Another yummy rhubarb recipe from my mom, Rosanne.

Number Of Ingredients 8

6 c rhubarb, cut up
1 1/2 c sugar
6 Tbsp flour
1/2 c margarine, softened
1/2 c flour
3/4 c brown sugar, firmly packed
1 tsp cinnamon
1 c quick oatmeal

Steps:

  • 1. Mix the first 3 ingredients in glass casserole or cake pan that will fit in your microwave. Use glass dish (Mom used to use a Corning Ware 2 inch deep large dish). Cook on high for 3 minutes, rotate dish - unless you have a turntable. Then cook for 3 more minutes on high. While that is cooking, stir together margarine, flour, brown sugar, cinnamon, and quick oatmeal. Mix well and put on top of rhubarb mixture. Microwave on high for 10 minutes - rotating once if you do not have a turntable.

This one is a bit different than others posted, as it also uses vanilla pudding mix. If you are using frozen rhubarb, make sure to thaw and drain it first.

3 cups rhubarb (fresh or frozen)
1 cup water
1/2 cup sugar
1 (3 ounce) package vanilla pudding mix (not instant)

Steps:

  • In a microwave-safe bowl, combine rhubarb, water, and sugar. Microwave, uncovered, on high for 8-10 minutes or until rhubarb is tender, stirring occasionally.
  • Stir in pudding mix until blended; cook for 1-2 minutes or until thickened, stirring occasionally.
  • Serve over ice cream if desired.

HONEY CINNAMON RHUBARB SAUCE

Oh my, this is good! Serve with pork chops, steaks or even oatmeal or ice cream. Made in the microwave (although can be done on the stove). All ingredients are in the title! SO easy!

4 cups chopped rhubarb
3/4 cup honey
1 teaspoon cinnamon

Steps:

  • Cut off any rhubarb leaves or roots.
  • Chop rhubarb. (I use the slicing attachment on my food processor.).
  • Place rhubarb in large glass bowl. (I use an 8-cup glass measuring cup.).
  • Cover loosely and microwave for 5 minutes.
  • Stir and microwave another minute or two if needed, until the rhubarb pieces are no longer visible.
  • Stir in honey and cinnamon. Taste! Add more honey or cinnamon, if desired.
  • Serve warm or cold! Freezes well.

1/4 cup water
2-1/4 cups sliced fresh or frozen rhubarb
1 teaspoon grated lemon zest
1/8 teaspoon ground nutmeg
Pound cake or vanilla ice cream

Steps:

  • In a small saucepan, bring sugar and water to a boil. Add rhubarb; cook and stir until rhubarb is tender and mixture is slightly thickened, 5-10 minutes. Remove from the heat; stir in lemon zest and nutmeg. , Serve warm or chilled over pound cake or ice cream. Refrigerate leftovers.

4 cups rhubarb, chopped in 1/2 inch pieces, about 1 lb
1/3 cup brown sugar, packed
3 tablespoons crystallized ginger, minced
1 lemon wedge
4 scoops vanilla frozen yogurt or 4 scoops vanilla ice cream
1 angel food cake, cut into wedges

Steps:

  • In a large microwaveable bowl, (2 1/8 cups) combine rhubarb, brown sugar and ginger. Microwave on high for 5-7 minutes. (700-watt oven) or until rhubarb is tender, stirring occasionally. Add squeeze of lemon juice. Stir and let cool until warm.
  • To serve, place scoop of frozen yogurt on angel food cup or wedge. Spoon warm rhubarb sauce all over.
  • TIP: Sauce can be made ahead of time, and reheated just before serving. If using field rhubarb, taste, and add more sugar if needed.
  • Angel food cups are called a variety of names such as berry cups.
