1 cup peanut butter
1 cup crushed walnuts
½ cup semisweet chocolate chips
¼ cup honey, or more as needed

Steps:

  • Combine oats, peanut butter, crushed walnuts, chocolate chips, and honey in the bowl of a stand mixer fitted with the paddle attachment; beat until well combined, adding more honey if the mixture is not holding together.
  • Form 24 balls with a cookie scoop and place on a cookie sheet. Refrigerate until firm, 30 to 60 minutes.

3/4 cup peanut butter, smooth
1/4 cup margarine, softened
1/2 teaspoon vanilla
1 1/2 cups powdered sugar
8 ounces chocolate chips

Steps:

  • In a medium bowl knead peanut butter, margarine, vanilla and sugar, with your hands, until smooth dough is formed.
  • Shape into half-inch balls, place on tray lined with wax paper and freeze for at least one hour.
  • Melt chocolate in the microwave.
  • Use 20-second zaps and mix in between each zap until smooth.
  • Insert a toothpick into each peanut butter ball and dip ball into melted chocolate.
  • Return to wax paper and refreeze.
  • Store in airtight container and serve from frozen.

  • Mix the butter and peanut butter in a large bowl.

Use only smooth peanut butter or the balls will not hold together, these are even great without the chocolate coating, plan ahead the peanut butter balls need to chill for a few hours before coating in chocolate, cooking time is chilling time.

1 1/2 cups peanut butter (use only smooth peanut butter)
1 cup melted butter or 1 cup margarine
4 cups confectioners' sugar
1 1/3 cups graham cracker crumbs
2 cups semi-sweet chocolate chips
2 tablespoons Crisco shortening

Steps:

  • In a bowl combine the peanut butter with confectioners sugar and graham crumbs until well combined.
  • Add in the melted butter and mix thoroughly until combined (I find that using my hands for mixing works better than a spoon, if the mixture is not holding together add in a little more melted butter).
  • Using hands shape into small balls (about 1-inch).
  • Place the balls on a plate and refrigerate until completely cold (about 2 hours).
  • After the balls have chilled I like to re-roll them again to make a perfect shaped ball but that is optional.
  • In the microwave melt the chocolate with the shortening until smooth, removing once and stirring.
  • Dip the COLD balls into the chocolate mixture to coat.
  • Place on a baking sheet lined with parchment or waxed paper to set.

1/2 cup oatmeal
1/2 cup sunflower seeds
1 cup raisins
1 tablespoon honey
1 tablespoon flax seed (optional)
1 tablespoon wheat germ (optional)

Steps:

  • Mix peanut butter, oatmeal, sunflower seeds, raisins, and honey.
  • Roll mixture into balls.
  • Mix equal amounts of flax seeds and wheat germ in a bowl and roll the balls in this mixture (optional).
  • Let balls sit in the refrigerator for at least 30 minutes.
  • Additional Notes:
  • You can make some substitutions with the ingredients. For example, substitute the raisins for chocolate chips or chopped nuts instead of sunflower seeds. There are many possibilities, just be careful and keep the ratios consistent.
  • Also, I used natural peanut butter which caused my mixture to be more dry. If this is the case add a little milk; about 1/2 tablespoon at a time.

This is a great recipe for the kids to help!!! They are so yummy and fun!!! Makes about45-50 Peanut Butter balls.

3/4 jar(s) creamy peanut butter (16. oz jar)
1 lb box powdered sugar (approx 3 1/2 cups)
1 stick unsalted butter
1 tsp pure vanilla extract
8 oz chocolate almond bark

Steps:

  • 1. Line large cookie sheet with "wax paper" Mix all ingredients (except Chocolate) together in large bowl with your hands (This is messy, but the best way) After the mixture comes together, start rolling 1 inch balls and place on cookie sheet and put in freezer for about 20 min. ( Makes about 45-55)
  • 2. After 20 mins take out peanut butter balls, in a medium glass bowl melt chocolate in microwave. (I use 25 second intervals until chocolate is melted) Usually about 1- 1 1/2mins. Give it a quick stir and start dipping P/B Balls "using a toothpick" working at a fast pace, as the chocolate will cool off fast. Place back on cookie sheet a let cool for about 25 mins. Enjoy!!

1 c creamy peanut butter
3 Tbsp milk
2 c confectioners sugar
chocolate bark candy coating, melted

Steps:

  • 1. place the butter and peanut butter into a medium bowl. and beat with an electric mixer. gradually mix in the sugar, and when it starts to get thick, incorporate the milk 1 tablespoon at a time until the sugar is mixed in and the frosting is thick and spreadable. beat for at least 3 minutes for it to get good and fluffy.
  • 2. next put the frosting into a piping bag or a zip lock bag and snip off the end of it. pipe small mounds of frosting onto a baking sheet lined with wax paper or parchment paper. and put them into the freezer till hard enough to work with.
  • 3. melt the chocolate while the frosting is in the freezer and when the frosting is ready take out and working quickly dip into the chocolate and covering the mound then return to pan and when all are covered with chocolate place in the freezer until chocolate is set. Then enjoy or place in covered container and refrigerate.

3/4 cup granola cereal
1 teaspoon chia seeds
1 dash cinnamon sugar
20 candies or 20 candy sprinkles
1 tablespoon honey
6 -7 cupcake liners

Steps:

  • Place 1 cup peanut butter in a medium to large bowl. Add 3/4 cup of granola and mix well with a large spoon.
  • Add a sprinkle of cinnamon sugar, a tablespoon of honey, some candy or sprinkles and finish with a teaspoon or less of chia seeds. Mix well.
  • Scoop up a spoonful of the mix with your large spoon and place it gently into a cupcake liner. Repeat until bowl is empty.
  • Put all the cupcake liners in the freezer for 2-5 minutes. Top with a bit more cinnamon sugar or honey if you would like. Refrigerate until its time to eat!

2 c powdered sugar
1/2 tsp vanilla extract
12oz bag(s) nestle's semi- sweet morsels

Steps:

  • 1. Mix the peanut butter, butter, vanilla extract and powdered sugar in a bowl. Stir until combined. Shape into approximately 1-inch balls and place on baking pan. Put in Freezer for about 20 minutes. Melt Nestle's Semi- Sweet Morsels according to Pkg ( I Microwaved ).

Peanut Butter Balls are a no bake peanut butter truffle covered in chocolate! With just a few ingredients, buckeyes are an easy holiday treat

1 1/2 cups smooth peanut butter ((not natural) (435 grams))
1/4 cup unsalted butter ((room temperature) (56 grams))
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups powdered icing sugar ((240 grams))
250 grams chopped solid chocolate bars ((not chocolate chips))
2 teaspoons canola oil

Steps:

  • In a large bowl, combine peanut butter, butter, vanilla and salt with an electric mixer until smooth.
  • Gradually add the powdered sugar, mixing with an electric mixer until combined. It might be crumbly, but when you press it together it will form a smooth ball. If it is too sticky, add a little more sugar. If it is too dry, add a bit more peanut butter or butter.
  • Roll into 1 inch balls (squeeze it first in your hands so it comes together) -- I get about 30 from this recipe. Refrigerate for 1 hour, or pop in the freezer for 15 minutes until chilled.
  • Make a double boiler to melt your chocolate: place 1" of water in a small pot and bring it to a simmer over medium high heat.
  • Find a glass bowl that fits over the top of the pot and sits on the top edges, but will not touch the water. Add the chocolate and oil to the bowl and place it over the simmering water. Stir often until melted and smooth.
  • Use a toothpick to skewer each peanut butter ball, then dunk in chocolate. Allow the excess to drip off and then place on a parchment lined baking sheet to set.
  • You can allow them to set at room temperature, or pop into the refrigerator to serve quickly.
  • I prefer to store these in the fridge so the chocolate doesn't get soft, but they will last a day or two at room temperature.
