This is a very easy bread to make. Monkey bread also has been called Bubble Bread and Pull Apart Bread.

24 ounces frozen dinner roll dough
1 cup packed brown sugar
1 (3.4 ounce) package instant butterscotch pudding mix
¼ cup white sugar
2 teaspoons ground cinnamon
½ cup chopped walnuts
½ cup melted butter

Steps:

  • The night or several hours before, grease and flour a 9 or 10 inch tube pan. Mix brown sugar and pudding mix together. Mix white sugar and cinnamon together. Place frozen dinner rolls in pan a layer at a time. Sprinkle brown sugar and pudding mix over first layer of rolls. Sprinkle sugar and cinnamon mixture over the brown sugar and pudding mixture. Spread half the nuts and melted butter over first layer. Repeat with the next layer.
  • Place on counter over night. Do not cover. Next morning bake in a preheated 350 degrees F (175 degrees C) oven for 30 minutes. Let stand a few minutes and turn pan over onto serving platter.

¾ cup white sugar
2 tablespoons caramel instant pudding mix, uncooked
2 teaspoons ground cinnamon
2 (16.3 ounce) cans refrigerated biscuit dough, separated and cut into quarters
12 slices bacon strips, cooked and crumbled
½ cup butter
¾ cup packed dark brown sugar
½ cup maple syrup
1 pinch salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat the inside of a 9-inch fluted tube pan with cooking spray.
  • Mix white sugar, pudding mix, and cinnamon together in a 1-gallon resealable plastic bag. Add the quartered biscuits and shake until well coated. Toss in the bacon and shake well to distribute. Transfer biscuits to the prepared tube pan. Save the sugar-cinnamon mixture left in the bottom of the bag.
  • Melt butter in a small saucepan over medium heat. Stir in dark brown sugar, maple syrup, and salt. Bring mixture to a boil and carefully stir until it begins to foam, about 1 minute. Pour the saved sugar-cinnamon mixture into the saucepan and stir until dissolved, 2 to 3 minutes. Pour the melted sugar mixture over the biscuits in the tube pan.
  • Bake in the preheated oven until the biscuits are puffed up and cooked through, 50 to 55 minutes. Cool in the pan for 10 minutes before inverting onto a serving plate.

  • Preheat oven to 350 degrees and generously coat a 3 quart Bundt pan with non-stick cooking spray.

This is a wonderful recipe to do with children. I have done with kids as young as 3 and as old as 9. This is also a good recipe for anyone who is intimidated by yeast breads. The recipe originated with Jane Zukin's Dairy-Free Cookbook, which helped me not panic when we figured out that my daughter is severely allergic to milk protein. Monkey Bread is somewhat traditional in the South. It is called Monkey Bread because you eat it like monkeys - tearing off chunks to eat.

1 (1/4 ounce) package active dry yeast
3/4 cup water
2 tablespoons sugar
2 tablespoons vegetable oil
1/2 teaspoon salt
1 egg, lightly beaten
2 1/2 cups flour, plus more for kneading
1/4 lb margarine (you'll use less)

Steps:

  • Heat the water to between 105 and 115 degrees F.
  • If working with kids, explain that this temperature will wake up the yeast but not kill it.
  • Dissolve the yeast in the water in a large bowl.
  • Stir in the sugar, oil, salt and egg.
  • Stir in 1 cup of flour until smooth.
  • This is officially known as a"sponge" since it does not have all the flour of the final dough.
  • Cover with a dishcloth and set in a warm place (over a bowl of warm water, in a slightly warm oven, in the microwave beside a cup of warm water, etc.).
  • Let rise for 15 minutes. NOTE: If the sponge is not bubbly and increased in volume, either the yeast was bad, the water was too hot, or the water was too cold). THROW IT AWAY - it will not make palatable bread! If you are sure that the water was the correct temperature (and you did not set the bowl to rise in a hot oven (smile)) get some new yeast.
  • This is useful time for cleanup and setting up for kneading.
  • Grease a square 9 inch pan.
  • If you want to make monkey bread, use a ring pan or a bundt pan and do not grease it.
  • Stir down the sponge (ooh and aah over how much it has grown first!) and add 1 1/2 cups flour.
  • Blend until well mixed.
  • Turn out onto a floured surface.
  • Knead 3 minutes adding flour if the dough is sticky.
  • If using the square pan, divide the dough into 16 pieces (good math exercise!), and shape quickly into balls.
  • If making monkey bread, divide the dough into 32 pieces (more math) and shape quickly into balls.
  • For the square pan, arrange the balls in the pan and smear tops with softened margarine.
  • For the monkey bread, roll each ball in melted margarine before arranging the balls in the ring or bundt pan.
  • Cover the pan with the dishcloth and set back in the warm place (described above).
  • Let rise for 25 minutes (depending on the timing with kids, I have been successful with as little as 20 minutes and as long as 30.) Preheat oven to 425°F (move the pan first if that is where the dough is rising, of course).
  • Bake 12 to 15 minutes or until light brown.
  • Remove from pan to a rack or plate to cool.
  • To make them even better (and more fattening), brush the tops with melted butter.
  • If you made monkey bread, eat the bread like a monkey by pulling off chunks.
  • The monkey bread is also excellent if you roll each dough ball in cinnamon sugar after rolling in margarine and before placing in the pan.
  • This makes a good breakfast bread.

12 Frozen Rhodes Dinner Rolls (or other frozen rolls), thawed but still cold
zest of two lemons
1/2 cup sugar
1/4 cup butter (melted)
1 cup powdered sugar
1 Tablespoon butter (melted)
2 Tablespoons fresh lemon juice

Steps:

  • Cut rolls in half and place in a 9x13-inch baking dish sprayed with nonstick cooking spray.
  • In a small bowl combine lemon zest and sugar; set aside.
  • Drizzle 1/4 cup melted butter over rolls and sprinkle on zest/sugar mixture, reserving half of mixture to sprinkle on just before baking.
  • Cover rolls with plastic wrap and let rise until doubled in size.
  • Remove plastic wrap and sprinkle on remaining lemon zest/sugar mixture.
  • Bake at 350 degrees F. for 20-25 minutes.
  • Remove from oven.
  • Whisk together glaze ingredients and drizzle over top of rolls.

2 - loaves frozen bread left in refrigerator overnite
1/3 cup(s) light brown sugar
2 tablespoon(s) unsalted butter
2 tablespoon(s) heavy cream
3/4 cup(s) chopped pecans
1/2 stick(s) melted butter
1/4 cup(s) sugar with as much cinnamon as you like

Steps:

  • Grease a Bundt pan with Crisco.
  • To make the glaze add brown sugar, butter and cream to a small saucepan. Stir continuously. As soon as the glaze comes to a boil, pour it into the Bundt pan so it puddles evenly in the bottom.
  • Add 1/2 of the pecan on top of the glaze.
  • Cut each loaf in 12 pieces.
  • Roll each piece in a ball and then in the butter and then in the sugar mixture.
  • Place in Bundt pan. After 1/2 of the dough is used pour the rest of the pecans over the balls.
  • Finish filling the pan with the dough. Cover with a light cloth and let it sit for about 30 minutes.
  • Bake in a preheated 350F oven for about 25-30 minutes until golden brown.
  • Take a knife and break the rolls away from the pan. Invert the pan on a dish and pour out.

  • Preheat oven to 400 degrees F (200 degrees C). Spray 8 muffin cups with cooking spray.

EASY PIZZA MONKEY BREAD, MAIN DISH OR APPETIZER



Easy Pizza Monkey Bread, Main Dish or Appetizer image

This can be made with canned biscuits as a crust which makes it quicker but not nearly as good. This recipe came from a local newspaper several years ago. I like to use it for an appetizer or snack. It makes a lot so its good for parties, potlucks, or family gatherings. Don't use too many topping ingredients or dough will get soggy. Choose your favorite 2 or 3 for best results. Also rising time for yeast dough is not included in prep time or baking time. Rising adds an hour to this recipe. Everyone likes this, especially those young in body or mind. :)

4-8 ounce(s) pepperoni, sliced

1/2 teaspoon(s) freshly ground black pepper to taste

1/2 cup(s) cooked ground beef or italian sausage
1/4 cup(s) chopped green bell pepper

2-4 tablespoon(s) shredded parmesan to sprinkle on pizza bread after removing from oven

Steps:

  • Grease a 9 by 13 inch baking pan and set it aside. In a medium bowl mix together peppeoni, cheese, seasonings, and any additional ingredients you wish to use. Set aside. Form thawed bread dough into 1-inch balls. Dip each ball into pizza sauce to coat LIGHTLY and place in greased pan. Cover pan and set in a warm place. Allow to rise until doubled in bulk.
  • Spread set aside topping ingredients on top of prepared dough. Bake at 350 degrees for 30-45 minutes. Time will vary based on inredients used in topping. If you use more it will take longer. Just watch and check crust for doneness. Remove from oven and sprinkle with Parmesan cheese, if desired. Cool in pan for 5 to 10 minutes before removing. Serve warm.

3 cans Cinnabon Cinnamon Rolls dough
1 c. sugar
1 tbsp. cinnamon
1/2 c. butter
1/2 c. brown sugar
2 tbsp. honey (or you could use Cinnabon syrup if you can get your hands on it)

Steps:

  • Preheat oven to 400º. Grease a bundt pan well, and set aside. Combine cinnamon and sugar in a large zip to bag. Open the cans of cinnamon roll dough. Cut each cinnamon roll in 2 pieces. Roll each piece into a ball and place about half of them into the zip top bag. Shake to coat the dough. Place the coated dough balls in the bundt pan. Place the remaining dough balls into the bag and repeat coating. Place all of the dough in the bundt pan. In a small bowl, microwave the butter, brown sugar, and honey for 1 minute. Stir well to dissolve the sugar. Pour over the dough balls in the bundt pan. Bake for 20-25 minutes, until dough on the outside is brown and the center feels "set" when you lightly push on it. Allow to stand for 5 minutes and then invert onto a plate. Drizzle Cinnabon frosting over top before serving.

1 cup Splenda granular
2 teaspoons ground cinnamon
1/2 cup margarine, becel light
1 cup packed brown sugar, blend
1/2 cup chopped walnuts (optional)
1/2 cup craisins (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Spray with Pam one 9 or 10 inch tube/Bundt® pan.
  • 2. Mix Splenda and cinnamon in a plastic bag.
  • Cut biscuits into quarters.
  • Shake 6 to 8 biscuit pieces in the splenda cinnamon mix.
  • Arrange pieces in the bottom of the prepared pan.
  • Continue until all biscuits are coated and placed in pan. If using nuts and craisins, arrange them in and among the biscuit pieces as you go along.
  • In a small saucepan, melt the margarine with the brown sugar over medium heat. Boil for 1 minute. Pour over the biscuits.
  • Bake at 350 degrees for 35 minutes.
  • Let bread cool in pan for 10 minutes, then turn out onto a plate.
  • Do not cut! The bread just pulls apart and eat with your finger. Might need a fork to start because it is hot and sticky good!
