunks until juicy with pulp.
- 2. Place Pineapple juice (with pulp), sweetened condensed milk,frozen limeade concentrate, and heavy whipping cream in to a bowl of an electric mixer. Make sure you have the whisk attachment connected.
- 3. Mix until contents are mixed and fluffy.
- 4. Pour filling into the graham cracker crust. Smooth out the top.
- 5. Refrigerate at LEAST 4 hours. I generally keep it in the refrigerator over night.
- 6. Hide it from the kids and enjoy!
