Easy Mini Meatloaf Muffins made with ground beef or ground turkey and topped with homemade bbq sauce. Easier and healthier than traditional meatloaf.

1 1/2 pounds lean ground beef ((or ground turkey))
2/3 cup panko bread crumbs
1/2 cup onion (, chopped)
1 Tablespoon barbecue sauce
1 Tablespoon mustard
1/2 teaspoon garlic powder
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 egg (, lightly beaten)
1/3 cup light brown sugar
1/2 cup ketchup
2 teaspoon dijon mustard
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
  • Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
  • In the meantime, in a small bowl mix together all of the ingredients for the sauce.
  • Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
  • Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
  • Serve with mashed potatoes and any extra sauce.

1 1/2 pounds 90% lean ground beef (, you could also use ground turkey)
1/2 cup panko breadcrumbs
1 large egg (, whisked)
2-3 Tablespoons fresh parsley (, finely chopped )
1 Tablespoon Worcestershire sauce
1 Tablespoon ketchup
3/4 teaspoon Kosher salt
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup ketchup or BBQ sauce (, you could mix half and half)
2 Tablespoons light brown sugar

Steps:

  • Preheat the oven to 350°F. Lightly spray muffin pan and set aside.
  • Combine the meat, breadcrumbs, egg, parsley, Worcestershire sauce, ketchup, salt, pepper, garlic powder and onion powder in a large bowl. Mix just until combined. Don't overmix or the meat won't be as tender.
  • Divide the meat evenly into the muffin pan and press down.
  • In a small bowl, mix together the ketchup and/or BBQ sauce and brown sugar. Set aside.
  • Bake meatloaf for 15 minutes. Then remove from oven and absorb any extra grease with a fork and paper towel. Then pour sauce over the meat evenly. Add pepper on top if desired. Then bake an additional 10-15 minutes or until the center reaches 160°F.
  • Serve while warm with potatoes and green beans.

1 large egg, lightly beaten
1/2 cup dry bread crumbs
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/4 cup barbecue sauce
1-1/2 pounds lean ground beef (90% lean)
3 tablespoons ketchup
Additional ketchup, optional

Steps:

  • Preheat oven to 375°. Mix the first 5 ingredients. Add beef; mix lightly but thoroughly. Press about 1/3 cupful into each of 12 ungreased muffin cups., Bake 15 minutes. Brush tops with 3 tablespoons ketchup; bake until a thermometer reads 160°, 5-7 minutes. If desired, serve with additional ketchup. , Freeze option: Bake meat loaves without ketchup; cover and freeze on a waxed paper-lined baking sheet until firm. Transfer meat loaves to an airtight freezer container; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Spread with ketchup. Bake in a preheated 350° oven until heated through.

1 cup shredded Cheddar cheese
½ cup quick cooking oats
1 teaspoon salt
1 pound ground beef

1 2/3 to 1 3/4 pounds ground sirloin
1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil
Micro-way-cool Bacon and Green Beans, recipe follows
Smashed potatoes and cream cheese, recipe follows
6 slices microwave ready-crisp bacon
One 16-ounce bag frozen green beans
A drizzle extra-virgin olive oil
Salt and pepper
2 1/2 pounds small red potatoes or baby Yukon gold potatoes
1/2 cup half-and-half or whole milk
8 ounces plain cream cheese or veggie cream cheese, cut into pieces
10 chives or 2 scallions, chopped or snipped with kitchen scissors
Salt and pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. While meatloaf muffins bake, make green beans in the microwave. Serve meatloaf with Smashed Potatoes and Cream Cheese on the side, too.
  • Place bacon between paper towels and microwave 60 seconds on high. Cool bacon and chop or crumble up.
  • Place green beans in a bowl and drizzle with extra-virgin olive oil, salt and pepper. Cover the bowl loosely with plastic wrap and microwave green beans on high for 5 minutes, stir and cook 5 minutes more. Remove wrap and top green beans with crumbled bacon.
  • Boil potatoes until tender, 15 minutes. While the water boils and when the potatoes are cooking, you can be working on the meatloaf recipe.
  • When the potatoes are tender, drain them and return them to the hot pot to let them dry out a bit. Mash potatoes with half-and-half or milk using a potato masher. Add in the cream cheese and smash until the cheese melts into the potatoes. Then add chives and scallions and season with salt and pepper, to your taste.

Homemade meatloaf with a yummy sweet twist. I didn't have any breadcrumbs for the traditional meatloaf, so I searched my cabinets and came up with this meatloaf. It was a huge hit with the kids. It's sweet but still a meatloaf. The cornmeal and brown sugar just made it out of this world! Also, once cooked, they are very easy to store and pack up for leftovers. Serve with some smashed potatoes and green beans.
