Easy To Do Oven BBQ Chicken image

This is a quick and easy way to make some good barbecued chicken. The honey makes it fairly sweet. Try it with fresh steamed vegetables and some mashed potatoes.

½ cup ketchup
½ cup honey
¼ cup red wine vinegar
4 cloves garlic, minced
4 tablespoons olive oil
6 cut up chicken pieces

Steps:

  • In a medium, nonreactive bowl, combine the ketchup, honey, vinegar and garlic. Mix well, cover and refrigerate for at least 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the olive oil in a large skillet over medium high heat. Add the chicken parts and saute for 2 to 3 minutes per side, just to sear the meat. Transfer chicken to a 9x13 baking dish and cover each piece well with the reserved sauce.
  • Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes, basting with the sauce every 15 minutes.

MEMPHIS BBQ SAUCE:
1 1/2 cup(s) ketchup
1/4 cup(s) mustard
1/8 cup(s) minced onion
1/3 cup(s) apple cider vinegar
1 tablespoon(s) hot sauce
1 teaspoon(s) garlic powder
1 teaspoon(s) onion powder
1/2 teaspoon(s) allspice
1/2 teaspoon(s) chili powder
1/4 teaspoon(s) red pepper
1 teaspoon(s) black pepper
1 tablespoon(s) kosher salt
1/2 teaspoon(s) red pepper flakes
1/4 cup(s) honey
1/3 cup(s) brown sugar
1 tablespoon(s) worcestershire
1 tablespoon(s) liquid smoke
CHICKEN SEASONING:
1 teaspoon(s) smoked paprika
1 teaspoon(s) granulated sugar
1 teaspoon(s) kosher salt
1 teaspoon(s) ground cumin

Steps:

  • For Chicken Wings: Put the chicken wings in a bowl. Add all the ingredients in the bowl with the chicken wings. Put it in the refrigerator for 30 mins to marinate. After the 30 mins put it on a rack with a baking pan. Put aluminum on the pan for easy cleaning, spray the rack with a non-stick spray, so the chicken wings won't stick to the rack. Line the chicken wings evenly on the rack. Pre-heat the oven to 400 degrees, cook the wings for about 55 mins. Halfway through the process turn the wing over, 5 mins before it finish base the wings with the BBQ sauce, after it is finished turn and base the other side. For BBQ Sauce: Put the ingredients in a sauce pan. Bring it to a boil, and cook it for 1 min. Reduce the heat and allow it to simmer for 7 - 10 mins stirring occasionally. Place the sauce in a heat resistant bowl and wait for the wings to finish cooking, base the wings with the sauce. Enjoy it!!!!!

I made up this recipe the other night for my roommate and I when we were low on ingredients (and energy...) and it ended up being really good without being high in fat or calories.

2 chicken breast halves
1/2 cup barbecue sauce (I like sweet Baby Ray's)
1/2 onion, sliced
1/2 cup shredded reduced-fat cheddar cheese
1 dash garlic powder
1 dash fresh black pepper
1 dash chili powder

Steps:

  • preheat oven to 375.
  • scatter sliced onion pieces in a casserole dish.
  • place chicken breasts on top of onions.
  • season chicken with garlic powder, pepper, and chili powder.
  • pour bbq sauce over chicken.
  • bake for 30 minutes.
  • top with cheddar cheese.
  • return to oven for 3-5 mins, or until cheese is melted.
  • enjoy!

1 whole chicken, cup up
Salt and pepper
Garlic powder
1 entire bottle Kraft Original BBQ Sauce
1/2 cup water
1/2 cup catsup
2 tsp dried parsley
3 small red potatoes
3 med carrots, cut into pieces

Steps:

  • Place chicken skin side up in oven safe casserole and season with salt, pepper and garlic powder on both sides. Pour Kraft Original BBQ Sauce over chicken.
  • In small bowl mix water, catsup and dried parsley. Stir until well blended and pour over chicken and BBQ sauce. Cut up potatoes into halves and add to dish along with already cut carrots.
  • Cover with foil and bake in 425°F oven for 40 min. Take out and bake uncovered for remaining 5 min just to form a nice little crust on the chicken.
