4 Boneless (Skinless Chicken Breasts)
Salt and Pepper (to taste)
.7 oz Italian Dressing Mix Packet
21.5 oz Cream of Chicken Soup ((2-10.75 oz cans))
8 oz Package Cream Cheese (Softened)
Serve with Cooked Rotini Pasta

Steps:

  • Place Chicken in slow cooker.
  • Season with salt and pepper.
  • Mix remaining ingredients (except pasta) with a mixer until fluffy.
  • Slather sauce ingredients over the top of the chicken.
  • Cook on low for 3-4 hours until chicken is fully cooked and tender.
  • Serve over pasta.

4 -6 boneless skinless chicken breasts, halved
1 (1 1/4 ounce) envelope dried Italian salad dressing mix
2 ounces water
8 ounces cream cheese, softened
1 (10 1/2 ounce) can reduced-sodium cream of chicken soup, undiluted (or regular soup)
1 (4 ounce) can mushroom stems and pieces, drained
hot cooked rice or pasta

Steps:

  • Place the chicken breast halves in the crock pot.
  • Combine the Italian dressing mix and water until smooth; pour over top of chicken.
  • Cover and cook on low for 3 hours.
  • Combine the cream cheese and soup until smooth and blended.
  • Stir in mushroom pieces.
  • Pour soup mixture over chicken.
  • Cook 1 hour more or until chicken is cooked through.
  • Serve over hot cooked rice or pasta.

This is so easy, it's almost embarassing posting it. Perhaps a version is already here, but this is how we do it. Try the chicken with homemade dumplings, like my daughter begs for, but DO make the dumplings separately in a steamer or separate pan, or it will take longer than an "easy-peasy" recipe calls for!

4 -6 boneless skinless chicken breast halves
1 (8 ounce) bottle Italian dressing (I use Kraft Free Zesty)
1 (8 ounce) package low-fat cream cheese (Neufchatel is what I use)

Steps:

  • Place chicken in crock pot. It may be frozen if the chicken is the smaller, split and trimmed type of boneless breast.
  • Cube the entire block of cream cheese and place evenly over the chicken.
  • Pour the Italian dressing over the chicken and cheese, making sure to get some dressing on each part of the chicken.
  • Cook on med-low, 6-8 hours.
  • Before serving, stir gently to combine juices, dressing and cheese thoroughly to use as sauce. Serve with pasta or rice, or dumplings as above.

A creamy, yummy chicken dish to serve over thick pasta, like egg noodles or farfalle. This pleased everyone! It's easy to prepare and highly addictive. Easy to make lower calorie/fat with low fat cream cheese and low fat/salt soup! Serve sprinkled with Parmesan cheese, if desired.

4 (4 ounce) skinless, boneless chicken breast halves
2 tablespoons butter, melted
1 (4 ounce) package cream cheese, cubed
1 (10.75 ounce) can condensed cream of chicken soup
1 ½ (.7 ounce) packages dry Italian-style salad dressing mix
½ cup dry sherry

Steps:

  • Rinse chicken, and pat dry with paper towels. Place chicken breasts into a slow cooker, and drizzle melted butter all over the chicken breasts, lifting them up to allow butter to flow underneath the chicken. Cover the cooker, set to High, and cook until tender, 4 to 5 hours. With a metal spatula, chop up the chicken into bite-size pieces in the slow cooker.
  • Place the cream cheese, cream of chicken soup, Italian salad dressing mix, and sherry into a saucepan over medium heat, and bring to a boil, stirring constantly until the cream cheese has melted and the sauce is well combined. Pour the sauce over the chicken in the slow cooker; cover, and cook on High until the flavors have blended and the sauce is bubbling, about 30 more minutes.
