1 pound beef top round steak, cut into 1/4-inch x 2-inch strips
1 tablespoon paprika
2 tablespoons butter
1 can (10-1/2 ounces) beef broth
2 garlic cloves, minced
2 medium green peppers, cut into strips
1 cup thinly sliced onion
2 tablespoons cornstarch
2 tablespoons reduced-sodium soy sauce
1/3 cup cold water
2 fresh tomatoes, peeled and cut into wedges
Cooked rice

Steps:

  • Sprinkle meat with paprika. In a large skillet, melt butter over medium-high heat. Brown beef. Add broth and garlic. Simmer, covered, for 30 minutes. Add green peppers and onion. Cover and continue to simmer for 5 minutes. , Combine cornstarch, soy sauce and water; stir into meat mixture. Cook and stir until thickened. Gently stir in tomatoes and heat through. Serve over rice.

This is a delicious, easy recipe that will be sure to please your family. It can easily be adjusted to your own taste. (Thru trial and error, I've based this recipe on my what I could get my kids to eat when they were young). This can also be prepped the night before and thrown in the crockpot in the morning to be ready by dinnertime.

1 (1 1/2 lb) thick cut beef round steak (not ground)
2 tablespoons vegetable oil
1 medium onion, sliced
1 large green bell pepper, sliced
2 (8 ounce) cans tomato sauce
1 (8 ounce) can water
2 tablespoons ketchup (optional)
1 tablespoon garlic powder
2 teaspoons salt
2 teaspoons black pepper

Steps:

  • Slice the onion and green bell pepper into 1/4" thick slices, set aside.
  • Place round steak on cutting board. Trim off any excess fat from around the edges. Using a meat mallet (pointed side), tenderize the steak until it is approx 1/2" thick. Cut round steak into 6 - 8 pieces.
  • Heat vegetable oil in large skillet over med-high heat.
  • Sprinkle the round steak with half of the salt, black pepper & garlic powder, to taste. Lay pieces of round steak (seasoned side down) into the heated oil, working in batches and adding oil if necessary. While browning the first side, season the top sides with the remaining salt, pepper & garlic powder. Brown approx 2 minutes, then flip to brown the other side.
  • At this point, you can throw ALL of the ingredients into a crock pot insert (or you can reserve peppers and onions until 1 hour before done and then add to crockpot, so they are firmer). Cover the insert and refrigerate overnight to start in the morning on low for 6-8 hours (be sure to let insert rest on counter for 30 minutes before placing into the crockpot), or you can start crockpot right away without refrigerating over night. Then refer to steps #7 - #8.
  • Now, this is how I usually prepare this dish. Using steps #1 - #4, add to skillet the onion, green bell pepper, tomato sauce, water and ketchup (if using). Add any additional seasoning, to taste. Stir to mix. Cover, lower heat and gently simmer approx 60 - 90 minutes, stirring occasionally.
  • While meat is simmering, you can prepare either mashed potatoes (my family's preferred choice) or egg noodles or white rice.
  • When the meat is fork tender, remove from heat and let rest for 10 minutes. Serve pepper steak and sauce over a bed of mashed potatoes, egg noodles or white rice and ENJOY!

STEAK FRITES WITH LEMON AND PEPPER SEASONING AND EASY HOLLANDAISE

1 pound russet potatoes
1/4 cup vegetable oil
3 tablespoons unsalted butter, melted
1 tablespoon seasoning salt
1 1/2 sticks (12 tablespoons) unsalted butter
2 large egg yolks
Juice of 1 lemon, plus more if needed
1/2 teaspoon cayenne pepper
Kosher salt
2 tablespoons black peppercorns
1 tablespoon lemon zest
1 tablespoon kosher salt
1 teaspoon garlic powder
1 teaspoon mustard powder
1 teaspoon onion powder
1/2 teaspoon granulated sugar
One 14-ounce rib-eye steak, 1 inch thick
One 8-ounce filet
5 tablespoons salted butter, melted
1/2 head iceberg lettuce, cut into wedges
Homemade or store-bought ranch dressing, for serving

Steps:

  • For the potatoes: Preheat the oven to 450 degrees F.
  • Slice the potatoes into thin wedges and put in a medium bowl. Add the oil, melted butter and seasoning salt and toss to coat. Arrange the wedges in a single layer on a baking sheet. Cook, turning once halfway through, until golden brown, about 25 minutes.
  • For the easy hollandaise: In a small saucepan, melt the butter until sizzling.
  • Put the egg yolks in a blender and turn to low to allow the yolks to combine. Begin pouring in the very hot butter in a thin stream; the blender should remain on the whole time, and the butter should be poured in very slowly. Keep adding the butter until it's all gone, then immediately begin adding the lemon juice. Check the blender to make sure the sauce is still liquidy and moving easily through the blades. If not, add a little more juice and give it a stir, then blend again. Add the cayenne pepper and a pinch of salt. Taste and adjust the seasoning. Transfer to a serving pitcher and cover with foil until serving.
  • For the lemon and pepper seasoning: In a ziptop bag, crack the peppercorns using a rolling pin. Add to a small bowl with the lemon zest, kosher salt, garlic powder, mustard powder, onion powder and sugar and mix well to combine.
  • For the steak: Heat a grill pan or large heavy-bottomed skillet over medium-high heat.
  • Brush the steaks with melted butter on both sides and season with the lemon and pepper seasoning. Cook, basting the steaks occasionally with more melted butter, until cooked to desired doneness, 2 to 4 minutes a side. Rest for a minute or so.
  • To serve, arrange the potato wedges on a platter, add the steaks and drizzle with the hollandaise. Serve with iceberg wedges and ranch dressing.

2 lbs boneless beef roast, cut into cubes (I use sirloin steak for this, but you can use any cut desired)
3 -4 tablespoons oil
1 (14 ounce) can beef broth
1 (14 ounce) can diced tomatoes, undrained
1 green bell pepper, chopped
1 onion, chopped
4 garlic cloves, minced (or to taste)
1/2 tablespoon Worcestershire sauce (or to taste)
2 tablespoons HP steak sauce (optional, but good to use)
1 bay leaf
1 teaspoon cajun seasoning (or to taste)
1/2 teaspoon crushed red pepper flakes (or adjust to heat level)
salt and pepper
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • In a large skillet, brown the beef cubes in hot oil over medium heat; drain fat.
  • Stir in broth, tomatoes, green pepper, onion, garlic, Worcestershire sauce and seasonings.
  • Bring to a boil; reduce heat and simmer for about 1 hour, or until meat is tender.
  • Discard bay leaf.
  • In a small bowl, combine cornstarch and water until smooth.
  • Stir into simmering sauce, and cook for about 2 minutes, or until thickened.
  • Serve with rice or noodles.

  • Heat grill to medium heat.

1 (14 1/2 ounce) can Mexican-style tomatoes or 1 (14 1/2 ounce) can Italian-style stewed tomatoes
1/3 cup tomato paste (with Italian seasoning)
1/2 teaspoon bottled hot pepper sauce
1 (16 ounce) package of frozen stir fry vegetables
4 cups noodles or 4 cups mashed potatoes

Steps:

  • Trim fat from meat. Cut meat into 8 serving size pieces. Lightly sprinkle with salt and pepper.

1/2 lb sirloin steak,cut into serving size
1/2 tsp salt
2 medium onions,chopped (about 1 cup)
1 c beef broth
1 clove clove of garlic,minced
2 green peppers,cut into 1 inch pieces
2 Tbsp cornstarch
1/4 c cold water
2 tomatoes, canned and cut up (8 ounce)
4 cups of hot cooked rice
3 Tbsp soy sauce
mushrooms( optional)

Steps:

  • 1. Trim fat and bone from meat;cut meat into 4 to 6 serving pieces.Grease large skillet lightly with fat from meat.Brown meat thoroughly on one side;turn and season with 1/4 teaspoon salt. Brown other side of meat;turn and season with remaining salt.
  • 2. Push meat to one section of skillet.Add onions,cook and stir until tender.Stir in beef broth,soy sauce and garlic.Cover;simmer 10 minutes or until meat is tender. Add green peppers.Cover,simmer 5 more minutes.
  • 3. Blend cornstarch and water;stir gradually into meat mixture.Cook,stirring constantly,until mixture thickens and boils.Boil and stir for 1 minute.Add tomatoes;heat thoroughly. Serve over rice.

Growing up, my father made this pretty frequently. You can imagine my surprise when I asked him for the recipe and was given this! Needless to say, it was not what I expected, but it was every bit as good as I remembered. Great served over rice or wide egg noodles.
