EASY PICKLED ONION RINGS
Feast on these lager-battered pickled onion rings as a snack, or serve as part of an American-themed spread, with BBQ chicken pieces and mac 'n' cheese

Steps:
- Tip the vinegar, sugar, 50ml water and 1 tsp salt into a pan, bring to the boil, then remove from the heat. Add the onions to the pan, cover and leave to cool and pickle. Will keep for 24 hrs.
- Pour the oil into a large pan until it's no more than a third full and heat to 180C. Mix the flour, cayenne pepper, ground coriander and 1 tsp salt together in a bowl and set aside.
- To make the batter, combine the flours and bicarbonate of soda in a bowl, then slowly whisk in the lager. Drain the pickled onion rings and coat in the spiced flour mixture. Carefully dip them, one at a time, into the batter, then fry in the hot oil for 2-3 mins until golden and crisp. Drain on kitchen paper and season with the paprika and some sea salt.

Thinly sliced onion rings with a mild flavor. I was trying to copy some onion rings I had at Cheeseburger in Paradise, and these are pretty close.

Steps:
- Slice the onion as thinly as possible (a mandolin would be perfect, but I don't own one, so I used a sharp knife.).
- Soak the onion in the buttermilk for 15 minutes, or while the oil is heating.
- Toss the onion slices in a plastic bag with the baking mix until well coated.
- Drop the coated rings into the hot oil, fry for approximately 4 minutes, turning half way through so that both sides are the same color (should be light brown, and you will likely see the onion "peeking" through the coating.
- Drain on a plate lined with paper towel.
- Serve hot with your favorite dip- Ranch dressing or ketchup are both good with these.

- mix beer and dry ingredients in large bowl.
- Heat oil in fry pan or equivalent.
- Separate onion slices and gently mix in with beer mixture.
- Carefully put coated onion slices in hot oil, just enough for one layer at a time, they will stick together if touching. Cook for about one minute until lightly brown and drain on paper towels.

- Heat oil in large skillet to medium heat.
- In a resealable bag, shake flour, corn meal, salt & pepper together.
- In a small bowl, mix egg and milk together.
- Dip onion rings in egg mix, then add to bag.
- Shake bag until all onion pieces are coated.
- Add onions into skillet and let cook on each side for about 4-5 minutes.
- Make sure onions are only halfway covered with oil, and don't overcrowd the pan.
- Once both sides are cooked, remove from oil and place on a plate with a paper towel to soak up excess oil.

EASY BAKED ONION RINGS

- Heat oven to 375°F. In small bowl, combine onion, margarine, Parmesan cheese, poppy seed, 1/4 teaspoon chili powder, garlic powder and pepper mix well. Separate dough into 4 rectangles firmly press perforations to seal. Cut each rectangle lengthwise into 2 strips, forming 8 strips. Spoon about 2 teaspoons onion mixture down center of each strip. Bring long sides of dough together over filling firmly pinch edges to seal. Twist each filled dough strip form into a ring. Pinch ends of strips together to seal.In small bowl, combine bread crumbs and 1/4 teaspoon chili powder. Dip tops and sides of rings in beaten egg and then in bread crumb mixture. Place crumb side up on ungreased cookie sheet. Bake at 375°F. for 10 to 15 minutes or until deep golden brown.
