2 cups sugar
1/2 cup whole milk
1-1/3 cups peanut butter
1 jar (7 ounces) marshmallow creme

Steps:

  • Line an 8-in. square pan with foil; grease with butter., In a heavy saucepan, combine sugar and milk; bring to a boil over medium heat, stirring constantly. Boil 3 minutes, stirring constantly. Remove from heat., Stir in peanut butter and marshmallow creme until blended. Immediately spread into prepared pan; cool slightly., Refrigerate until firm. Using foil, lift fudge out of pan. Remove foil; cut into squares. Store between layers of waxed paper in an airtight container.

  • Empty entire jar of peanut butter in a mixing bowl.
  • Heat vanilla frosting in its container (make sure you pull off all the foil lining) in microwave for about 60 seconds or until completely melted.
  • Pour the melted frosting in the bowl with the peanut butter and mix well.

2 c sugar
1/2 c milk
1 tsp vanilla extract
3/4 c peanut butter

Steps:

  • 1. Butter an 8 x 8" baking dish or any dish of similar size. I used a pie plate for this photo. Have all ingredients measured out before starting since you'll be stirring constantly once you start.
  • 2. In a saucepan over MEDIUM heat, bring the sugar and milk to a boil, stirring constantly. Once it's bubbling all over, boil for EXACTLY 2 1/2 minutes. (I set the timer on the microwave. Really.)
  • 3. Remove from heat. Stir in the vanilla extract. Then stir in the peanut butter. Blend well, but quickly, until smooth.
  • 4. Pour into buttered dish and smooth out. Cool before cutting into pieces.

This recipe is very simple, but if you do not know how to make candy then please follow instructions precisely. I have altered the instructions after a few reviews that it was crumbly. This is not the recipes fault, it is inexperience. Proper candy making is about temperatures. 4 minutes of boiling (from the time the first small bubbles form) bring this candy up to proper fudge/softball temperature as long as you are cooking over medium heat. When in doubt, use a thermometer.

4 cups granulated sugar
1 cup milk
2 cups peanut butter
1 tablespoon butter
1 tablespoon vanilla extract

  • Prepare a 9x11 glass dish by buttering the bottom.
  • In heavy bottom sauce pan combine sugar and milk.
  • Measure and set aside remaining ingredients.
  • Cook over MEDIUM HEAT (temperature too high will cause it to reach temperature sooner and lead to overcooking) stirring occasionally till it comes to a boil then stir constantly.
  • Let boil for 4 minutes EXACTLY, over cooking leads to crumbly fudge as it has moved past softball stage and into softcrack (measure from the first sight of littlest bubbles or use a thermometer - softball stage) I use a stop watch. Remove from heat.
  • Stir in remaining ingredients till all melted and smooth.
  • Pour into prepared dish and refrigerate until firm.

8 oz cream cheese, room temperature
1/2 c peanut butter
5 c powdered sugar
1 tsp vanilla
1/2 c walnuts or pecans

  • 1. Melt chocolate and cool to room temperature, if you are making the chocolate peanut butter version, if not skip this step.
  • 2. Add cream cheese and peanut butter to chocolate (if making the chocolate peanut butter version), if not just mix the cream cheese and peanut butter and proceed with the recipe..
  • 3. Add sugar and vanilla, mixing well. Chop and add the nuts.

Easiest Peanut Butter Fudge Put one bag of Reese's peanut butter chips (I believe it was 12 ounces) in a glass bowl, and spread them so that they are not all in the middle of the bowl and they will melt easier. Cook in microwave for 1 minute and a half. Get out and stir, then stir in one can of vanilla cake frosting, stir real good and put in microwave and cook for 1 minute and a half, get out and stir, then put in 9 x 9 grease plate or pan, let cool, cut and eat. I also used milk chocolate and cream cheese frosting very, very good.

1 cup sugar
5 oz. BAKER'S Semi-Sweet Chocolate, divided
1-1/2 cups JET-PUFFED Miniature Marshmallows
1-1/4 cups milk, divided
1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding
2 cups thawed COOL WHIP Whipped Topping, divided
1 Tbsp. finely chopped PLANTERS COCKTAIL Peanuts, divided

Steps:

  • Heat oven to 350°F.
  • Spray 9-inch pie plate with cooking spray. Mix first 3 ingredients until blended; press onto bottom and up side of pie plate. Use back of fork to make cross-hatch design around edge. Bake 14 to 15 min. or until golden brown. Cool.
  • Microwave 4 oz. chocolate, marshmallows and 1/4 cup milk in microwaveable bowl on HIGH 1 min. or until chocolate and marshmallows are melted and mixture is well blended when stirred. Pour into crust. Refrigerate 10 min.
  • Beat pudding mix and remaining milk with whisk 2 min. Stir in 1 cup COOL WHIP; spoon into crust. Cover with remaining COOL WHIP. Refrigerate 2 hours or until firm.
  • Meanwhile, grate enough of the remaining chocolate to measure 1 tsp.; reserve for garnish. Draw 8 (2-inch-wide) stars on paper; place under sheet of waxed paper on baking sheet. Melt remaining chocolate as directed on package; spoon into small resealable plastic bag. Press out excess air from bag; seal bag. Cut 1/8-inch-piece from one bottom corner of bag. Use to pipe chocolate around outlines, then onto centers of stars; sprinkle with 2 tsp. nuts. Refrigerate until ready to use.
  • Garnish pie with chocolate stars, grated chocolate and remaining nuts just before serving.

I found this recipe while looking for something special to make my diabetic uncle for thanksgiving. A word on the sweetener. I have tried different combinations of sweeteners, including Splenda packets, Sweetzfree liquid Splenda, and powdered erythritol. I had the best results using the powdered erythritol and Sweetzfree, which is a very concentrated liquid. I have found that with chocolate, using artificial sweeteners with no sugar alcohols produces only an "OK" result. Adding a low glycemic sugar alcohol (not maltitol) improves the flavor and texture when working with unsweetened chocolate.

1/2 cup half-and-half cream

I have tried different combinations of sweeteners, including Splenda (sucralose) packets, concentrated liquid sucralose (Sweetzfree or EZ-Sweetz), and powdered erythritol (not granulated).
