EASY PEACH COBBLER WITH CAKE MIX



Easy Peach Cobbler with Cake Mix image

This is a quick but company-worthy cobbler. So simple, yet wins rave reviews. If desired, use 2 (32 ounce) cans of peaches in place of fresh peaches. If doing this, use peach syrup instead of water and then omit the white sugar from recipe. Also, yellow cake mix can be substituted for the white.

12 fresh peaches, pitted and sliced
1 cup water
1 cup white sugar
½ teaspoon ground cinnamon
1 (18.25 ounce) package white cake mix
1 (8 ounce) package cream cheese
½ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread peach slices evenly into a 9x13 inch baking dish. If using canned peach juice, pour 1 cup of it over peach slices. If using fresh peaches, combine water and sugar in a small bowl. Stir to dissolve, then pour mixture over peaches.
  • Sprinkle cinnamon over peach slices, followed by dry cake mix. Top cake mix with pats of cream cheese. Dot cobbler with butter or margarine.
  • Bake in preheated oven for 45 minutes, until golden.

1 (16 ounce) can peach slices in syrup
1 (18 ounce) package yellow cake mix (or 18 ounce package white cake mix)
1 cup butter, melted
1 1/3 cups shredded coconut (optional)
1 cup chopped nuts
1/2 teaspoon cinnamon

Steps:

  • Dump all ingredients, in layers, in order as given, into a 9 X 13 inch baking pan.
  • Bake at 350 degrees for 45- 50 minutes, or until lightly browned and bubbly.
  • If chopped nuts have a tendency to brown too soon, cover pan with foil after 40 minutes.

Fresh juicy nectarines or peaches in a delicious, easy to make cake batter makes for a special treat. Top with a glaze of your choice.

2 1/2-3 c finely chopped nectarines or peaches (about 5-6)
3/4 c peach or apricot nectar
1/4 c oil
4 large eggs
1 tsp cinnamon
1 pkg (18 ounce) yellow or vanilla cake mix
1 c chopped pecans

Steps:

  • 1. Beat the eggs with oil and peach nectar, using an electric mixer, until blended. Add cinnamon and cake mix and continue beating on high speed for 2 minutes.
  • 2. Beat in the finely chopped nectarines or peaches and chopped pecans.
  • 3. Spoon the batter into a greased and floured Bundt pan.
  • 4. Bake at 325 degrees for 55-60 minutes.
  • 5. Cool on a rack for 15 minutes; invert and cool completely.

2 cups flour
2 cups sugar
2 eggs
2 teaspoons baking soda

1 (14 ounce) can Milnot Condensed Milk (or 1 12 ounce can evaporated milk, plus 1 cup brown sugar)
1 cup coconut

The easiest, extremely moist, delicious cake. Serve with a lemon glaze. It can also be made as a layer cake. Use a butter cream or lemon or peach frosting.

1 pkg (18 ounce) yellow cake mix
1 can(s) (21 ounce) peach pie filling
4 eggs
1/2 tsp lemon extract
1/2 c chopped nuts
1/3 c oil
GLAZE
1/2 c butter
2 c powdered sugar
2 Tbsp lemon juice
PEACH FROSTING
1 box (4 serving size) peach gelatin
1/4 c water
4 1/2 c powdered sugar
2-3 Tbsp water
2 tsp lemon juice
1/2 c butter

Steps:

  • 1. Mix cake mix, eggs, oil and lemon extract until smooth. It will be fairly stiff. Chopping the peaches in the pie filling in half works well. Gently fold pie filling into cake mixture until blended. Add nuts.
  • 2. Pour into a greased and floured Bundt pan. Bake at 350 degrees for 55-60 minutes. If baking a layer cake, use 2 nine inch layer cake pans and bake for 33-38 minutes. Cool.
  • 3. Glaze: Mix all glaze ingredients together and if needed, add a little milk to spread. Spread on cake. Frosting: In a 2 cup microwavable bowl or measuring cup, stir 1 box gelatin into 1/4 cup water. Microwave, uncovered, on high for 1 minutes 30 seconds or until mixture boils, stirring 2-3 times to dissolve gelatin.
  • 4. In large bowl, beat gelatin mixture, powdered sugar, butter, lemon juice and 2 tsp. water on low speed until frosting is thick but spreadable. Add additional 1 tsp. water, if needed, to make frosting spreadable.
  • 5. Try it with chocolate cake and cherry pie filling, omitting lemon extract and use almond extract. Use a chocolate glaze or chocolate frosting for layer cake. Try it with spice cake mix and apple pie filling and use vanilla extract instead of lemon extract. For glaze, omit lemon juice, use apple juice with spice cake mix. For layer cake use a cream cheese frosting.

  • Instructions Grease bottom of a 9x13 pan. Pour in yellow cake mix (dry). Pour can of peaches over cake mix. Melt butter and pour over the top of the peaches and cake mix. Bake in a pre-heated 350° for 40 minutes or until bubbly.
