1 pound ground beef
1 package (about 1 ounce) taco seasoning mix
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup
1 1/2 cups water
1 1/2 cups uncooked instant white rice
Pace® Chunky Salsa
Shredded Cheddar cheese
Shredded lettuce
Tortilla chips

Steps:

  • Cook the beef and taco seasoning in a 10-inch skillet until the beef is well browned, stirring often to separate meat. Pour off any fat.
  • Stir the soup, water and rice in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the rice is tender.
  • Top with the salsa, cheese and lettuce. Serve with the tortilla chips for dipping.
  • Serving Suggestion: Serve with carrot and celery sticks. For dessert serve chunky applesauce sprinkled with cinnamon.

This is our family favorite and it's so quick and easy. Only if your beef is thawed.

1 lb thawed ground beef
1 pkg taco seasoning mix
2 medium jalapenos or 1 small can of diced jalapenos
1 jar(s) mild or hot salsa
1 c mexican blend shredded cheese
1 c chopped romaine lettuce
1 1/2 c queso cheese
4 Tbsp sour cream
1 pkg dipping tortilla chips (herrs dippers)
1/2 c water

Steps:

  • 1. Brown ground beef in a 12" frying pan over medium heat. Chop larger chunks down finely while cooking. Drain.
  • 2. Stir in 1/2 cup of water and taco seasoning blend. Cover and simmer over low/warm heat for 10 minutes, stirring occasionally.
  • 3. Warm 1 1/2 cups of queso cheese in microwave safe bowl, stirring every 30 seconds until hot.
  • 4. Chop lettuce and dice jalapenos while the cheese is warming.
  • 5. With a draining spoon, serve the beef evenly onto 4 plates. Top each plate of beef with 1/4 cup of shredded cheese.
  • 6. Pour 1/4 cup of salsa on each plate of beef. layer tortilla chips around the beef on the plate.
  • 7. Top the beef and chips with the warm queso cheese.
  • 8. Add your lettuce and jalapenos evenly. Drop 1 tbsp of sour cream in the center. Serve immediately.

1 lb lean ground beef
5 -6 cloves garlic, minced
1 teaspoon adobo seasoning or 1 teaspoon seasoning salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper (optional)
1 (12 ounce) bag yellow corn tortilla chips
1 (15 1/2 ounce) can refried beans
1 lb cheddar cheese, shredded
1 -2 ripe avocado
1 clove garlic, minced
1 tablespoon fresh lemon juice
1 pinch salt
1 cup sour cream
4 -8 scallions, sliced
4 -6 fresh jalapenos or 4 -6 pickled jalapeno peppers, sliced (optional)
1 -2 ripe tomatoes, diced
1 1/2 cups salsa (optional)

Steps:

  • Brown beef in a large skillet with the 5-6 cloves garlic, adobo/seasoned salt, cumin, and cayenne, breaking up any lumps.
  • Continue to cook until beef is cooked through and drain any accumulated fat.
  • Heat refried beans, stirring until smooth and creamy; set aside.
  • Peel and deseed avocado, and mash with a fork in a bowl along with the extra clove of garlic, lemon juice, and salt to taste (double garlic and lemon juice if using 2 avocados).
  • Scatter chips in pretty much a single layer on a micro-wave safe plate.
  • Dot with small spoonfuls of refried beans and sprinkle with shredded cheese and seasoned cooked beef.
  • Microwave up to 1 minute or until cheese melts (you can also heat beans and cheese on chips in a moderate oven, but will have to transfer them back to the plate).
  • Add dollops of avocado (guacamole) and sour cream, then sprinkle with chopped scallions, chopped tomatoes and sliced jalapenos.
  • Add some salsa to the top if you desire.
  • Serve warm.
