GRILLED MOROCCAN CHICKEN

This healthy chicken recipe has become one of my go-to dinners! It's boasting with so many bright, aromatic flavors and it's one of the tastiest chicken recipes you'll have ever tried! Just be sure to allow enough time to marinade so chicken can really soak up that flavor.

4 (6 oz) boneless skinless chicken breasts*
1/4 cup olive oil
2 Tbsp fresh lemon juice
1 Tbsp minced garlic ((3 cloves))
1 Tbsp peeled and minced fresh ginger
1 1/2 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1/2 tsp ground cinnamon
1/4 tsp turmeric
1/3 cup chopped fresh cilantro, (plus more for serving)
Salt and freshly ground black pepper

Steps:

  • Pound thicker parts of a chicken breasts with the flat side of a meat mallet to even out their thickness.
  • In a medium mixing bowl whisk together olive oil, lemon juice, garlic, ginger, cumin, coriander, paprika, cinnamon, turmeric and cilantro. Season with salt and pepper (about 3/4 - 1 tsp salt and 1/2 tsp pepper).
  • Place chicken in a gallon size resealable bag. Pour marinade over chicken and seal bag while pressing out excess air.
  • Rub marinade over chicken breasts (and make sure marinade goes between chicken breasts). Transfer to refrigerator and allow to marinate at least 2 hours and up to 8 hours.
  • Preheat a grill over medium-high heat to about 425 degrees.
  • Grill chicken until center registers 165 degrees on an instant read thermometer, about 4 minutes per side for 6 oz chicken breasts.
  • Transfer to plate then cover and keep warm and let rest about 5 minutes before serving. Sprinkle with cilantro and serve warm.

1 pound skinless, boneless chicken breast meat - cubed
2 teaspoons salt
1 onion, chopped
2 cloves garlic, chopped
2 carrots, sliced
2 stalks celery, sliced
1 tablespoon minced fresh ginger root
½ teaspoon paprika
¾ teaspoon ground cumin
½ teaspoon dried oregano
¼ teaspoon ground cayenne pepper
¼ teaspoon ground turmeric
1 ½ cups chicken broth
1 cup crushed tomatoes
1 cup canned chickpeas, drained
1 zucchini, sliced
1 tablespoon lemon juice

Steps:

  • Season chicken with salt and brown in a large saucepan over medium heat until almost cooked through. Remove chicken from pan and set aside.
  • Saute onion, garlic, carrots and celery in same pan. When tender, stir in ginger, paprika, cumin, oregano, cayenne pepper and turmeric; stir fry for about 1 minute, then mix in broth and tomatoes. Return chicken to pan, reduce heat to low and simmer for about 10 minutes.
  • Add chickpeas and zucchini to pan and bring to simmering once again; cover pan and cook for about 15 minutes, or until zucchini is cooked through and tender. Stir in lemon juice and serve.

EASY MOROCCAN-STYLE CHICKEN BREASTS

An absolutely wonderful chicken dish, this dish has so much flavor, and is wonderful served with rice or couscous. Of coarse any part of the chicken may be used for this recipe. If you are using a 3-4 pound cut-up chicken, I suggest doubling all ingredients. I have even added in a coarsley chopped green bell pepper to this. You will love this chicken! Make certain to brown the chicken first, it improves the flavor in ths dish.

3 -4 tablespoons oil
2 lbs boneless chicken breasts
seasoning salt (can use regular salt also)
pepper
1 medium onion, chopped
1 tablespoon fresh minced garlic (or to taste)
2 1/2 cups salsa
1/2 cup water
1/3 cup currants (or more if desired)
3 tablespoons liquid honey
1 1/2 teaspoons cumin
1 teaspoon cinnamon
3/4 cup slivered almonds

Steps:

  • Season chicken pieces with salt and pepper, then brown in oil on all sides.
  • Transfer the chicken in a greased baking dish.
  • In the same frypan, saute onion and garlic; spoon over the chicken in the dish.
  • In a bowl, combine the salsa, water, currants, honey, cumin and cinnamon; pour over the chicken; mix with clean hands to slighty coat the chicken.
  • If you are adding in green bell pepper, just mix in with the salsa/honey mixture.
  • Cover and bake for about 45-50 minutes, or until chicken is done.
  • Sprinkle with slivered almonds.
  • Delicious.

1/3 cup extra virgin olive oil
1 tablespoon red wine vinegar
4 tablespoons tomato paste
4 cloves garlic ((minced))
2 teaspoon Ras el Hanout
1 teaspoon ground cinnamon ((divided))
3/4 teaspoon ground ginger
6 to 8 chicken thighs ((boneless, skinless))
kosher salt and black pepper
3 carrots ((cut into 1-inch pieces))
2 celery ribs ((cut into 1-inch pieces))
1 red onion ((large, halved and cut into 1/2-inch thick slices))
handful of raisins ((optional))
extra virgin olive oil
1 cup couscous
1 cup water ((or chicken broth))
kosher salt
1/2 teaspoon ground cinnamon
1 cup fresh parsley ((chopped))

Steps:

  • Heat the oven to 425 degrees F.
  • Make the seasoning rub. In a small bowl or glass measuring cup, add the olive oil, red wine vinegar, tomato paste, garlic, and spices. Whisk to combine.
  • Pat the chicken dry and season with kosher salt and black pepper on both side. Pour about 3/4 of the rub you just made all over the chicken (reserve the rest for later) and toss to make sure all the pieces are well coated. Set aside for now.
  • Put the vegetables and onions in a mixing bowl. Season with kosher salt and black pepper and pour the remaining seasoning rub. Toss to combine.
  • Transfer the chicken and vegetables to a large baking pan or rimmed sheet pan.
  • Bake in the center of the heated-oven for 40 to 45 minutes or until the chicken is fully cooked and the juices run clear. The vegetables should also soften and gain some char.
  • While the chicken and veggies are baking, prepare the couscous. Boil the water or both until bubbling. Heat a tablespoon of olive oil in a saucepan. Add the couscous and cook, tossing regularly, until the couscous is toasted to golden brown. Season with kosher salt and ½ teaspoon ground cinnamon. Add the boiled water. Immediately turn the heat off and cover the saucepan. Leave the couscous undisturbed for 10 minutes, the couscous should absorb all the liquid. When ready, add the fresh parsley and fluff the couscous with a fork.
  • When the chicken is fully cooked through, remove it from the oven. Spoon the couscous between the chicken pieces and allow it about 5 minutes to sop up some of the pan juices. Finish with the raisins, if you like.

1 tablespoon olive oil
4 boneless skinless chicken breasts
1 onion, chopped
1/2 lb butternut squash, peeled, seeded, cut into 3/4-inch pieces
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/8 teaspoon saffron thread
1 cup low sodium chicken broth
2 ounces kumquats, quartered lengthwise, seeded
2 ounces prunes, pitted
1 tablespoon honey
4 cups cooked rice or 4 cups couscous
2 tablespoons fresh cilantro, chopped

Steps:

  • In large heavy skilled, heat olive oil over medium-high heat.
  • Sprinkle chicken with salt & pepper, then add to skillet & brown, about 7 minutes per side.
  • Transfer chicken to plate.
  • Pour off all but thin film of fat from skillet, then add onions.
  • Reduce heat to medium & saute until very tender & beginning to brown, about 10 minutes.
  • Add squash & stir 2 minutes.
  • Add cinnamon, cumin & saffron & stir until fragrant, about 30 seconds.
  • Add chicken stock & bring to boil, scrapping up browned bits.
  • Add chicken with any drippings on plate, kumquats, pitted prunes & honey.
  • Cover skillet & simmer until chicken is cooked through, turning occasionally, about 30 minutes.
  • Uncover & boil until liquid thickens to sauceconsistency, if necessary.
  • Season to taste with salt & pepper. (Can be made 1 day ahead, then covered & chilled. Rewarm covered oveer medium heat.).
  • Mound rice or couscous on plates, then spoon shicken & sauce over.
  • Sprinkle with cilantro & enjoy!

Steps:

  • Mix cinnamon, cumin, turmeric, coriander, ginger, mint, salt, and pepper together in a bowl. Measure out 1/2 cup spice mix and set the remaining aside for another use.
  • Bring a small pot of water to a boil; add apricots and raisins. Cook until fruit is soft, about 5 minutes. Drain, reserving 1/2 cup of cooking water.
  • Pour enough olive oil into a large skillet or Dutch oven to coat the bottom; turn heat to medium. Coat chicken with the 1/2 cup spice mix and place in the hot oil; cook until golden brown and releases easily from the skillet, 3 to 4 minutes per side.
  • Mix onion and garlic into skillet with chicken; cook and stir until fragrant, 2 to 3 minutes. Add apricots, raisins, reserved 1/2 cup water from fruit, chicken broth, and honey; reduce heat to low and cover. Cook until chicken is very tender, 1 1/2 to 2 hours.
  • Serve chicken garnished with cilantro and almonds.
