SUPREMELY EASY CHOCOLATE MOUSSE
Although cool whip can never take the place of whipping cream it can cut down the calories, make a very quick dessert and taste lovely as well. I served this in small dessert dishes with a very small piece of chocolate to garnish. Although I used milk chocolate, it could also be made with dark. The idea for this recipe came from Kraft.

Steps:
- Melt chocolate in a double boiler or carefully in the microwave.
- Pour the melted chocolate into the cool whip.
- Whisk gently until it is well combined.
- Refrigerate for 1 hour.
- Spoon into small dessert dishes and garnish with small chocolate piece.

CLASSIC CHOCOLATE MOUSSE

Steps:
- For mousse: Heat whipping cream gently in double-boiler or small saucepan until it comes to a simmer.
- Remove from heat and add chocolate.
- Stir until the chocolate has completely melted.
- Whisk in the egg yolks and brandy.
- Set aside to cool completely.
- Beat 1/3 cup cream, sugar and vanilla in medium bowl to stiff peaks.
- Fold into cooled chocolate mixture.
- Spoon into wineglasses.
- Cover with plastic wrap and refrigerate until firm, about 3 hours.
- For cream: Beat cream, sugar and brandy in medium bowl to soft peaks.
- Top mousse with dollops of cream.

Steps:
- Position knife blade in food processor bowl; add chocolate morsels, vanilla, and salt. Process 30 seconds.
- In a small saucepan, heat 3/4 cup whipping cream to just boiling. With processor running, add hot cream through food chute; process 30 seconds or until chocolate completely melts. Add egg yolks; process 5 seconds or until smooth. Transfer mixture to a large mixing bowl; cool completely.
- Beat egg whites (at room temperature) until stiff peaks form. Gently fold into chocolate mixture. Spoon into a 1 quart serving bowl or individual bowls. Cover and chill thoroughly.
- To serve, garnish mousse with whipped cream and chocolate fans.

EASY CHOCOLATE MOUSSE
Usually when I say my grandmother, I mean my maternal one, but this is one of the few recipes I have from my paternal grandmother. She died when I was a toddler but I sure do remember this mousse! It really is quite simple to make and is delicious and elegant served with fresh berries of any sort.

Steps:
- Melt chocolate with hot water. To melt completely, it may be necessary to place the bowl in a pan of hot water.
- Cool and then add beaten eggs.
- Add Grand Marnier.
- Carefully fold in whipped cream.
- Chill and serve.

- Microwave chocolate morsels and 1/2 cup cream in a glass bowl at HIGH for 1 1/2 minutes or until melted and stirring twice.
- Stir in vanilla and rum, blending well.
- Cool 5 minutes.
- Beat remaining 2 cups cream at medium speed with an electric mixer until soft peaks form.
- Fold cream in chocolate mixture.
- Pipe or spoon into a large serving bowl or individual dessert glasses.
- Garnish with additional whip cream and grated chocolate, if desired.
- Chill 2 hours.
